¾ cup plain yogurt
¼ teaspoon cayenne pepper
1 teaspoon minced fresh ginger root
2 teaspoons grated orange zest
1 pound top sirloin, cut into 1-inch cubes
1 large red onion, cut into wedges
2 large red bell peppers, cut into 2 inch pieces
2 tablespoons olive oil
1 ½ cups 1-inch fresh pineapple cubes
1 large navel orange, peeled, sectioned
1 tablespoon butter
2 tablespoons brown sugar
1 tablespoon rum

Steps:

  • Combine yogurt, cayenne pepper, ginger, orange zest, and sirloin cubes in a large freezer bag. Massage bag to mix and coat beef well. Refrigerate for at least 2 hours.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Remove beef from freezer bag; shake off as much marinade as possible. Thread onion, red pepper, and marinated beef cubes onto skewers; brush with olive oil.
  • Place the pineapple and oranges in the center of a large piece of heavy duty aluminum foil. Dot with the butter, sprinkle with brown sugar, and drizzle with the rum. Bring together the long sides of the foil and seal well; fold up and seal each end. Place fruit packets on grill and cook, covered, for 10 minutes.
  • Place kabobs on the grill with the fruit. Cook, turning occasionally, until meat is done to your liking and fruit is soft and glazed, about 10 minutes.

2 tablespoons olive oil
1 medium onion, chopped
3/4 cup orange juice
3/4 cup ketchup
2 tablespoons dark brown sugar
1 tablespoon Worcestershire sauce
1 3/4 pounds sirloin tip
About 20 cherry tomatoes
1 bunch scallions white and light green parts cut into 1-inch segments
1 large orange, cut into 1-inch-thick rounds, then cut into small wedges

Steps:

  • For the barbecue sauce: Heat the oil in a small saucepan over medium-high heat. Add the onion and cook, stirring occasionally, until golden, about 6 minutes. Add the orange juice and simmer until slightly reduced, about 5 minutes. Add the ketchup, sugar and Worcestershire and return to a simmer. Cook until slightly thickened and the onions are tender, about 10 minutes. Puree until smooth in a food processor. Transfer to a bowl and cool completely.
  • Make the kebabs: Cut the steak into approximately 1-inch cubes. If there are parts of the meat that are significantly thinner, cut those into longer pieces that can be folded together when skewered. Toss the steak with about 1/2 cup of the barbecue sauce in a medium bowl and marinate in the refrigerator at least 1 hour and up to 4 hours.
  • Preheat the grill to medium-high. Skewer the meat, alternating with tomatoes, scallions, and orange pieces on ten 10- to 12-inch metal or wooden skewers. Sprinkle with salt and pepper. Set aside about 1/4 cup of the barbecue sauce and use it to brush all over the skewers. Reserve the remaining sauce for serving.
  • Grill the skewers, turning 2 or 3 times, until well-marked and cooked to desired doneness, 5 to 6 minutes total for medium rare. Serve the skewers with the reserved barbecue sauce on the side. Any remaining barbecue can be kept refrigerated for up to 2 weeks.

3 lbs flank steaks, cut into 1 inch cubes
3 oranges, zest of
3 oranges, juice of
1 tablespoon chili sauce
1 tablespoon red pepper flakes
1/2 teaspoon black pepper
3 tablespoons sugar
5 fresh garlic cloves, crushed
3 tablespoons soy sauce
3 red bell peppers, cut into 1 inch pieces
2 medium onions, cut into 1 inch pieces
1 lb cremini mushroom
salt

Steps:

  • In a large bowl, mix together the first 9 ingredients, cover, and refrigerate over night or at least 6 hours Soak kabob skewers in water for 5 minutes.

1 lb sirloin steak, cut into 1 inch cubes
1/2 cup vegetable oil
1/2 cup Burgundy wine
2 large garlic cloves, minced
2 tablespoons crystallized ginger, finely chopped
2 tablespoons ketchup
2 tablespoons molasses
1/2 teaspoon salt
1/2 teaspoon curry powder
1/2 teaspoon pepper
3/4 medium green pepper, cut into 1 inch pieces
8 mushrooms, left whole unless large, halved otherwise
1/2 onion, cut in wedges

Steps:

  • Place the cut up meat in a shallow dish. Combine oil and next 8 ingredients; stirring well. Pour marinade over meat. Cover and marinate in the refrigerator for 8 hours.

1/4 cup orange marmalade
1 tablespoon white wine vinegar
1/4 teaspoon ground ginger
1 clove garlic, finely chopped
1/2 lb boneless beef sirloin steak (about 1 inch thick), fat removed, cut into 1-inch cubes

Steps:

  • In small glass or plastic bowl, mix all ingredients except beef. Stir in beef. Cover; refrigerate at least 2 hours to marinate but no longer than 8 hours, stirring occasionally.
  • Set oven control to broil. Remove beef from marinade; reserve marinade. On each of 2 (11-inch) metal skewers, thread beef cubes, leaving 1/4 inch space between each cube. Place on rack in broiler pan.
  • Broil with tops about 5 inches from heat 4 minutes. Turn; brush with reserved marinade. Broil 3 to 5 minutes longer or until brown and medium doneness.
