CRANBERRY-ORANGE TEA BREAD MUFFINS W/ ORANGE CREAM CHEESE GLAZE
Cranberry-Orange Bread has been a holiday favorite of mine for years. These miniature muffins are perfect for gifts, dessert, or Christmas morning.

Steps:
- Preheat oven to 350 degrees.
- Bake pecans in a single layer in a shallow pan 8-10 minutes or until toasted and fragrant, stirring occasionally,.
- Whisk together flour, baking powder, and salt.
- Pulse cranberries and sugar in a food processor 3-4 times or just until chopped.
- Beat butter at medium speed with an electric mixer until creamy. Add eggs, beating until well blended. Gradually add flour mixture alternately with orange juice, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in cranberry mixture and pecans.
- Place baking cups in miniature muffin pans; coat with cooking spray. Spoon batter into baking cups, filling completely.
- Bake for 25 minutes or until a wooden pick inserted in center of muffin comes out clean. Remove from pans to a wire rack. Spoon Orange Cream Cheese Glaze over warm muffins.
- Orange Cream Cheese Glaze: Beat one 3 oz. package of softened cream cheese at medium speed until creamy. Add 1 tablespoons orange juice and 1/4 tsp of vanilla; beat until smooth. Gradually add 1 1/2 cup sifted powdered sugar, beating until smooth.

- Combine flour, dried cranberries, sugar and baking powder in large mixing bowl.
- In separate bowl, mix together remaining ingredients. Blend applesauce mixture into flour mixture until just combined. Spoon batter into greased loaf pan.
- Bake at 350 degrees F 45-50 minutes, until toothpick inserted into center comes out clean. Cool 10 minutes in pan before removing loaf to cool completely on wire rack.

This recipe came from Marlene Koch's Splenda Recipes book that I have. It is sugar-free, low fat and low calorie. I added the cream cheese and vanilla to the glaze. I also added nuts to the original batter recipe.

- Preheat oven to 350 degrees. Coat 9x5 inch loaf pan with nonstick cooking spray.
- In a medium bowl, stir together orange juice, milk, oil, eggs, zest and vanilla. Set aside.
- In a large bowl, combine flour, Splenda, baking powder, baking soda, salt, nuts and cranberries. Stir; make a well and add the liquid mixture, stirring just until blended.
- Spoon into prepared pan and smooth.
- Bake for 50 minutes or until a toothpick inserted into the middle of the loaf comes out dry.
- While bread is baking prepare Glaze: Combine orange juice and Splenda in a small saucepan. Place on medium heat and reduce by one half. Stir in cream cheese until melted. Brush glaze onto warm loaf immediately after removing from oven. Cool on rack for 15 minutes; then remove from pan.
- *Gift loaf variation: Makes 2-3 small loaves - fill mini loaf pans 2/3 full and bake for 30-35 minutes.

- Preheat oven to 350°; grease and flour an 8x4 inch loaf pan.
- In the bowl of a food processor fitted with a steel blade, combine the cranberries and sugar; pulse to coarsely grind; set aside.
- In a big bowl, combine the flour, baking powder, spices, and salt; add in the orange zest and walnuts; toss to blend.
- In a small bowl, combine the orange juice and eggs; beat with a whisk until frothy; add in vanilla and cranberry mixture; stir to combine, then pour over dry ingredients and drizzle with melted butter.
- Stir with a large spatula just until the batter is moistened and the cranberries are evenly distributed.
- Pour batter into loaf pan; bake in the center of oven for 45-50 minutes, until a pick comes out clean.

POPPY SEED TEA BREAD WITH ORANGE GLAZE
Steps:
- Preheat oven to 350. Spray two 9x5x3 inch metal loaf pans with Pam. Bring 1 c sugar, orange juice and orange peel to boil in heavy small saucepan over medium heat, stirring until sugar dissolves. This is the orange glaze - set aside to cool. Using electric mixer, beat remaining 2 1/3 c sugar, oil, eggs, almond extract in large bowl until pale yellow and thick, about 5 minutes. Add flour, baking powder and salt. Slowly add milk. Stir in poppy seeds. Divide batter between the two pans. Bake until toothpick comes out clean, about 1 hour. Transfer pans to work surface. Using long toothpick, poke holes in each bread all over. Gradually spoon reserved orange glaze over hot breads in pans, dividing equally and allowing glaze to absorb after each addition. Cool breads completely in pans. To de-pan, run a knife along edge of breads to loosen. Invert onto platter.

ORANGE-POPPY TEA BREAD
I am a big fan of tea breads (or quick breads) and this one has a nice, citrussy quality that is a real treat. This bread does need to sit overnight in order for the flavors to blend; however, I have not included that in the preparation time, so plan accordingly.

- Preheat oven to 325 degrees. Grease a 9x5-inch loaf pan.
- In a large bowl, beat sour cream, sugar and butter with an electric mixer until light and fluffy. Beat in eggs, poppy seeds, orange rind, and orange juice until well mixed.
- Add flour, baking powder, baking soda, and salt. Beat at low speed, scraping down sides of bowl occasionally, until combined.
- Spoon batter into greased loaf pan and bake 50-55 minutes or until center springs back when lightly pressed with fingertip. Cool in pan on wire rack for about 5 minutes, then remove bread from pan and cool completely. Wrap and plastic wrap and let sit overnight.

- 2. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and the next 5 ingredients (flour through allspice) in a large bowl, stirring with a whisk; make a well in center of mixture.
