OVEN-BAKED SWEET AND STICKY PORK BACK RIBS

I have to say that this is one of the best recipes for back ribs, and since my family loves ribs I have tried many in the past, although they certainly could be grilled on a barbecue the sticky sauce tends to burn on the grill, oven-baking produces a moist tender rib with the most wonderful sticky sauce, so make sure to have lots of napkins when serving these ribs!!! Plan ahead the ribs need to marinade for 8-24 hours (the longer, the better!). This recipe can easily be doubled to serve a crowd, and baked in two separate roasting pans. I make these ribs in a heavy foil baking pan, since the drippings char slightly it makes clean up a breeze, just toss the baking pan in the garbage after baking, if you are not using a disposable baking dish then make certain to line your pan with foil for easy clean-up. You will LOVE THESE RIBS!!!!!!

3/4 cup soy sauce
3/4 cup orange marmalade
1/2 cup pineapple juice
1/4 cup honey
2 tablespoons fresh minced garlic (or to taste, if you love garlic use lots!)
2 tablespoons minced fresh ginger
1 tablespoon lemon juice
1/2 teaspoon crumbled dried rosemary
black pepper
4 -5 lbs pork back ribs

Steps:

  • In a bowl mix soy sauce, orange marmalade, pineapple juice, honey, garlic, fresh ginger, lemon juice, rosemary and black pepper.
  • Rinse the ribs under cold water and pat dry with paper towels; place half of the ribs in each of 2 heavy plastic ziploc freezer bags (1-gallon size).
  • Pour half of the soy sauce mixture into each bag, seal bags, toss to coat ribs with marinade.
  • Set in a large bowl and refrigerate from 8-24 hours turning occasionally.
  • Set oven to 350 degrees.
  • Line a 11 x 17-inch or a 12 x 15-inch baking pan with foil.
  • Set a rack in the pan, then arrange the ribs in a single layer with edges curving down on rack.
  • Pour the remaining marinade from the bags into a bowl.
  • Bake the ribs basting with the remaining marinade about every 20 minutes for the first hour, until the meat is well browned and pulls easily from the bones (about 1-1/4 hours total baking time).
  • Transfer the ribs to a serving platter and cut between bones.
  • Delicious!

This pork rib recipe is excellent. It was so easy and if you follow any of my recipes I am all about easy! If you want that smokey flavor, make sure and add your liquid smoke mixture before your dry rub because I missed that step one time and the ribs were still great, I like mine with a little smokey flavor.

1 rack of pork spareribs or baby back ribs
1 bottle commercial or homemade bbq sauce
dry rub
1 tsp garlic salt
1 tsp cumin
20 turns of the pepper grinder
1 tsp paprika
1 tsp chili powder
1 tsp oregano
1/4 tsp white pepper
1/4 c brown sugar

Steps:

  • 1. Preheat oven to 250 degrees F. Ribs will cook for a total time of 4 hours.
  • 2. If you want that smokey flavor,before you put on this rub, take about a teaspoon of liquid smoke and mix that with a tablespoon of water. Brush that on both sides of the ribs, then apply the dry rub.
  • 3. Combine all of the dry rub ingredients in a small bowl.
  • 4. Prepare the rack by removing the membrane from the back of the ribs and cutting away that extra little flap of tough meat across the top - just discard that or save for another use.
  • 5. Line a baking pan with aluminum foil.
  • 6. On the bottom side of the ribs, sprinkle on a generous amount of the dry rub and rub it in.
  • 7. Set the ribs on the baking pan with the seasoned side down, and apply the remaining dry rub on the top side.
  • 8. Roast uncovered at 250 degrees F for 2 hours.
  • 9. After the ribs have cooked for 2 hours, remove them and pour some of the sauce over the top of the ribs. This was the one I used and it was great!
  • 10. Using a brush, gently spread the sauce all over the ribs.
  • 11. Cover the entire pan tightly with aluminum foil and return to the oven, baking for an additional 2 hours, or until the meat begins to pull away from the bone.
  • 12. If you like, unwrap, brush with a bit of sauce and finish under the broiler for a minute or so.
  • 13. When ready to serve, brush a little extra sauce on each serving but definitely serve with a side of sauce for dipping.

