1/4 cup olive oil
1/4 cup red wine vinegar
1 tablespoon minced garlic
3 seedless oranges, peel and white pith removed
1 small red onion, halved, thinly sliced
1 red bell pepper, thinly sliced
1 9-ounce can white meat tuna packed in water, drained well, separated into chunks
1/4 cup chopped pimiento-stuffed green olives
1/4 cup chopped fresh parsley
8 cups mixed salad greens
1/3 cup slivered almonds, toasted

Steps:

  • Whisk oil, vinegar and garlic in large bowl to blend. Working over bowl with dressing, cut oranges between membranes, releasing segments into bowl. Add onion, bell pepper, tuna, olives and parsley; toss. Season with salt and pepper. (Can be made 2 hours ahead. Cover; refrigerate.)
  • Divide salad greens among plates. Spoon tuna salad over, dividing equally. Garnish with almonds.

CITRUS TUNA SALAD

Easy to put together, this salad is low cal and low fat. No mayo or sour cream. Serve with saltine crackers, baked tortilla chips or tostadas. I like to add a chopped jalapeno (canned) or a good splash of Mexican hot sauce (Tapatio is very good). Adjust the amount of veggies and citrus juice to your taste. This also packs well for lunches as long as it's kept cold.

1 medium carrot, cut into matchsticks (or grated)
1 firm ripe tomatoes, chopped
2 green onions, white part only, finely chopped
1/2 cup shredded lettuce
1/2 orange, juice of (to taste)
1 lime, juice of (to taste)
salt and pepper
chopped cilantro, to garnish

  • Mix all the ingredients in a bowl, adjust the seasoning, and serve.

I grew up eating tuna salad made with sour pickles, onions, and mayonnaise. When I married, my m-in-law made a delicious tuna salad with apples as one of the main ingredients. I LOVED it and began to use that recipe. My husband likes pecans (Texas' state nut) in everything, so I always add a handful, but they are optional. It's better to begin with the chopped apple so you can sprinkle lemon juice over the pieces to keep them from turning brown. I also prefer unpeeled apples. I am saying this makes 6 servings because we like THIN sandwiches. I also sometimes make my sandwich ingredients the night before because allowing to set a while makes the flavors blend.

1 small granny smith apple, unpeeled cored and chopped
1 tablespoon lemon juice (or however much needed to coat apple pieces)
1 (5 ounce) can tuna fish, drained (do not use foil packaged, too fishy)
2 celery ribs, cleaned and chopped
1 tablespoon onion, grated (sweet kind is best)
5 tablespoons mayonnaise (we like the flavor and texture of "Real" better than "Lite")
1/4 cup pecans, coarsely chopped (optional)
1 pinch sugar, to taste
1 pinch salt, to taste
12 slices whole wheat bread, sandwich sliced

Steps:

  • Chop unpeeled Granny Smith (or any tart, crunchy apple -- Fuji and Gala are also good).
  • Sprinkle lemon juice (fresh or bottled) over apples and toss to coat evenly.
  • Add drained tuna fish and flake, mixing with apples.
  • Add celery, onion, and mayonnaise. Amount of mayonnaise may be adjusted according to texture preference. More crumbly (less mayonnaise) is better to eat with a fork on a lettuce leaf. More "pastey" texture is better for sandwiches.
  • Taste, and add a pinch of sugar and salt if needed. (Some apples require a tiny bit of sugar).

2 lemons
2 cups sugar
1 cup water
4 cups mixed baby greens
3 eggs
4 egg whites
1/2 cup simple syrup (equal amounts of sugar and water, boiled and then cooled to room temperature)
1/4 cup water
5 cloves garlic, chopped
4 cups flour
1/4 cup melted butter
Salt and pepper
Chopped rosemary
4 (5-ounce) pieces fresh tuna
4 oranges, sectioned
4 cups mixed baby greens

Steps:

  • Quarter the lemons and set aside in a saucepot. Cover the lemon quarters with water, bring to a boil, and simmer for 10 minutes. Drain, repeat this process, and let stand for 1 to 2 hours.
  • In a saucepot, combine the water and sugar, bring to a boil, and add the lemon pieces and simmer for 20 minutes. Let the rinds steep overnight and cut them into julienne.
  • Preheat the oven to 400 degrees F.
  • To make the herb tuille, combine the eggs, egg whites, syrup, water, and garlic, and whisk all together. Work in the flour and then add the butter, salt, and pepper, and mix until a paste is formed. On a buttered and floured baking sheet, pipe the batter onto the pan in random forms and sprinkle with rosemary. Bake for 2 to 3 minutes until light golden brown. Quickly remove from the oven and shape over a bowl or any desired shape and set aside.
  • Grill the tuna to medium, approximately 3 minutes each side.
  • To serve, place the greens on each plate. Layer the tuna on half of the greens, garnish with orange segments, tuille, and the candied lemon zest.
