Orange-Spice Pumpkin Bars with Browned Butter Frosting image

Tempting flavors of pumpkin pie and warm, buttery frosting--what could be better on an autumn afternoon?

2 cups Gold Medal™ all-purpose flour
1 1/2 cups granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
2 teaspoons grated orange peel
1/4 teaspoon salt
1/2 cup vegetable oil
1/2 cup orange juice
1 cup canned pumpkin (not pumpkin pie mix)
2 eggs
1/3 cup butter (do not use margarine)
2 cups powdered sugar
1/2 teaspoon vanilla
2 to 4 tablespoons milk

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 15x10x1-inch pan with shortening; lightly flour (or spray with baking spray with flour).
  • In large bowl, beat bar ingredients with electric mixer on low speed, scraping bowl occasionally, until moistened. Beat on medium speed 2 minutes, scraping bowl occasionally. Spread batter evenly in pan.
  • Bake 23 to 27 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In 2-quart saucepan, heat butter over medium heat, stirring constantly, until light golden brown. Remove from heat. Stir in powdered sugar, vanilla and enough milk until smooth and spreadable. Immediately spread frosting over cooled bars. Refrigerate about 15 minutes or until set. For bars, cut into 8 rows by 6 rows. If desired, garnish each bar with orange peel strip.

3/4 cup raw sugar
2 eggs
1 grated orange, rind of
1 tablespoon orange juice
1 1/2 cups plain flour
1 1/2 teaspoons baking powder
1 teaspoon spices
1/2 teaspoon ground cloves
3/4 cup sultana
3/4 cup walnuts, chopped

Steps:

  • Cream butter until smooth and gradually beat in sugar until light and fluffy.
  • Beat in eggs and orange rind and juice.
  • Sift dry ingredients and blend into mixture.
  • Fold in sultanas and walnuts.
  • Sread into greased tray and bake for approximately 30 minutes at 180°C.
  • Cool slightly after removing from oven, cut into fingers or squares.
  • Cool.
  • Ice with an orange or lemon icing.

A citrus glaze and shredded coconut add a tropical element to classic fall flavors.

Number Of Ingredients 20

2/3 cup butter
1 and 1/2 cups brown sugar (packed)
2 eggs
1 teaspoon grated orange peel
1 teaspoon grated lemon peel
2 and 1/2 Tablespoons orange juice
1/2 teaspoon vanilla
2 cups flour (sifted)
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon cloves
1 cup chopped walnuts
For glaze:
2 cups confectioners sugar
2 - 3 Tablespoons orange juice
1 teaspoon grated orange peel
1 teaspoon grated lemon peel
Optional: Coconut (flaked or grated)

Steps:

  • Cream butter and brown sugar.
  • Add eggs, grated peel. orange juice and vanilla.
  • Sift dry ingredients and add. Mix well.
  • Add walnuts.
  • Spread mixture in greased 10 x 15 jelly roll pan.
  • Bake at 350 degrees F. for 20 - 25 minutes until top is
  • brown and springs back when touched.
  • Cool 15 minutes and spread with glaze.
  • Cut into bars. (Makes about 40)
  • You can sprinkle with coconut if you wish.
