Seven-Minute Frosting image

This old-school frosting of egg whites and sugar comes together fast to give your cakes and cupcakes piles of fluffy, marshmallow-y swirls.

1 cup plus 2 tablespoons (250g) sugar
1/3 cup water
4 egg whites
1 tablespoon light corn syrup
1/4 teaspoon cream of tartar
Pinch salt
1 teaspoon vanilla extract

Steps:

  • Use the frosting: Use the frosting within 30 minutes. As it sits, the frosting becomes too tacky and deflated to work with. If someone comes to the door and you can't use the frosting immediately, drape a warm, damp kitchen towel over the bowl. This can buy you a little time.
  • Serve: Cakes with this frosting are best enjoyed the day they are decorated; after about 4 hours, the frosting will look less glamorous and become tacky, with a chalky outer crust. It's still safe and delicious to eat. It's just not very pretty.
  • Store cakes uncovered: Store cakes iced with seven-minute frosting uncovered and avoid having plastic wrap come into contact with the frosting-it'll stick to the wrap. If your cake is sliced you can fold plastic wrap or parchment over and press it against the cut part of cake to prevent it from drying out.

This was my Grandma Rose's recipe ..excellent on a white or chocolate layered cake .

Number Of Ingredients 8

2 egg whites , unbeaten
1 1/2 c sugar
5 Tbsp orange juice **
1 1/2 tsp light corn syrup
2 tsp grated orange rind **
CHOCOLATE CROWN
2 chocolate, unsweetened squares
2 tsp butter

Steps:

  • 1. Put egg whites , sugar , orange juice and corn syrup in an upper part of a double broiler.
  • 2. Beat with rotary beater until well mixed. Place over rapidly boiling water and beat constantly , cooking 7 minutes ; or until the frosting stands in peaks.
  • 3. Remove from the heat , add grated orange rind and beat until thick enough to spread.
  • 4. ** Water may be substituted for the orange juice and 1 teaspoon vanilla for the grated orange rind.
  • 5. spread on cookies. Can also pour on a cake when cool and then , pour on the chocolate crown.
  • 6. Chocolate Crown :
  • 7. melt the chocolate with the butter over hot water and pour the frosted cake , let the chocolate mixture run down the sides.

½ cup water
2 egg whites
½ teaspoon salt
1 tablespoon light corn syrup
1 teaspoon vanilla extract

Steps:

  • Combine sugar, water, egg whites, salt, corn syrup, and vanilla in the top of a double boiler. Beat all ingredients about one minute before placing bowl or pan over the heat.
  • Place over rapidly boiling water; beat at high speed until the mixture forms soft peaks. (This may take longer than 7 minutes).
  • Transfer frosting mixture to large bowl; beat until the mixture is thick and cool enough to spread.

1 1/2 cups sugar
2 tablespoons light corn syrup
6 large egg whites
1 teaspoon pure vanilla extract

Steps:

  • In the heatproof bowl of an electric mixer set over a saucepan of simmering water, combine sugar, corn syrup, 1/4 cup water, and egg whites. Cook over medium heat, stirring frequently, until mixture registers 160 degrees on an instant-read thermometer, about 2 minutes.
  • Attach bowl to a mixer fitted with the whisk attachment. Beat mixture on high speed until glossy and voluminous, about 5 minutes. Beat in vanilla. Use immediately.

Yield Makes about 1 quart

Number Of Ingredients 3

3/4 cup plus 2 tablespoons sugar
1 tablespoon light corn syrup
3 large egg whites, room temperature

Steps:

  • In a small, heavy-bottom saucepan, combine 3/4 cup sugar, corn syrup, and 4 tablespoons water. Place over medium heat, stirring occasionally, until sugar has dissolved, about 4 minutes. Rub a bit of the mixture between your fingers, making sure any graininess has disappeared. Raise heat, and bring to a boil without stirring. Continue boiling, occasionally washing down the sides of the pan with a pastry brush dipped in cold water to prevent sugar from crystallizing, until a candy thermometer registers 230 degrees, about 5 minutes. (Depending on the humidity, this can take anywhere from 4 to 10 minutes.) Remove the syrup from heat (temperature will keep rising).
  • Meanwhile, in the bowl of an electric mixer, whisk the egg whites on medium speed until soft peaks form, about 2 1/2 minutes. Gradually add remaining 2 tablespoons sugar. With mixer on medium-low speed, pour syrup in a steady stream down side of bowl (to avoid splattering).
  • Beat the frosting on high speed until cool, about seven minutes. It should be thick and shiny. Use immediately.
