1 1/4 pounds fine-quality milk chocolate, finely chopped
10 ounces fine-quality semisweet chocolate, finely chopped
3 cups sour cream
2 teaspoons vanilla

Steps:

  • Melt chocolates in a double boiler or a large metal bowl set over a saucepan of simmering water, stirring occasionally. Remove bowl from heat, then whisk in sour cream and vanilla. Cool to room temperature, stirring occasionally (frosting will become thick enough to spread). You must work quickly and spread the frosting before it becomes too thick. (If icing does become stiff, reheat over simmering water, then cool and try again.)

1 cup unsalted butter
1 1/2 cups sugar
2 large eggs
1/2 cup good quality cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
2 cups sifted all-purpose flour
1 1/2 cups buttermilk
1 tablespoon instant coffee, dissolved in
1 tablespoon hot water
1 cup sour cream
1 cup icing sugar or 1 cup confectioners' sugar, sifted after measuring
1 cup heavy cream

Steps:

  • Preheat oven to 350°F.
  • Butter a 10-inch springform pan and line the bottom with parchment paper.
  • Cream together the butter and the sugar with an electric mixer until light and fluffy.
  • Add the eggs, one at a time, continue beating until thick and light.
  • Sieve together the cocoa, baking soda, baking powder, cinnamon and flour.
  • With your mixer on low speed add the dry ingredients in 4 portions, alternating with the buttermilk and coffee, beat until all is very well blended.
  • Pour the batter in the springform pan and bake for 50 to 60 minutes, or until a cake tester comes out clean.
  • Run a knife around the edge of the cake and let the cake cool completely whilst in the pan.
  • Make the frosting just before you need it.
  • Mix together the sour cream and the icing sugar, whip the cream until stiff, then mix the two creams together.
  • Release the cake and turn it upside down on a platter.
  • With a serrated knife cut the cake into layers (I use a piece of sewing thread to cut the cake).
  • Spread frosting over one layer, carefully replace the other layer on the top and spread the rest of the frosting over the top and the sides.
  • Leave in the fridge until ready to serve.

1/4 cup all-purpose flour, plus
2 tablespoons all-purpose flour
3 tablespoons buttermilk
1 egg yolk
1/2 teaspoon vanilla extract
3 tablespoons unsalted butter, melted and cooled
2 tablespoons unsweetened cocoa powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/3 cup sugar
6 ounces milk chocolate, finely chopped (1 cup)
3 ounces bittersweet chocolate (1/2 cup) or 3 ounces semisweet chocolate, finely chopped (1/2 cup)
1/4 cup sour cream, plus
3 tablespoons sour cream, at room temperature
1 pinch salt

Steps:

  • Preheat the oven to 325°F.
  • Grease and flour the insides of two 14-14.5 ounce cans.
  • Place the cans on a baking sheet, and set aside.
  • Whisk the buttermilk, egg yolk, and vanilla together in a small bowl.
  • Gradually pour the melted butter into the buttermilk mixture, whisking constantly.
  • Sift the flour, cocoa powder, baking soda, and salt into a medium-size mixing bowl; add sugar, and then whisk to blend well.
  • Add the buttermilk mixture and whisk just until the dry ingredients are moistened.
  • Divide the batter between the prepared cans.
  • Bake the cakes until a toothpick inserted into the center comes out clean, 25 to 30 minutes.
  • Place the cans to a wire rack to cool for 15 minutes.
  • Run a knife around the edge of each can and invert them to release the cakes.
  • Turn the cakes upright and let them cool completely on the rack.
  • Meanwhile, make the frosting: Place chocolate in the top of a double boiler set over simmering water, and heat, stirring occasionally, until melted. (May also do this in the microwave.).
  • Let the chocolate mixture cool for 5 minutes. Then add the sour cream, vanilla, and salt, and whisk to blend well.
  • Let the frosting cool to room temperature, stirring it occasionally.
  • When frosting and cakes have cooled, cut each cake in half horizontally.
  • Spread a layer of frosting about 1/2 inch thick on the cut side of one cake half, then stack the other half on top of it.
  • Frost the top and sides of the cake.
  • Repeat with the remaining cake and frosting.
  • Store the cakes in the refrigerator in an airtight container, bringing them back to room temperature before serving.

