This bread is deliciously moist, abundant with flavor and texture, and extremely easy to make gluten-free.

1 cup granulated sugar
1/2 cup vegetable oil
2 eggs
1/2 cup milk (Dairy-Free Option: use coconut, soy, or almond)
2 teaspoons freshly grated orange zest
2 1/4 cups all-purpose flour (GF Option: use gluten-free flour + 2 teaspoons xanthan gum unless flour already contains it)
1 Tablespoon ground flax
2 1/2 teaspoons baking powder (GF Option: use a gluten-free brand)
1 teaspoon salt
2/3 cup pecans, chopped
2 cups fresh rhubarb, finely chopped
TOPPING:
1/4 cup pecans, finely chopped
2 Tablespoons granulated sugar

Steps:

  • Heat oven to 350 degrees F. Grease bottoms only of a (9 x 5-inch) loaf pan OR two (8 x 4-inch) loaf pans with shortening or cooking spray.
  • In a large bowl, beat together sugar, oil, eggs, milk, and orange zest. Add flour, flax, baking powder, and salt; stir just until flour is moistened. Stir in rhubarb.
  • Pour batter into a 9 x 5-inch loaf pan (OR... divide batter evenly between two 8 x 4-inch loaf pans). Sprinkle the top with 1/4 cup chopped pecans, (lightly press them into the batter) and 2 tablespoons sugar.
  • Bake 50 to 65 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 2 hours. Cut with a serrated knife and serve with butter.

1/2 cup sugar
1 large egg
1/4 teaspoon grated orange zest
1/4 teaspoon vanilla extract
3/4 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon cream of tartar
1/8 teaspoon baking soda
1/8 teaspoon salt
1/4 cup sour cream
2/3 cup finely chopped fresh rhubarb
1/4 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, orange zest and vanilla. Combine the flour, baking powder, cream of tartar, baking soda and salt; add to creamed mixture alternately with sour cream. Fold in rhubarb and walnuts., Transfer to two 5-3/4x3x2-in. loaf pans coated with cooking spray. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1 cup sugar
1/2 cup vegetable oil
2 eggs
1/2 cup milk
2 teaspoons grated orange peel
2 1/4 cups Gold Medal™ all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 1/2 cups finely chopped fresh rhubarb
1/2 cup sliced almonds
2 tablespoons sugar

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottoms only of 2 (8x4-inch) loaf pans with shortening or cooking spray.
  • In large bowl, beat 1 cup sugar, the oil, eggs, milk and orange peel with wire whisk. Stir in flour, baking powder and salt just until flour is moistened. Stir in rhubarb.
  • Divide batter evenly between pans. Sprinkle each pan with 1/4 cup almonds; lightly press almonds into batter. Sprinkle each with 1 tablespoon sugar.
  • Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling rack. Cool completely, about 2 hours. Cut with serrated knife.

CREAM TOGETHER:
1/2 c sugar
2/3 c butter flavor shortening
2 eggs
MIX DRY INGREDIENTS IN SEPARATE BOWL:
1 3/4 c flour
1/4 c wheat germ
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/4 tsp ground nutmeg
ZEST 1 TBSP OF THE ORANGES BEFORE SQUEEZING THEM
MEASURING CUP (MIX TOGETHER):
1/2 c fresh squeezed orange juice
1 tsp vanilla
CHOP:
1 c rhubarb, diced fine
1/2 c pecans, chopped

Steps:

  • 1. Preheat oven to 350F. Lightly grease the bottom of a 9x5x3 loaf pan (I am using mini loaf pans). Cream together the sugar, shortening and eggs (add them one at a time)
  • 2. In a separate bowl combine the flour, wheat germ, baking powder, soda, salt and nutmeg.
  • 3. Zest 1 Tablespoon of the oranges. Squeeze 1/2 cup of orange juice. Mix the orange juice and the vanilla together.
  • 4. Alternate mixing batches of dry ingredients with the juice. Stir in pecans, rhubarb and orange zest.
  • 5. Spoon batter into pan(s). Let stand 20 minutes before baking. Bake 50 minutes to 1 hour or until tested and the center comes out clean. Cool before eating. Wrap the loaf(s) in plastic wrap and store in the fridge. It's even better the second day. Serve with nutmeg butter.

