1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried thyme

1 1/4 pounds pork tenderloin
1 tablespoon olive oil
1 teaspoon minced garlic

Steps:

  • Preheat the oven to 450 degrees F.
  • In separate bowl mix dry ingredients such as garlic powder, oregano, cumin, coriander, thyme and salt. Stir mixture with a fork until all the ingredients are well combined and they form a seasoning. This will be used as a rub to ensure the pork is well seasoned throughout. Sprinkle the rub over the tenderloin with a dry hand, then rub the pork with the seasoning over both sides of the meat, pressing gently so the seasoning adheres well to the tenderloin.
  • In a large skillet over medium-high heat, add the olive oil and heat. Add the minced garlic and saute, stirring, for 1 minute. Put tenderloin in the pan and cook for about 10 minutes, searing each side using tongs to turn the meat. Transfer meat to a roasting pan and bake for 20 minutes. Slice and serve.

4 tablespoons olive oil
4 garlic cloves, finely chopped
1 tablespoon dried thyme, crumbled
1 tablespoon dried oregano
1 -2 teaspoon aleppo pepper
1 teaspoon salt
1 (5 lb) boneless pork loin, trimmed of fat

Steps:

  • In a small bowl, combine the oil, garlic, thyme, oregano, pepper, and salt.
  • Rub the garlic mixture all over the pork.
  • Place the pork in a Dutch oven just large enough to hold it snugly, cover with aluminum foil and then the lid and refrigerate overnight, or up to 24 hours.
  • Preheat the oven to 450°F.
  • Remove the aluminum foil from the Dutch oven, replace the lid and bake for 30 minutes.
  • Reduce the oven temperature to 375°FF and bake for 1 hour more, basting twice with the pan juices.
  • Uncover, baste again and bake, uncovered, for 20 to 30 minutes more, or until an instant-read thermometer inserted into the thickest part registers 155-165°F.
  • Remove the pork from the oven, cover and let rest for 1 hour to develop the flavors.
  • Reheat in a 375°F oven for about 20 minutes and serve.

Steps:

  • Preheat oven to 400°F
  • Line 13 x 9 x 2" roasting pan with foil.
  • Mix first 5 ingredients in bowl. Rub garlic mixture all over pork.

  • Roast pork 30 minutes.
  • Turn roast fat side up.

2 tablespoons steak seasoning rub
½ cup balsamic vinegar
½ cup olive oil
2 pounds boneless pork loin roast

Steps:

  • Dissolve steak seasoning in balsamic vinegar, then stir in olive oil. Place pork into a resealable plastic bag and pour marinade overtop. Squeeze out air and seal bag; marinate 2 hours to overnight.