12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature, plus more for buttering the pans
2 cups all-purpose flour
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
1/2 teaspoon fine salt
1/4 cup milk
2 cups plus 2 tablespoons sugar
3/4 cup unsweetened cocoa powder (not Dutch process)
2 teaspoons pure vanilla extract
3 large eggs, at room temperature
1 pound milk chocolate chopped
1 pound semisweet chocolate chopped
One 16-ounce container sour cream (2 cups)
1 tablespoon brewed coffee
1 tablespoon pure vanilla extract

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Lightly butter 2 9-inch round cake pans and line the bottoms with parchment.
  • Whisk the flour, baking soda, baking powder, and salt together in a medium bowl and set aside. Bring 1 1/4 cups water and the milk to a boil in a small saucepan. Remove from heat and keep warm.
  • Beat the butter in a large bowl with an electric mixer on medium speed until smooth. Add the sugar, increase the speed to medium-high and beat until light and fluffy, stop to scrape down the sides of the bowl occasionally, about 4 minutes. Add the cocoa and vanilla, and beat at medium speed for 1 minute. Reduce the speed to medium-low and add the eggs, one at a time, and beat for 1 minute between each addition. Reduce the mixer to low and beat in the flour in four additions. Carefully pour the hot milk mixture into the batter. Use a rubber spatula to stir until smooth. Evenly divide batter between the prepared pans and lightly tap the pans on the counter.
  • Bake until the cakes begin to pull away from sides of the pan and the centers spring back to the touch, 30 to 35 minutes. Cool the cakes in the pans on a wire rack for 10 minutes. Invert onto the rack and cool completely.
  • For the frosting: Bring about 1-inch of water to a simmer in a medium saucepan. Put the milk and semisweet chocolates in a heatproof bowl that sits comfortably in the saucepan without touching the water. Stir occasionally until the chocolate completely melts and is smooth. Let cool slightly and then stir in the sour cream, coffee and vanilla until smooth. Beat with an electric mixer on medium speed until the frosting is silky and fluffy. (Use the frosting right away as it will become firm as it sits.)
  • Put one cake layer on a serving plate or platter spread about one-third of the frosting all the way to the edge of the cake. Put the second cake layer on top. Frost the top and sides with the remaining frosting.

  • Sift together flour, baking powder, baking soda, and salt.
  • Beat together butter and sugar in a large bowl with an electric mixer until light and fluffy. Add eggs 1 at a time, beating well after each addition, then beat in vanilla. Add half of flour mixture and mix at low speed until just blended. Add sour cream, mixing until just combined, then add remaining flour mixture, mixing at low speed until batter is smooth.
  • Divide batter between pans, smoothing tops. Bake in middle of oven until cake is springy to the touch and a tester comes out clean, 30 to 40 minutes. Cool in pans on racks 10 minutes, then invert onto racks, remove paper, and cool completely.
  • Trim tops of cooled cake layers with a long serrated knife if necessary to make flat and level. Halve each layer horizontally with serrated knife to make a total of 4 layers.
  • Put 1 cake layer on a cake plate and spread with 3/4 cup frosting. Layer remaining cake layers using 3/4 cup frosting between each layer. Frost top and sides of cake with remaining frosting.

Steps:

  • For cake:
  • Arrange racks in upper and lower thirds of oven; preheat to 350°F. Coat cake pans with nonstick spray. Line bottom of pans with parchment-paper rounds; coat paper. Whisk flour, baking powder, baking soda, and salt in a large bowl until no lumps remain. Combine buttermilk, oil, and vanilla in a medium bowl.
  • Combine sugar, butter, and brown sugar in another large bowl. Scrape in seeds from vanilla bean. Using an electric mixer, beat butter mixture until light and fluffy, 3-4 minutes. Add yolks and eggs one at a time, beating to blend between additions and occasionally scraping down sides and bottom of bowl.
  • Continue to beat mixture, occasionally scraping down sides and bottom of bowl, until almost doubled in volume and very light, airy, and pale yellow, 5-6 minutes. It's very important that no lumps remain at this stage. (Occasional scraping of the bowl, especially the bottom, helps prevent lumps.)
  • With mixer on low, add dry ingredients in 3 additions, alternating with buttermilk mixture in 2 additions, beginning and ending with dry ingredients.
  • Divide batter evenly among prepared pans, about 3 1/2 cups per pan. Smooth tops.
  • Bake, rotating cakes from left to right and top to bottom halfway through, until cakes are light golden brown, the centers spring back when gently pressed, and a tester inserted into the centers comes out with a few moist crumbs attached, 35-40 minutes.
  • Transfer cakes to wire racks; let cool in pans for at least 30 minutes. Invert cakes onto racks, peel off parchment, and let cool completely.
  • Using a long serrated knife, remove top dome and any bumps from each cake to create a flat surface. Slice each cake in half horizontally to make 6 layers total. DO AHEAD: Cakes can be baked 1 day ahead. Wrap tightly in plastic wrap and store at room temperature.
  • For frosting and assembly:
  • Stir chocolate and corn syrup in a large metal bowl set over a large saucepan of simmering water until melted and smooth; remove from heat. Stir sour cream, salt, and vanilla in a medium metal bowl; set over same saucepan of simmering water. Stir until mixture is warm but not hot, about 2 minutes. Add sour cream mixture to chocolate mixture; stir until smooth and glossy. Set aside.
  • Using an electric mixer, beat powdered sugar and butter in a medium bowl until light and fluffy, 2-3 minutes. Scrape down sides of bowl. Slowly beat in chocolate mixture. Continue beating until no lumps remain, about 2 minutes. Frosting should be smooth and shiny. Cover and chill until slightly firmed up, about 30 minutes.
  • Place 1 cake layer on a cake stand or large plate. Spoon 1/3 cup frosting over; using an offset spatula or the back of a spoon, smooth frosting to edge of cake, creating an even layer. Place another cake layer on top. Repeat with frosting and remaining cake layers. Spread remaining frosting over top and sides of cake. DO AHEAD: Cake can be made 1 day ahead. Cover with a cake dome and store at room temperature.

I can't believe I cut this recipe out of Better Homes & Garden 30 yrs.ago & just found it & made it! It is very light (I didn't make the frosting) & very easy. I can't wait to tell my men they've eaten sauerkraut for dessert, (you'd never know it). The recipe calls for a 13x9x2 pan but I used a Bundt pan adding approx. 15 min.Also prep time does not include frosting.

3 c all purpose flour
3 c sugar
3 stick butter, room temperature
6 large eggs, room temperature
1 c sour cream, room temperature
1 tsp baking powder
2 tsp each coffee flavoring, & vanilla extract
1 tsp butter flavor
1/2 c each cocoa powder, & mini semi sweet chocolate chips
2 tsp instant coffee granules, crushed
CREAM CHEESE MOCHA FROSTING
1 box 1 lb. powdered sugar
1 1/2 tsp instant coffee granules, crushed
1 stick butter, room temperature
8 oz cream cheese, room temperature
2 tsp coffee flavoring or liqueur

Steps:

