HONEY MUSTARD OVEN-BAKED CHICKEN TENDERS
A childhood favorite, these flavorful chicken tenders are made healthy by baking on a wire rack for crispiness and using whole wheat flour and breadcrumbs!

Steps:
- Stir mustard, honey, orange juice, garlic together in a glass or ceramic bowl. Transfer 1/4 cup mustard mixture to a bowl to use as a dipping sauce; add chicken to the remaining mustard mixture and toss to coat. Marinate chicken for at least 30 minutes, or up to 3 hours.
- Preheat an oven to 450 degrees F (230 degrees C). Place wire cooling racks onto baking sheets.
- Stir whole wheat flour and 1/2 teaspoon salt together in a shallow bowl. Stir bread crumbs and 1/2 teaspoon salt together in another shallow bowl. Place beaten eggs in another shallow bowl.
- Gently press a chicken strip into the flour mixture to coat and shake to remove excess flour. Dip into the beaten egg, then press into bread crumb mixture. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded chicken strips onto baking sheets prepared with wire cooling racks.
- Bake chicken in the preheated oven until no longer pink in the center and the juices run clear, 15 to 18 minutes. Serve with reserved mustard sauce.

OVEN-BAKED HONEY SESAME CHICKEN
This oven-baked sesame chicken comes together quick and is always a big hit! Serve it up on top of rice with some garlic-almond green beans on the side, and you've got yourself a better (and healthier!!) than take-out meal! This pairs perfectly with a dry Riesling from Washington state.

- 1. Preheat oven to 375 degrees.
- 2. Lightly salt and pepper the cubed chicken. Put the cornstarch into a gallon zip top bag. Dump chicken in with the cornstarch. Seal the bag and shake vigorously to ensure that the chicken is well coated. Dump chicken and cornstarch into a colander over garbage can, shake excess cornstarch off the chicken.
- 3. Heat 1 TB of the oil over medium heat in a large skillet. Working in batches so as not to overcrowd the pan, cook the chicken until browned on all sides. Place cooked chicken on a large, rectangular, parchment paper-lined baking pan.
- 4. In a small/medium bowl, whisk all ingredients for sauce together until well blended. Pour sauce over chicken and stir to make sure every piece is coated.
- 5. Bake for 15 minutes or until the sauce has thickened and the chicken is completely cooked. While chicken is in the oven, stir it every 5-10 minutes to make sure chicken is completely coated with sauce.
- 6. Serve chicken over jasmine rice and garnish with sesame seeds.

- 1. Place chicken pieces in a lightly greased baking pan. Smother in barbecue sauce. Cover the bottom of the pan and both sides of chicken. Pour water on the bottom of the pan. Arrange onion slices in sauce on pan bottom around and under chicken. Put 2 tablespoons of honey on the top of each piece of chicken. Bake in 325 degree preheated oven for 1 hour. Remove and turn chicken. Add additional barbecue sauce and more water to cover bottom of pan again. Put back in oven for 1 more hour. Chicken will fall off the bone in tenderness.

- Preheat oven to 375°F Line a baking sheet with foil. Spread oil over the foil liberally.
- Whisk together honey and vinegar in shallow bowl. Pour bread crumbs into separate bowl. Sometimes I use a bag, like a "shake & bake" method.
- Roll chicken in honey mixture, then in bread crumbs. Place chicken on baking sheet.
- Bake for 30 minutes or until no longer pink in center.
