HOT SPINACH SALAD image

Number Of Ingredients 10

1/2 pound bacon
1 medium red onion thinly sliced
1 TBS Dijon mustard
Juice of 1 lemon
2 TBS brown sugar
2 TBS red wine vinegar
1 can madarin orange slices OR
2 blood oranges,peeled and sliced
1 avocado sliced
1 lb fresh baby spinach, well washed

Steps:

  • In a large skillet, fry the bacon until crisp. Drain on paper towel, crumble and set aside. Add onion to the bacon fat and saute until tender. Whisk in the mustard, lemon juice, sugar and vinegar. Simmer over low heat, whisking until smooth and the sugar dissolves. Place spinach in large bowl. Sprinkle bacon, avocado and orange slices over spinach. Pour hot dressing over salad and toss. Serve immediately.