" KICKED-UP" OVEN-BAKED PORK BABY BACK RIBS



If you like heat then you will love these ribs! For level 1 heat; use 1 tablespoon habanero hot sauce...for level 2; use 2 tablespoons... and for level 3; use 3 tablespoons. Habanero chili hot sauce can be found in any Mexican section of your grocery store, since my family loves extreme heat I use it in many recipes. This recipe can be doubled.

3 lbs pork baby back ribs
seasoning salt
pepper
1/3 cup ketchup
1/4 cup hoisin sauce
2 tablespoons lemon juice
2 tablespoons sugar
2 tablespoons minced fresh garlic
3 tablespoons louisiana hot sauce (can use less)
habanero sauce (caution, this stuff is hot!)
1/4 teaspoon cinnamon
1 pinch allspice
1 teaspoon seasoning salt

Steps:

  • Set oven to 425°F.
  • Line a baking sheet with foil, then arrange the ribs in a single layer.
  • Season with season salt (or use white salt, seasoned salt is better!) and pepper.
  • Bake for about 25 minutes; turn the ribs over and bake for another 15 minutes or until browned.
  • Meanwhile in a bowl combine ketchup, hoisin, lemon juice, garlic, Louisiana hot sauce, habanero chili hot sauce, cinnamon, allspice and seasoned salt; mix well to combine.
  • Baste the ribs with about half the sauce; cook for another 10 minutes more; turn over and baste with the remaining sauce and continue to bake for another 15 minutes or until the ribs are thoroughly cooked through.

A sticky, sweet and sour marinade and sauce makes the taste of these ribs explode in your mouth! Try serving them on a bed of rice. Of course, if you prefer, you can cook them on the barbecue but be sure to boil the marinade well before using.

1 kg boneless pork ribs (belly or similar)
5 cloves garlic, crushed and chopped
3 teaspoons paprika
3 tablespoons cider vinegar
3/4 cup brown sugar, firmly packed
1/2 cup Worcestershire sauce
3/4 cup tomato paste (concentrated tomato puree)
1 teaspoon chili, crushed (or more to taste)
1 large lemon, juice and finely grated rind

Steps:

  • Combine all marinade ingredients in a large non-metal dish.
  • Stir until well combined.
  • Add the ribs to the marinade and spoon mixture over until they are covered well on both sides.
  • Cover and refrigerate for several hours or, preferably, overnight.
  • To Cook: Place an oven rack on the top shelf of the oven.
  • Preheat oven to 200C (400F).
  • Line a roasting tin with foil.
  • Place a well-oiled roasting rack in the roasting tin.
  • Remove ribs from marinade, making sure they are well coated, and place onto the roasting rack.
  • Cook on the top shelf of the oven for 30-40 minutes (turning once).
  • While ribs are cooking, pour marinade into a small saucepan.
  • Cook until the sauce boils.
  • Boil until mixture thickens slightly.
  • Serve ribs on a bed of rice and pour over sauce.

5 lbs pork ribs
3 tablespoons garlic, finely minced
1 tablespoon ginger (I didnt have any) (optional)
6 tablespoons honey
1 tablespoon oyster sauce
1/2 tablespoon white pepper
2 chili peppers, minced
1/3 cup cognac or 1/3 cup Bourbon

Steps:

  • Marinate the pork ribs over night with all the ingredients. ( i popped mine in the freezer. ended up being 2 weeks before i cooked them).
  • Pre-heat the oven to 220°C.
  • Place the ribs on a deep baking tray with the marinade.
  • Pop the tray into the oven for an hour (till the pork is a nice shade of golden brown).
  • NOTE: Do turn the ribs every fifteen minutes so that the meat is evenly browned on both sides.