  • 1. PREHEAT OVEN TO 325 DEGREES F. In a mixing bowl, cream sour cream & butter, until creamy & well mixed. Then gradually add sugar a little at a time. Beat until light and fluffy about 7 or 8 minutes.Add eggs one at a time, and mix well before adding the next one.
  • 2. Mix baking powder with flour in small bowl, then gradually add to creamed mixture, a little at a time with mixer on low until all flour has been added then increase speed and beat until combined, then add the flavoring and extract, beat well.
  • 3. Now REMOVE at least 3 to 3 1/2 cups of cake batter to a separate bowl. Add the half cup of cocoa, mini chocolate chips & 2 teaspoons crushed instant coffee granules. Stir by hand till all ingredients are well mixed.
  • 4. Spray or butter a 12 cup tube pan, and dust with flour. Use 2 separate spoons, one for the chocolate batter, and the other for the yellow batter. Now spoon one spoon of each into prepared cake pan, alternating the colors as you go around the entire pan. In next layer, add chocolate on top of yellow batter in pan, and add yellow on top of the chocolate batter, until you have used all of the batter. Smooth out the top of cake batter, and place in preheated oven and bake for 90 minutes.
  • 5. Remove cake from oven when done and let rest at least 10 minutes, then carefully invert onto a metal rack to cool completely. While cake is cooling prepare frosting.
  • 6. For the frosting add 1 stick of butter, the room temperature cream cheese to a medium size bowl, and beat till smooth and creamy, add powdered sugar, crushed coffee granules, coffee flavoring or liqueur, and beat till smooth & creamy. Make sure cake is completely cooled before frosting.
  • 7. Garnish if desired. I used shaved chocolate, and some Hershey's Kiss Candies, but that is optional. You can add chopped nuts or what ever you have on hand maraschino cherries. Or leave plain with just frosting on top. What ever makes you happy.

2 c semisweet chocolate pieces, (1) 12-ounce package
1/2 c 1/2 cup butter
1 c 8-ounce carton sour cream
1 lb 4-1/2 to 5 cups - powdered sugar

Steps:

  • 1. Chocolate-Sour Cream Frosting *This frosts tops and sides of two 8 or 9-inch cake layers. **(Halve the recipe to frost the top of a 13x9x2-inch cake.)
  • 2. In a large saucepan, melt semisweet chocolate pieces and butter over low heat, stirring frequently. Cool for 5 minutes. Stir in sour cream.
  • 3. Gradually add powdered sugar, beating with an electric mixer until smooth. (Mixture may be slightly warm when powdered sugar is added.)
  • 4. Cover and store frosted cake in the refrigerator.

1/2 c sour cream
1 tsp good quality vanilla
2 3/4 c confectioners sugar

Steps:

  • 1. In double boiler melt chocolate chips with butter.
  • 2. Add sour cream and vanilla
  • 3. Add confectioners sugar. Mixture should be of spreadable consistency yet still hold a peak when removing spoon from bowl.
  • 4. This recipe makes more than enough frosting to frost a two-layer 9 inch cake.

1 teaspoon vanilla
3 ounces bittersweet chocolate, melted and cooled
8 ounce carton sour cream
1 cup milk
Fudgy Frosting
1 12 ounce package semisweet chocolate pieces
1/2 cup butter
8 ounce carton sour cream
4 1/2 cups sifted powdered sugar

Steps:

  • 1. Let eggs stand at room temperature 30 minutes. Preheat oven to 350 degrees F. Grease and flour two 9-inch round cake pans. Set aside. 2. In small bowl combine flour, cocoa powder, baking powder, baking soda, and salt. In large bowl beat shortening and sugar on medium speed until combined. Beat in eggs and vanilla until combined. Beat in melted chocolate and sour cream. Alternately add flour mixture and milk; beat on low after each addition just until combined. Divide batter evenly between the prepared pans. Using a small offset spatula or rubber spatula, smooth the top of batter in each pan. 3. Bake 25 minutes or until tops spring back when lightly touched. Cool cake layers in pans on wire racks for 10 minutes. Using a small metal spatula, loosen sides of each cake layer. Place a wire rack on top of one pan; carefully invert pan with rack. Lift pan off cake layer. Repeat with the remaining cake layer. Cool cake layers on wire racks about 2 hours or until completely cool. 4. Prepare Fudgy Frosting. Place one layer flat side down on plate. Spread top with 1 cup frosting. Stack second layer flat side down. Spread the top and sides with the remaining frosting. Makes 16 servings. Fudgy Frosting 1. In large pan over low heat melt and stir semisweet chocolate pieces and butter. Cool 10 minutes. Stir in sour cream. Stir in powdered sugar; stir until smooth. Makes 4 cups.

