Steps:
- Brown onion and Meat in a skillet. Place onion and ham mixture into a greased muffin tin (can use cooking spray). Add eggs, milk, oil, baking powder and salt & pepper into a bowl and whisk together. Add some shredded cheese on top of ham and onion mixture. Pour egg mixture into each muffin cup. Bake at 375 for 20-25 minutes.

Steps:
- Saute onion and ham until onion is translucent If using bacon or sausage, cook and crumble.
- spray 12 cup muffin tin with cooking spray
- put onion and meat of choice in bottom of each cup
- In large bowl, whisk together eggs, milk, oil and baking powder
- Divide egg mixture evenly over muffin tins (do not stir in other ingredients)
- sprinkle grated cheese on top, if desired.
- Bake in pre-heated 375 degree oven for 20 to 25 minutes until golden brown.
- Allow to cool for 5 minutes, serve.
- Can freeze in freezer bags, microwave for a couple of minutes.
