Found this in my local market and substituted the Orange Roughy with Tilapia. Excellent choice! I serve this with steamed asparagus over a bed of steamed spinach.

1 lb orange roughy fillet (or another mild fish like Tilapia)
4 tablespoons butter or 4 tablespoons margarine, softened
1 teaspoon dried basil or 1 tablespoon fresh basil
1/2 lemon, juice of
parmesan cheese

Steps:

  • Combine butter and basil in a small bowl.
  • Place fillets on a lightly greased broiler pan.
  • Spread fish with half of the basil butter mixture.
  • Broil 5- 8 inches from heat for 5 minutes.
  • Turn.
  • Spread with remaining basil butter.
  • Squeeze lemon juice over fillets.
  • Top with sprinkle of Parmasean cheese.
  • Broil another 4- 5 minutes or until fish is close to the point of flakiness.

1/4 cup butter, melted
1 tablespoon orange juice
2 teaspoons finely chopped fresh basil
2 teaspoons freshly grated orange rind
1 1/2 teaspoons garlic pepper seasoning
1 1/2 lbs fresh salmon, cut into 4 pieces
1/4 cup sliced almonds, toasted

Steps:

  • Heat gas grill on medium-high or charcoal grill until coals are ash white.
  • Combine butter, orange juice, basil and orange peel in small bowl; reserve 2 tablespoons butter mixture. Brush remaining butter mixture onto fish; sprinkle with garlic pepper.
  • Place fish onto grill. Grill, turning once, until fish reaches at least 145* or edges flake easily with fork (10 to 12 minutes).
  • To serve, drizzle fish with reserved butter mixture. Sprinkle with almonds and basil leaves if desired.

1/4 lb butter, softened
2 oranges
2 tsp orange, zest
1 Tbsp white wine
1 Tbsp sweet basil, fresh
1 tsp red bell pepper

Steps:

  • 1. Take butter out to softened and place in a bowl. Zest Oranges, minced the Zest and juice the oranges about 1/2 C juice.
  • 2. In small saucepan, add the orange juice, and white wine (optional, I like to use Zifandel). Cook over medium heat, stirring frequently, and reduce until juice mixture becomes a syrup (about 2 - 3 T). Remove from heat and cool for a few minutes.
  • 3. In the bowl of butter, add Basil, red bell pepper, orange zest, and orange syrup. Mix ingredients well, until butter has incorporated all ingredients.
  • 4. Place butter onto piece of wax paper (plastic wrap) in log shape form and roll the butter up. Place wrap butter in plastic ziploc or container for extra protection. Place butter in freezer until ready to use. Remove the butter from freezer prior to use to make cutting easier.
  • 5. COOK'S TIP: The butter can be formed into a variety of shapes and sizes for ease of use or for decorative slicing. Enjoy! :)

2 tablespoons olive oil
3/4 cup orange juice
2 tablespoons orange juice
1/4 cup chopped fresh basil
4 swordfish steaks
1/4 teaspoon salt
8 tablespoons butter
1 orange, zested

Steps:

  • Combine oil, ¾ cup orange juice, pepper and ¼ of the basil. Brush each side of fish with the mixture. Place on a plate, cover with plastic wrap and refrigerate for 1 hour.
  • Preheat broiler. Season fish with salt.
  • Broil 3-4 inches from heat, turning once, 8-10 minutes.
  • In a small bowl, beat butter until soft. Add remaining basil, orange zest and 2 tablespoons orange juice. Beat to just combine. Serve hot fish with cold butter.