1 c (2 sticks) unsalted butter, softened
1 c sour cream
4 c dark or bitersweet chocolate chips, melted and cooled slightly. i use ghiradelli 60% cacao bittersweet chips
2-3 c confectioners' sugar
1/4 c bourbon
1/4 c heavy cream

Steps:

  • 1. Melt chocolate baking chips in microwave or double boiler until just melted. Set aside to cool.
  • 2. In the bowl of a stand mixer beat the softened butter on high until creamy, about 3 minutes. Now continue to beat on high until light and fluffy, about 5 minutes.
  • 3. Add sour cream, mix well until fully incorporated.
  • 4. Slowly pour melted chocolate into the mixer, beating well until incorporated into butter.
  • 5. Add the confectioner's sugar and slowly building up speed, beat on high until well combined. Add more sugar if more sweetness is desired and repeat as above.
  • 6. A few tablespoons at a time add the bourbon and the cream, allowing to fully incorporate before adding more. May need to add small amount of additional cream if additional sugar was added. Adjust accordingly to desired consistency. Scrape the bottom of the bowl to make sure all ingredients are well incorporated.

The cake:
• 1/3 c. sifted unsweetened cocoa powder
• 1 c. boiling water
• 21/4 c. unbleached flour
• 1/2 tsp. baking soda
• 1 tsp. baking powder
• 1/2 tsp. salt
• 1 stick (8 tbsp.) unsalted butter
• 1 1/2 c. light brown sugar
• 3 eggs
• 1 tsp. vanilla
• 1/2 c. buttermilk
Milk Chocolate Sour Cream Frosting:
• 6 oz. milk chocolate, cut into pieces
• 1/2 stick (4 tbsp.) unsalted butter
• 1 tbsp. light brown sugar
• 1 tsp. vanilla extract
• 1/2 c. sour cream

Steps:

  • To make the cake: Preheat oven to 350 degrees. Mix together the cocoa powder and water and set aside to cool. Sift together the flour, baking soda, baking powder and salt, and set aside. In a large bowl, cream the butter and brown sugar until light and fluffy. Add the eggs and vanilla and continue beating until smooth. Add the dry ingredients alternately with the cocoa mixture and buttermilk, and beat until smooth. Pour the batter into two 8-inch greased and floured pans and bake for about 25 to 30 minutes or until the cakes spring back when gently touched with a finger. Take the cakes from the oven and cool on a wire rack about 10 minutes before removing the pan. To make the icing: Melt the chocolate on the stove or in the microwave (following instructions given in the accompanying story). Set aside to cool. In a medium bowl, beat the chocolate with the 1/2 stick butter, 1 tablespoon brown sugar, 1 teaspoon vanilla and sour cream until fluffy. Spread some of the icing over one layer for a filling. Place the other layer over the filling and spread the rest of the icing over the top of the cake and sides.

2/3 cup strong coffee
4 ounces unsweetened chocolate, chopped
1/2 cup Kahlua
1 cup regular sour cream
1 1/2 teaspoons fresh baking soda
1/4 teaspoon salt
3/4 cup unsalted butter, softened
1 3/4 cups granulated sugar
2 eggs
2 1/4 cups all-purpose flour
2 1/2 cups icing sugar
1/2 cup cocoa powder
1/2 cup unsalted butter, softened
3 tablespoons Kahlua
1 -2 tablespoon milk

Steps:

  • Preheat oven to 350.
  • Two 9 inch round pans; line bottoms with parchment paper. Butter pans well and dust with cocoa powder; shake out excess.
  • CAKE.
  • Combine coffee with chocolate in large glass bowl and microwave on high 1-2 min until very hot and chocolate has melted.
  • Whisk in rum until smooth.
  • Cool to room temperature.
  • Place sour cream in smaller bowl and add soda and salt, stir.
  • Cream butter and sugar in a large bowl until fluffy.
  • Beat in eggs one at a time.
  • Beat in chocolate mixture until smooth.
  • Beat in 1/2 flour, 1/2 sour cream; repeat. Make a smooth batter.
  • Spread evenly in prepared pans.
  • Bake on middle rack for 35-40 minutes or until cake feels firm in the centre and the edges begin to pull away from the sides.
  • Cool on racks for 5 minutes, turn out onto wire racks to cool.
  • Cakes can be plastic wrapped and frozen for 1 month at this stage or continue on with frosting.
  • FROSTING.
  • Sift sugar and cocoa into a large bowl.
  • Beat in butter and rum, start at low speed, until smooth.
  • Beat in enough milk or sour cream to make a spreadable frosting.
  • Frost top of one cake, then top with other cake. Frost sides and then the top of the cake. Decorate with chocolate curls or raspberries or eat it just as it is!
  • Enjoy!

