Serve this vividly coloured chutney with cheeses and cold meats - great to give as a gift, too

Provided by Good Food team

Categories     Buffet, Condiment, Snack

Time 1h20m

Yield Makes roughly 2kg

Number Of Ingredients 10

1½ kg raw beetroot, trimmed, peeled and diced (wear gloves!)
3 onions, chopped
3 eating apples, peeled and grated
zest and juice 3 oranges
2 tbsp white or yellow mustard seeds
1 tbsp coriander seed
1 tbsp ground cloves
1 tbsp ground cinnamon
700ml red wine vinegar
700g golden granulated sugar

Steps:

  • In a preserving pan or your largest saucepan, mix together all the ingredients well. Bring to a gentle simmer, then cook for 1 hr, stirring occasionally, until the chutney is thick and the beetroot tender.
  • While the chutney is cooking, prepare your jars by running through a short hot wash in your dishwasher. Or wash thoroughly by hand, then put in a hot oven to sterilise for 10-15 mins. Once the chutney is ready, let it settle for 10 mins, then carefully spoon into the jars and seal while still hot. You can eat it straight away but it will be even better after a month. Will keep for up to 6 months in a cool dark place. Once opened, refrigerate and eat within 2 months.

CRANBERRY & ORANGE GINGER MANGO CHUTNEY

CRANBERRY & ORANGE GINGER MANGO CHUTNEY image

Categories     Condiment/Spread     Fish

Number Of Ingredients 8

1 12-ounce bag fresh cranberries
1/2 of a peeled orange, diced (about 1/3 c)
3/4 c mango, diced (I used TJ's frozen mango chunks. You could use another fruit, i.e peaches, nectarines, apricots, plums, etc. in place of the mango)
1 1/4 c water
1 c white sugar
1/4 c brown sugar, packed
1 tsp ground ginger, or more/less to taste (I used 2 tsp but I like lots of ginger and that provided a very nice kick)
1/2 tsp cinnamon, or more/less to taste (I used 1 tsp but I like cinnamon)

Steps:

  • Directions: Combine all items in a sautee pan on the stovetop and bring to a rapid boil and then turn down the heat and let it simmer until desired thickness is reached. For me this was about 20 minutes but will vary on how thick you want the chutney and the rate/heat of your simmering on your stovetop. I could see this being "done" for some people at about 10-12 minutes and for others, 30 minutes. Yields: approximately 24 ounces of chutney (3 small glass jars). Will keep in jars in the refrigerator for week(s) so you can make a large batch at once. Use common sense but it will keep for quite a long time. Optional: If you want heat and a kick, you could add a pinch of cayenne, red pepper flakes, or chili powder. The TJ's ginger mango chutney has a bit of heat from the red peppers and the heat plays off the sweet from the fruit and it's a wonderful combination. Other warm spices include nutmeg, cardamom, garam masala, or even curry if you like it. If you want to turn this into more of a sweet jam/preserves, add vanilla extract. If you have lemon, orange, or other specialty extracts, they could work well, too. Add additional fruit (I'd start with about 1/2 cup) or substitute any fresh or dried fruit such as raisins, dates, currants, craisins, apricots (fresh of dried), peaches, pears, plums, nectarines, etc. You could use alternate sweetening methods such as using stevia, maple syrup, agave, or alter the sugar proportions to taste. Note the Ocean Spray Cranberry Sauce recipe starts with 1 c water to 1 c sugar. If you are tweaking the spices and flavors, my suggestion would be to take half the batch and pour it into a jar(s). For the other half, make the tweaks and optional add-in's so that you have some diversity (and also if you didn't like the tweak you chose, half the batch is 'safe')

Yield Serves 6

Number Of Ingredients 25

Safflower oil or canola oil, for oiling the grill
1 russet potato, halved, for rubbing on the grill
One 3-pound boneless salmon fillet, skin on, scales removed (Note: One side of an averagesized salmon is about 3 pounds)
Juice of 1 orange
2 tablespoons olive oil
6 fresh basil leaves
3 or 4 sprigs fresh dill
Salt and freshly ground black pepper to taste
2 cups Fresh Tomato-Orange Chutney (recipe follows)
Fresh herb leaves, for garnish
Fresh Tomato-Orange Chutney
1/2 pint yellow pear tomatoes or cherry tomatoes, cut in half
1/2 pint red grape tomatoes or cherry tomatoes, cut in half
1/4 cup olive oil
2 tablespoons balsamic vinegar
2 large navel oranges
4 scallions, trimmed and minced
2 tablespoons peeled, grated fresh ginger
Grated zest and juice of 1 lemon
1 jalapeño, seeded and minced
1/2 teaspoon mustard seeds
1/2 teaspoon fennel seeds
1 teaspoon cracked mixed peppercorns
5 or 6 fresh basil leaves, cut into very thin strips (chiffonade)
Salt and freshly ground black pepper to taste

Steps:

  • Brush the grill grates lightly with the safflower oil. Prepare a very hot fire in a gas or charcoal grill. The fire should be bright red and flaming hot. Rub the grates with the cut side of the russet potato (the starch from the potato keeps the fish from sticking). (Note:You can use a stove top grill pan instead of an outdoor grill, if desired, although the flavor will not be quite the same.)
  • Place the salmon on a piece of heavy-duty aluminum foil, skin side down. Drizzle the orange juice over the flesh side of the salmon. Coat evenly with the olive oil, basil, dill, salt, and pepper. Lightly press the herb leaves into the flesh so they adhere.
  • Place the salmon flesh side down (skin side up) on the grill (reserve the foil) and cook 6 to 8 minutes.
  • Turn the salmon over and place it skin side down on the foil. Pour the remaining orange juice over the salmon. Put the salmon in the foil on the grates over the fire and cook uncovered 8 to 10 minutes longer, until the fish starts to flake but is still a little fleshy in the center. (Note:The fish will continue to cook as it rests.) Remove from the grill and let rest, loosely covered, for 3 to 4 minutes.
  • Remove the skin and discard. Transfer the fish to a platter or serve portions on individual plates. Serve immediately, topped with chutney and fresh herb leaves.
  • Fresh Tomato-Orange Chutney
  • Preheat the oven to 400 degrees.
  • Toss the yellow pear tomatoes and red grape tomatoes with 2 tablespoons of the olive oil and the vinegar to coat evenly. Spread in a single layer on a baking pan and place in the oven to roast about 30minutes. Remove from the oven and set aside.
  • Grate the zest from the oranges and place the zest in a bowl. Trim the peel and the white pith from the oranges and discard. Cut the oranges into sections and add them to the bowl with the zest.
  • Add the tomatoes, scallions, ginger, and the remaining olive oil, the lemon zest, lemon juice, jalapeño, mustard seeds, fennel seeds, peppercorns, basil, salt, and pepper in a bowl and stir to mix thoroughly. Refrigerate in an airtight container until ready to use or up to 3 days.

  • This is best made 2 or 3 days ahead of time to allow all the flavours to mellow and round out.
