Spicy Vanilla Chai Milkshake image

Warm chai spices and cool vanilla ice cream are made for each other. Don't skimp on the secret ingredient!

1 cup milk
1/2 teaspoon ground ginger
1/8 teaspoon cayenne pepper
4 black chai tea bags
1 4- inch cinnamon stick
1 teaspoon vanilla extract
1 pint 2 cups vanilla ice cream
Ground cinnamon for topping

Steps:

  • Pour milk into a small saucepan set over medium heat. Stir in ginger and cayenne. Add the tea bags and cinnamon stick, dunking to submerge. Heat, stirring occasionally, until steaming and just below a simmer, about 5 minutes. Remove from heat and let steep for 5 minutes. Remove tea bags. Stir in vanilla extract. Let cool to room temperature. Remove cinnamon stick.
  • Add ice cream to the pitcher of a blender and pour chai milk mixture over the top. Blend until smooth. Pour into a large glass and sprinkle with ground cinnamon. Serve.

2 cups milk
1 whole nutmeg
1/4 teaspoon cardamom
1/2 teaspoon fennel seed
1/2 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
5 whole black peppercorns
2 pints vanilla ice cream
1/4 cup, plus 2 tablespoons chocolate syrup

Steps:

  • In a saucepot on medium-low heat, steep the milk with the nutmeg, cardamom, fennel seed, pumpkin pie spice, cinnamon, and black peppercorns until the milk is fragrant, about 20 minutes. Stir occasionally to break the milk film or "skin" on the top. Strain and discard the solids. Refrigerate until cold, about 30 minutes.
  • In a blender add the ice cream, 1 cup strained milk and chocolate syrup. Blend until smooth. Divide mixture evenly among 4 glasses and serve.

Copy Cat of Original Oregon Chai Tea - I found this on a bulletin board called 'real food'. Since I love Oregon Chai, I thought I'd give it a try. I liked that they used honey instead of refined sugar, but I'm sure you could sub in sugar or a substitute. Enjoy.

4 1/2 inches fresh ginger (use vegetable peeler)
1 -2 cinnamon stick
4 whole cloves
1/2 teaspoon cardamom powder
1 vanilla bean (cut up into 1 in. pieces)
1/4 teaspoon nutmeg
1 tablespoon sugar
1/4 cup honey
3 regular sized bigelow darjeeling blend tea bags or 3 other black tea bags
2 cups water
2 cups milk (can use soymilk if prefer)

Steps:

  • Bring 2 cups of water to a boil and toss in teabags then all other ingredients in order above. Reduce heat and simmer about 5 minutes stirring occasionally. Add milk and bring to boil, then take off heat. Strain through strainer or coffee filters and serve hot or in a tall glass filled with ice.
  • Refrigerate unused portion. To reheat, you may either heat any conventional way, or froth with cappucino maker!