1 1/2 cups sour cream
3 cups semisweet chocolate chips (about 18 ounces)
1/2 cup almonds, toasted, chopped

Steps:

  • Preheat oven to 350°F. Butter and flour 13x9x2-inch metal baking pan. Whisk first 5 ingredients in medium bowl to blend. Beat butter in large bowl until fluffy. Gradually add sugar, beating until well blended. Beat in eggs 1 at a time. Beat in flour mixture in 4 additions alternately with 3/4 cup sour cream in 3 additions. Fold in 1 1/2 cups chocolate chips and almonds; spread in prepared pan. Bake cake until tester inserted into center comes out clean, about 45 minutes. Transfer to rack; cool cake. Meanwhile, combine remaining 3/4 cup sour cream and 1 1/2 cups chocolate chips in heavy medium saucepan. Stir over very low heat just until chocolate melts and frosting is smooth (do not boil). Spread frosting over cake in pan. Let stand until frosting sets, at least 1 hour.

2 1/2 cups sugar
3/4 cup unsweetened cocoa powder, preferably Dutch process
2 teaspoons baking soda
1 teaspoon salt
1 cup neutral vegetable oil, such as canola, soybean or vegetable blend
1 cup sour cream
1 1/2 cups water
2 tablespoons distilled white vinegar
1 teaspoon vanilla extract
2 eggs
Peanut Butter Frosting (Makes about 5 cups):
10 ounces cream cheese, at room temperature
1 stick (4 ounces) unsalted butter, at room temperature
5 cups confectioners' sugar, sifted
2/3 cup smooth peanut butter, preferably a commercial brand (because oil doesn't separate out)
Chocolate-Peanut Butter Glaze (Makes about 1 1/2 cups):
8 ounces semisweet chocolate, coarsely chopped
3 tablespoons smooth peanut butter
2 tablespoons light corn syrup
1/2 cup half-and-half

Steps:

  • Cake: 1. Preheat oven to 350 degrees F. Butter bottoms and sides of three 8-inch round cake pans. Line bottom of each pan with parchment or waxed paper and butter paper. 2. Sift flour, sugar, cocoa powder, baking soda, and salt into bowl. Whisk to combine well. Add oil and sour cream and whisk to blend. Gradually beat in water. Blend in vinegar and vanilla. Whisk in eggs and beat until well blended. Scrape down sides of bowl so batter is well mixed. Divide among 3 prepared cake pans. 3. Bake 30-35 minutes,or until toothpick comes out almost clean. Let cool in pans for about 20 minutes. Invert onto wire racks, carefully peel off paper liners, and let cool completely. 4. To frost cake, place one layer, flat side up, on a cake stand or large serving plate. Spread 2/3 cup cup of frosting evenly over top. Repeat with next layer. Place last layer on top and frost top and sides of cake with remaining frosting. 5. To decorate with glaze, put cake plate on a large baking sheet to catch drips. Pour glaze over top of cake, and using an offset spatula, spread it evenly over top just to edges so that it runs down sides of cake in long drips. Refrigerate, uncovered, for at least 30 minutes to allow glaze and frosting to set completely. Remove about 1 hour before serving. Decorate top with chopped peanut brittle. Frosting: 1. In a large bowl with an electric mixer, beat cream cheese and butter until light and fluffy. Gradually add confectioners' sugar 1 cup at a time, mixing thoroughly after each addition and scraping down sides of the bowl often. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes. 2. Add peanut butter and beat until thoroughly blended. Glaze: 1. In top of double boiler or in a bowl set over simmering water, combine chocolate, peanut butter, and corn syrup. Cook, whisking often, until chocolate is melted and mixture is smooth. 2. Remove from heat and whisk in half-and-half, beating until smooth. Use while still warm.
