4 skinless, boneless chicken breast halves
2 tablespoons prepared Dijon-style mustard
½ cup chopped onion
½ cup packed brown sugar, divided
2 cups orange juice
2 tablespoons butter
2 tablespoons all-purpose flour

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place chicken in a 9x13 inch baking dish. Spread mustard evenly over the chicken and sprinkle with chopped onion. Coat lightly with 1/4 cup of the brown sugar and pour in enough orange juice to cover chicken. Add butter on top.
  • Bake in preheated oven for 45 minutes, then remove leftover sauce from baking dish and pour into a saucepan. Sprinkle chicken with remaining 1/4 cup brown sugar and return to oven.
  • Whisk flour into sauce in saucepan. Add any leftover orange juice and heat on high until the sauce thickens. Remove chicken from oven and place on a serving dish; pour sauce over the chicken or into a gravy boat, and serve.

I have had this recipe for many years, and do not remember where I originally got it. The dressing really sets the salad off, adding a wonderful sweet and sour tang to the salad. This salad makes an attactive, colorful place setting. Pleasing to the eye and palate. Preparation time does not include cooking the chicken.

3 cups cooked chicken (can buy canned)
1 tablespoon minced onion
1 teaspoon salt
2 tablespoons fresh lemon juice
1/2 cup celery, chopped
1/3 cup mayonnaise
mandarin orange
grapes
slivered almonds
lettuce leaf
2/3 cup salad oil
1/3 cup orange juice
1/4 cup sugar
3 tablespoons vinegar
salt
1/4 teaspoon dry mustard
celery seed

Steps:

  • Mix the first 6 ingredients together.
  • Chill.
  • Mix the dressing ingredients together and chill.
  • Serve on lettuce leaves.
  • Decorate with fruit around the edges.
  • Spoon salad dressing over the salad mixture when served.

1 lb boneless skinless chicken thighs
4 teaspoons Dijon mustard
1/2 cup onion, finely chopped
2 tablespoons butter, cut into bits
1 1/2 cups orange juice
1/4 cup brown sugar, firmly packed (light or dark)
garlic powder, Parsley, Salt, and Pepper to taste

Steps:

  • Preheat oven to 375.
  • Arrange chicken in casserole dish. Pierce each thigh once or twice.
  • Mix all other ingredients together and pour over chicken. Sprinkle tops with garlic powder, salt, pepper. Sprinkle with parsley.
  • Bake 40-45 minutes or until chicken is no longer pink.

2 1/2 to 3 lbs. chicken
flour for dredging
1 1/2 c. orange juice
1/2 tsp. orange peel
1/2 c. dry white wine
1 tsp. salt
1/2 c. raisins (white)
1/2 c. pineapple, drained and crushed
cornstarch for thickening sauce
1/2 c. almonds, toasted and slivered

Steps:

  • Dredge chicken pieces in flour; brown pieces on all sides in oil. Remove browned pieces to shallow baking dish. Pour off excess oil from browning pan. Combine the orange juice, orange peel, white wine, salt, raisins and pineapple in the pan and bring to a slow boil. Deglaze pan. Pour the sauce over the chicken and cover the dish with foil. Bake at 325º for about 30 minutes. Baste once or twice during this time. Raise temperature to 350º and bake uncovered for 15 minutes longer. Additional orange juice may be added during baking, if needed. Remove chicken to a preheated platter and thicken sauce with corn starch dissolved in a little orange juice, if a thicker sauce is desired. Use 1 tablespoon of cornstarch for every 3 tablespoons of orange juice. Pour remaining sauce in a separate bowl. Garnish the chicken with slivered almonds, orange slices and parsley. Serve with rice and sour cream casserole and salad with guacamole dressing.

3 teaspoon dijon mustard
1/2 cup onion; finely chopped
2 tablespoon unsalted butter; cubed
salt and pepper
1 1/2 cup orange juice
1/4 cup brown sugar; firmly packed

Steps:

  • Position a rack in the center of the oven. Preheat the oven to 375 F. Rinse and pat dry chicken. Smear the skin with Dijon mustard. Arrange the chicken skin side down in a shallow roasting pan or baking dish just large enough to hold it in a single layer. Sprinkle the pieces with onions, butter, salt and pepper. Pour orange juice around the chicken. Bake, basting once, for 30 minutes. Turn the chicken skin side up and sprinkle with brown sugar. Bake until the chicken is tender and golden, 15 to 20 minutes more. Add more orange juice if the pan seems dry. Remove the chicken to a serving platter. Pour the juices into a small saucepan and boil over high heat until syrupy. Spoon the sauce over the chicken and serve.

1 teaspoon salt
1/4 teaspoon plus 1/8 teaspoon freshly ground black pepper
2 tablespoons vegetable oil
1/3 teaspoon cayenne pepper, or to taste
2 large garlic cloves, finely chopped
2 tablespoons cider vinegar, Japanese rice vinegar or other mild-flavored vinegar
1 tablespoon butter
1 1/2 cups fresh orange juice
1 vanilla bean, split
A few sprigs of cilantro, for garnish
Cooked rice or tortillas for serving (optional)

Steps:

  • Season chicken with the salt and 1/4 teaspoon black pepper. Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces skin side down, and brown until golden on both sides, turning once, 3 to 5 minutes on each side.
  • When chicken is browned, pour off any excess fat from skillet and return to medium heat. Sprinkle cayenne and 1/8 teaspoon black pepper over chicken, turning pieces to coat evenly. Taste a pinch of the skin, and add more cayenne if additional heat is desired. Add garlic and sauté for 1 minute. Add vinegar, butter and orange juice. Scrape in pulp of vanilla bean and add bean. If interior of chicken needs further cooking (it should be 170 degrees when tested in center with an instant-read thermometer), cover and cook over medium-low heat for an additional 5 to 10 minutes, or as needed. 2 cups freshly squeezed orange juice
1/3 cup balsamic vinegar
