2 tablespoons thinly sliced navel or blood orange zest (from 1/2 orange)
2 to 3 navel or blood oranges (peel and pith removed), quartered lengthwise, thinly sliced, and seeded (2 cups)
1/3 cup sugar
1/4 cup dried cherries
1 shallot, minced
1 tablespoon red-wine vinegar
4 bone-in pork rib chops
Coarse salt and ground pepper

Steps:

  • In a medium saucepan, combine orange zest and slices, sugar, dried cherries, shallot, salt, and 2 tablespoons water; bring to a boil over high. Reduce heat to medium, and simmer, stirring occasionally, until oranges collapse and liquid is syrupy, 12 to 15 minutes. Remove from heat; stir in red-wine vinegar.
  • Season pork chops with salt and pepper. Sear in a pan until opaque throughout, and top with orange chutney.

1 cup orange juice
1/2 cup unsweetened pineapple juice
1/4 cup reduced-sodium soy sauce
2 tablespoons honey
2 garlic cloves, minced
1/2 teaspoon grated orange zest
1/4 teaspoon pepper
4 bone-in pork loin chops (7 ounces each)
1 tablespoon cornstarch

Steps:

  • In a small bowl, combine the first seven ingredients. Pour a scant 1 cup into a large bowl. Add pork chops; turn to coat. Cover and refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade for sauce., Drain and discard marinade. On a lightly oiled grill rack, grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let stand for 5 minutes before serving., Meanwhile, in a small saucepan, combine cornstarch and reserved marinade. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chops.

2 tablespoons lemon pepper
4 tablespoons apple cider vinegar
2/3 cup orange marmalade
olive oil, to coat

Steps:

  • Brush chops with a little oil and sprinkle with lemon pepper.
  • Heat non-stick skillet over medium high heat. Brown chops on both sides until just cooked through. Remove to platter for a minute.
  • Add marmalade and cider vinegar to pan, cooking and stirring into baked bits left in pan. Boil for a couple minutes to reduce a little, stirring now and then.
  • Return chops to pan and turn once to coat.

1 garlic clove, minced
1 tablespoon canola oil
1/2 cup sherry or chicken broth
1/4 cup honey

1 tablespoon grated orange zest
3/4 teaspoon hot pepper sauce
4 bone-in pork loin chop (6 ounces each)
1 teaspoon cornstarch
2 tablespoons water

Steps:

  • In a large saucepan, cook ginger and garlic in oil for 1 minute; remove from the heat. Stir in the sherry or broth, honey, soy sauce, sesame seeds, orange zest and hot pepper sauce. 6 pork loin chops (1/2 inch thick)
1 tablespoon vegetable oil
3/4 cup water
1/2 teaspoon paprika
1/2 teaspoon pepper
1-1/4 teaspoons salt, divided
1 medium orange
1/2 cup sugar

1/2 teaspoon ground cinnamon
12 whole cloves
1 cup fresh orange juice

1 tablespoon soy sauce
½ cup frozen orange juice concentrate, thawed
½ onion, shredded
1 teaspoon dried rosemary
1 teaspoon ground sage
2 teaspoons salt, or to taste
1 large clove garlic, crushed
½ cup barbeque sauce
4 thick cut pork chops

Steps:

  • In a mixing bowl, mix together vinegar, soy sauce, orange juice, onion, rosemary, sage, salt, garlic, and barbecue sauce. Place chops in a large resealable plastic bag. Pour in the marinade, and seal. Refrigerate for 6 to 8 hours, or overnight.
  • Preheat grill for high heat. Transfer marinade to a small saucepan, bring to a boil, and cook for several minutes.
  • Lightly oil preheated grill. Grill chops for 6 to 8 minutes, turning once, or to desired doneness. Brush cooked marinade over chops during the final minutes of cooking.

2 oranges (1 zested and juiced, 1 cut into 8 wedges)
1/4 cup white-wine vinegar
3/4 cup honey, preferably orange blossom
Salt and pepper
4 bone-in pork chops (about 8 ounces each, 1 inch thick)
5 sprigs rosemary

Steps:

  • In a bowl, whisk together orange zest and juice, vinegar, honey, and 1/4 teaspoon pepper. Place pork, orange wedges, and rosemary in a shallow dish or zip-top bag and coat with marinade. Refrigerate pork at least 2 hours or up to overnight.
  • Remove pork, orange wedges, and rosemary from marinade; transfer pork and oranges to a wire rack set on a foil-lined rimmed baking sheet. Season pork with salt and pepper. Transfer marinade to a small saucepan, simmer over medium until reduced by half, about 5 minutes.
  • Heat broiler, with rack in upper third of oven. Broil pork and oranges 3 minutes, then flip pork, brush with reduced marinade, and add rosemary. Broil until pork is lightly charred and cooked through, 5 to 7 minutes. Brush with more reduced marinade and serve.
