32 oz (1 package), crinkle cut, frozen french fries
1 cup shredded colby-jack cheese
4 oz cooked and cut into bits bacon
1 tsp salt
½ tsp ground black pepper
4 cups for frying vegetable oil

Steps:

  • Heat the oven to 380 degrees F.
  • In a deep heavy skillet, preheat oil over medium-high heat.
  • Fry the french fries in small batches until golden brown. Drain on a paper towel.
  • Pile them on an oven-safe platter. Season the french fries with salt and pepper, then sprinkle shredded cheese and bacon bits on top.
  • Place the platter in the oven and bake for 1 to 2 minutes or until the cheese begins to melt.
  • Serve with a ranch dressing on the side and garnish with chop parsley. Enjoy!

I looked all over and this was the best recipe I could find. I got it from hungrybrowser.com. the prep time is just guess work since i haven't made this recipe yet.

2 medium russet potatoes
6 cups vegetable oil (to 8) or 6 cups shortening (to 8)
1 tablespoon salt
1 teaspoon garlic powder
3/4 teaspoon fresh ground black pepper
1/2 teaspoon onion powder
1/8 teaspoon ground thyme
ranch dressing
cloned aussie chips, 1 plate (from above recipe)
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese
1 slice bacon, cooked
ranch dressing

Steps:

  • For the Aussie Chips: Preheat oil to 375 degrees in a deep fryer.
  • Cut potatoes into french fry slices using a vegetable slicer or mandolin. It's important to use a gadget for the slicing so that the fries will all be the same thickness, and will cook evenly. Submerge all of the sliced potatoes in a large bowl fill with cold water for 30 minutes.
  • Combine all of the seasoning ingredients in a small bowl and set aside.
  • Remove potato slices from the water and onto a clean towel. Blot dry.
  • Fry potato slices for 8 to 12 minutes in hot oil until light brown. Drain fries on a rack or paper towels and sprinkle with some of the seasoning. Pile the fries on a plate and serve with ranch dressing on the side, if desired.
  • For the Aussie Cheese Fries: Prepare the clone for the Aussie Chips and arrange the seasoned fries on an oven-safe plate. Preheat oven to 400 degrees.
  • Mix the cheeses together and sprinkle the blend over the fries. Crumble the bacon and sprinkle it over the cheese. Bake the plate for 4 to 5 minutes in the hot oven, until cheese is melted. Serve with ranch dressing on the side.
  • This recipe yields 4 to 6 servings of either selection.

1 (2 lb) bag frozen french fries
1 cup colby-monterey jack cheese, shredded
6 pieces bacon, cooked
24 fluid ounces peanut oil (Can be reused later, store in refrigerator)
1/2 cup sour cream
1 tablespoon prepared horseradish
1 dash cayenne pepper
1 dash salt
1 dash black pepper

Steps:

  • Divide the fries into half, and use the other half later. Heat oil to 350 degrees. If you do not have a thermostat, make sure the oil is hot enough, so that when you set a French fry in there it will cook immediately. If the french fry sinks to the bottom, and barely bubbles, it is not hot enough. Fry the potatoes in small batches, they are done when they are golden brown, and float to the top of the skillet. I like to use a Dutch Oven). Be sure to drain the potatoes on paper towels. You can keep them warm in the oven while the other fries are done.
  • When all French fries are done cooking, and drained place them onto a platter. Salt the french fries if you like, and sprinkle on cheese and cooked bacon. Pop these back into a warm oven until the cheese begins to melt.

These are honestly my favorite thing on the menu. I would really hate to count the times, were my family has had these for dinner. Keep in mind when you fry French fries, you need your oil nice and hot, do not cook many fries at once.
