1 cup orange marmalade
1/4 cup pineapple juice
1/2 cup brown sugar
2 tablespoons apple cider vinegar
2 tablespoons spicy brown mustard
1 tablespoon Worcestershire Sauce
2 tablespoons minced fresh rosemary
2 teaspoons granulated garlic
2 teaspoons kosher salt
2 teaspoons black pepper
1/4 teaspoon chili flakes

Steps:

  • Add orange marmalade, pineapple juice, brown sugar, apple cider vinegar, brown mustard and Worcestershire sauce to a heavy saucepan. Place over medium- high heat.
  • Whisk in fresh rosemary, garlic, salt, pepper and red pepper flakes.
  • Bring mixture to a rolling boil, whisking often. Remove from heat and cool slightly before serving.
  • Store in an airtight container in the refrigerator up to 3 weeks.

Steps:

  • Place all ingredients in a small saucepan over medium-low heat. Simmer, stirring until well blended, about 5 minutes.
  • Brush glaze on pork or poultry during last 5-10 minutes of grilling.
  • Leftover glaze can be stored in the refrigerator.

2 cups tomato sauce (or one 14.5 oz can)
1 can (6 oz) of tomato paste
1/3 cup apple cider vinegar
1/4 cup real maple syrup
1/4 cup molasses
2 tablespoons worcestershire sauce
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dijon mustard
1/2 teaspoon onion powder
1/2 teaspoon salt (I use this salt.)
1/2 teaspoon black pepper
1-2 teaspoons liquid smoke (optional, but nice if you're wanting the smokey flavor)
1/8 teaspoon cayenne pepper (optional- use only if you want a kick)

Steps:

  • Combine all ingredients in a medium saucepan, and bring to a simmer over medium heat.
  • Continue to mix and simmer for 10-15 minutes so all the ingredients can meld together.
  • Transfer to a jar and store in the refrigerator for up to several weeks. You can also freeze it for longer storage.

1 cup orange juice
4 garlic cloves, pressed
2 teaspoons grated orange peel
1/2 teaspoon ground allspice
1/2 teaspoon dried thyme, crumbled
2 pounds baby back pork ribs (about 2 slabs)
1/4 cup maple syrup

Steps:

  • Combine first 5 ingredients in large baking dish. Add ribs and turn to coat. Cover and chill 6 hours or overnight.
  • Prepare barbecue (medium-high heat). Remove ribs from marinade and season with salt and pepper. Grill until cooked through, turning occasionally, approximately 25 minutes.
  • Meanwhile, place marinade in heavy small saucepan. Add maple syrup and boil until reduced to 1/4 cup, about 18 minutes. Brush ribs with glaze. Grill ribs 1 minute longer and serve.
