I have had this recipe for many years and it is a treat during the holidays.

⅓ cup packed brown sugar
¼ cup margarine, softened
1 egg, beaten
¾ cup milk
½ cup orange juice
1 tablespoon orange zest
3 cups buttermilk baking mix
1 (9 ounce) package condensed mincemeat
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, beat brown sugar and softened butter until light and fluffy. Add egg, milk, orange juice, and grated orange rind. Mix well. Stir in buttermilk baking mix and mincemeat until moist.
  • Fill greased muffin cups 3/4. Sprinkle with cinnamon and sugar mixture.
  • Bake in a preheated 375 degree F(190 degrees C) oven for 18 minutes. Remove immediately from muffin pan.

My favorite flavor - orange!!! Just can't resist anything with the flavor of orange! Love it, love it, love it! How about you?

Number Of Ingredients 9

1/3 c packed brown sugar
1/4 c butter, softened
1 egg, beaten
3/4 c milk
1/2 c orange juice
1 Tbsp grated orange peel
3 c biscuit baking mix
1 pkg 9 oz. condensed mincemeat, crumbled
cinnamon and sugar topping

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. In a large bowl, beat sugar and butter until fluffy.
  • 3. Add egg, milk, orange juice and peel, mix well.
  • 4. Stir in biscuit mix and mincemeat only until moistened, do not over mix.
  • 5. Fill lined muffin tin to 3/4 full. Sprinkle Cinnamon and Sugar Topping evenly over the muffins.
  • 6. Bake 18 to 20 minutes or until golden brown. Remove from oven onto a wire rack.
  • 7. Remove from the muffin tin. Serve warm with a pat of butter.
  • 8. Cinnamon and Sugar Topping: Combine 2 Tbsp. of sugar and 2 tsp. of ground cinnamon.
