This is the good ol' meat loaf I grew up with. I didn't think there was any other kind for years. I was kind of shocked when my mother admitted that she got the recipe from the Quaker Oats box. But who cares? It's easy and it's GOOD! I believe she often served it with baked beans on the side.

1 1/2 lb ground beef (i use chuck)
3/4 c quick-cooking oats
1/4 c chopped onion
1 1/2 tsp salt
1/4 tsp pepper
1 c tomato juice
1 egg, beaten

Steps:

  • 1. In a large bowl, combine all the ingredients. Pack firmly into an ungreased loaf pan.
  • 2. Bake in a preheated 350-degree oven for 1 hour and 15 minutes. Pour off any grease.
  • 3. Let stand 5 minutes before slicing. I like mine with a little ketchup. Some like A-1, mustard, or even plain.

1/4 cup milk
1/4 cup sour cream
1 cup soft white bread crumbs
3 Eggs
2 teaspoons salt
1/4 teaspoon pepper
1 teaspoon dried thyme
1 teaspoon nutmeg
pinch (1/8 tsp) ground cloves
1 1/2 pounds ground beef
1/4 pound ground pork
1/4 pound ground veal
2 tablespoons finely chopped onion
2 tablespoons chopped parsley
2 tablespoons chopped celery leaves
1 teaspoon chopped chives
1/4 teaspoon finely chopped garlic
6 slices bacon partly cooked
1/2 cup chili sauce
2 tablespoons light brown sugar
1/4 teaspoon dry mustard
1/2 cup chopped grated onions (optional)

Steps:

  • 1.Preheat oven to 350 degrees. 2. In large bowl, beat eggs with salt pepper, thyme, nutmeg and cloves until well-mixed. Stir in milk, sour cream and breadcrumbs. Let stand 5 minutes. 3. Add meat mixture, onion, parsley, celery leaves, chives, and garlic. Mix lightly until well-blended. 4.Shape into loaf. Cover with bacon. Put on roasting pan or pan with edges to catch grease. Bake 45 minutes 5. In small bowl, mix chili sauce, mustard and brown sugar. Brush over meat loaf. Bake an additional 15 minutes. 6. Remove meat loaf from pan to avoid grease.
