I HATE FISH. Hubby loves fish. He had a heart attack and it's good for him to eat fish. I tried being supportive to him and setting a good example for the kids in the process. Didn't work out so well. Me sitting there forcing the stuff down with my nose plugged like it was bad medicine. So I make this for them, and I have chicken. Looks somewhat similar, and still sets that good example.... You can use any white fish for this.

3 tablespoons margarine, softened
1/2 teaspoon dried basil
1/2 teaspoon lemon pepper
3/4 lb orange roughy (or other white fish)
4 lemon slices

Steps:

  • Preheat broiler.
  • In a small bowl, combine margarine, basil and lemon pepper.
  • Place fish on a greased broiler pan and spread 1/2 of the margarine mixture over the fillets.
  • Broil about 5-8 inches away from heat for about 5 minutes. Turn the fillets over and spread the remaining margarine mixture on them and top with lemon slices.
  • Broil for another 5 minutes or until fish can be flaked with a fork.

Found this in my local market and substituted the Orange Roughy with Tilapia. Excellent choice! I serve this with steamed asparagus over a bed of steamed spinach.

1 lb orange roughy fillet (or another mild fish like Tilapia)
4 tablespoons butter or 4 tablespoons margarine, softened
1 teaspoon dried basil or 1 tablespoon fresh basil
1/2 lemon, juice of
parmesan cheese

Steps:

  • Combine butter and basil in a small bowl.
  • Place fillets on a lightly greased broiler pan.
  • Spread fish with half of the basil butter mixture.
  • Broil 5- 8 inches from heat for 5 minutes.
  • Turn.
  • Spread with remaining basil butter.
  • Squeeze lemon juice over fillets.
  • Top with sprinkle of Parmasean cheese.
  • Broil another 4- 5 minutes or until fish is close to the point of flakiness.

4 (4 ounce) fillets orange roughy
1 orange, juiced
1 lemon, juiced
½ teaspoon lemon pepper

Steps:

  • Heat oil in a large skillet over medium-high heat. Arrange fillets in the skillet, and drizzle with orange juice and lemon juice. Sprinkle with lemon pepper. Cook for 5 minutes, or until fish is easily flaked with a fork.

4 (4 ounce) fillets orange roughy
½ lemon
½ cup grated Parmesan cheese
¼ cup butter, softened
¼ cup prepared Dijon mustard mayonnaise blend
1 large clove garlic, pressed
¼ pinch salt
paprika

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place the orange roughy filets on the broiler pan and squeeze the lemon over the top of the fish. Broil the filets in the preheated oven for about 6 to 8 minutes.
  • Combine parmesan, butter, dijionnaise, garlic, and salt in a small bowl. Remove the fish from the oven and spread the cheese mixture on top of the filets. Sprinkle with paprika. Broil until the topping is lightly browned and the fish flakes easily with a fork, about 3 minutes.

DELECTABLE BAKED ORANGE ROUGHY



Delectable Baked Orange Roughy image

I love buttery, lemony white fish so I devised this simple recipe. For this dish, you can use roughy, tilapia, whitefish, halibut.... any nice white fish fillet. And this is a great way for NEWBIES to seafood to break in. The technique is pretty forgiving of mistakes and the fish WILL be done, but not overcooked. Enjoy!

4 orange roughy fillets
8 tablespoons butter, melted (no margarine!)
2 lemons, halved
1/2 teaspoon paprika
8 fresh parsley sprigs (curly Italian parsley is best)
cooking spray

Steps:

  • Pull off four sheets of good quality aluminum foil, each about 24 inches long. Double each one over so it's a foot long and spray with the cooking spray.
  • Pre-heat the oven to 375-degrees F.
  • Lay out a fillet on each sheet of foil and pull the sides up a bit so that it will hold liquid.
  • Squeeze a half lemon over each fillet. Cut up the spent lemons into wedges and put the pieces around the fish.
  • Pour the melted butter equally over each fillet. Lightly dust the top of each fillet with the paprika. Instead of paprika, you could substitute Old Bay Seasoning, which yields an excellent flavor. In any case, you may not need all the spice, depending on the size of your fillets.
  • Close the foil and make a seal. Place the closed foil bowls into the oven, middle rack, and bake for 15 minutes.
  • Revove the foil bowls from the oven, carefully open them to expose the filets and place them all on a sheet pan. Re-set the oven to "broil" (on "high" if there is a setting), and return the fish to the oven just above the middle rack. Broil for just a few minutes until you see very slight browning, no more than 5 minutes.
  • Garnish with the parsley sprigs and serve hot with basmati rice on the side. (See: Recipe #217802 ). You can just leave the fish on the foil and place it on serving plates if you wish.