1 can(s) Pillsbury Grands buttermilk biscuits (8 ct.)
1 can(s) Pillsbury Grands buttermilk biscuits (5 ct.)
1 c sugar
1 stick unsalted butter, melted
2 small oranges
1/2 c confectioners' sugar
1/2 c pecans, chopped
1 pkg cream cheese (8 oz)
1 dash(es) orange extract

Steps:

  • 1. Spray a large Bundt pan liberally with non-stick spray. Set aside. Preheat oven to 375 degrees.
  • 2. Pour sugar into a small bowl. Zest both oranges and add to sugar. Mix to combine. Reserve oranges to juice for glaze.
  • 3. Melt butter. Pour a small amount of butter into the Bundt pan and spread 1/2 the pecans in the bottom.
  • 4. Open the cans of biscuits. Taking one biscuit at a time, open each biscuit and insert 1 tsp of cream cheese into the center.
  • 5. Press to seal.
  • 6. Dip the biscuit in butter.
  • 7. Then dip in sugar-orange zest mixture, coating the entire biscuit.
  • 8. Stand biscuit in the Bundt pan on its side. Repeat with the remaining biscuits, creating a circle around the Bundt pan.
  • 9. Pour remaining butter over the biscuits and sprinkle remaining pecans on top.
  • 10. Bake at 375 degrees for 45 minutes or until biscuits are puffed and golden.
  • 11. Remove from oven and turn the bread out from Bundt pan onto a serving platter.
  • 12. Mix confectioners' sugar with the juice from the oranges to create a glaze. You may add a dash of orange extract if desired to intensify the orange flavor. Use as much juice as needed to create a glaze consistency you like.
  • 13. Drizzle glaze over bread while still warm.
  • 14. Best when served warm, but can also be served at room temperature. Reheat in the microwave for 30 seconds if desired.

1 package (1/4 ounce) active dry yeast
3/4 cup warm water (110° to 115°)
3/4 cup orange juice
2 tablespoons honey

2 teaspoons salt
1 teaspoon grated orange zest
3-3/4 to 4-1/2 cups all-purpose flour
1 large egg white
Optional: Additional fresh rosemary and whole peppercorns

Steps:

  • In a large bowl, dissolve yeast in warm water. Add orange juice, honey, oil, rosemary, salt, orange zest and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Roll into a 15x1-in. rectangle. Starting at a short end, roll up jelly-roll style. Pinch edges to seal and shape into an oval. Place seam side down on a greased baking sheet. Cover and let rise until nearly doubled, about 30 minutes., Bake at 375° for 20 minutes. Whisk egg white; brush over loaf. Place small sprigs of rosemary and peppercorns on top if desired. Bake 25 minutes longer or until browned. Remove from pan to wire rack to cool.

2 1/2 cups frozen rhubarb or 2 cups fresh rhubarb, chopped
1/4 cup granulated sugar
2 -3 oranges
2 tablespoons granulated sugar
1 egg
1 teaspoon vanilla
3 cups all-purpose flour
3/4 cup granulated sugar
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter, melted
3/4 cup pecans or 3/4 cup walnuts, coarsely chopped

Steps:

  • Measure out rhubarb. Defrost frozen rhubarb, then drain well and pat dry. If using fresh rhubarb, chop finely.
  • Preheat oven to 350F (180C).
  • Lightly grease a 9x5-inch (1.5-L) loaf pan. Stir rhubarb with 1/4 cup (50 mL) sugar and set aside.
  • Finely grate peel from 2 oranges to make about 2 tablespoons (30 mL), and squeeze out 1 cup (250 mL) juice.
  • Measure 2 tablespoons (30 mL) of this juice into a dish. Stir in 2 tablespoons (30 mL) sugar and set aside to glaze loaf.
  • In a medium-size bowl, beat egg.
  • Stir in remaining juice, grated peel and vanilla.
  • Measure flour, 3/4 cup (175 mL) sugar, baking powder, soda and salt into a large mixing bowl.
  • Stir with a fork until blended and make a well in centre. Pour in egg mixture and cooled melted butter.
  • Stir just until evenly combined.
  • Batter is very thick.
  • Stir in rhubarb mixture and nuts just until evenly distributed.
  • Turn into prepared pan. Batter will almost fill the pan. Smooth top.
  • Bake in centre of preheated 350F (180C) oven until top is golden and a skewer inserted into centre comes out clean, about 1 hour and 15 to 20 minutes.
  • Place pan on a rack.
  • Stir orange juice and sugar mixture. Pour over top of hot loaf.
  • Cool loaf in pan for 10 minutes. Then, turn out of pan and place loaf on rack to finish cooling.
  • Loaf will keep well, covered, at room temperature for up to 2 days; store in refrigerator if longer. Or wrap airtight and freeze.
