BAKED ORANGE-GLAZED CHICKEN
One of my favorite recipes! The combination of paprika and mustard powder really offsets the sweetness of the orange juice. I tend to eyeball when cooking, so if you cook more breasts or use a large pan, make extra sauce to baste with. I'll frequently use extra glaze when baking just so there's plenty to pour over rice once it's done!

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk orange juice, vegetable oil, orange zest, paprika, mustard, and salt in a bowl. Arrange chicken breast halves in a baking dish; pour orange juice mixture over chicken.
- Bake chicken breasts until no longer pink in the center and juices run clear, 30 to 45 minutes, basting with orange glaze every 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Preheat the oven to 375 degrees F. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add the onions and cook, stirring, until just beginning to brown and soft, about 5 minutes.
- Add the onions, chicken broth, rice, 1/4 cup of the orange juice, 2 teaspoons of the orange zest, 1 tablespoon of oil and 3/4 teaspoon salt to a 2-quart baking dish and stir to combine.
- Toss the chicken with the remaining 1 tablespoon oil, 1/4 teaspoon salt and 1/4 teaspoon pepper in a medium bowl. Nestle the chicken into the rice mixture. Cover the dish with foil and transfer it to the oven, being careful not to spill.
- Bake for 55 minutes. Remove the foil and drizzle the chicken with 2 tablespoons of the orange juice. Continue to bake until most of the liquid has been absorbed, the chicken is fully cooked and the rice is tender, about 50 minutes more.
- Drizzle the chicken with the remaining orange juice. Sprinkle the mint, pine nuts and desired amount of remaining orange zest over the dish and serve.

- Heat oven to 425°F. Cook rice as directed on package, omitting butter. Stir in almonds and butter.

- Toast the chile peppers in a saucepan over medium-high heat, pressing them flat with a metal spatula and turning occasionally, for 2 to 3 minutes. Add the stock and bring to a boil. Reduce the heat to a simmer and cook until the chiles are tender, 15 to 20 minutes. Puree the chiles and stock in a food processor, then return the mixture to the pan. Add the ketchup, 2 tablespoons vinegar, brown sugar, Worcestershire sauce, maple syrup, tequila and 2 garlic cloves. Grate enough zest from the limes and orange to make 1 tablespoon each; add to the pan along with the juice of 1 lime and the orange. Reduce the heat to a low boil and cook for 20 minutes. Add the chicken and stir to coat with the sauce. Meanwhile, heat 1 tablespoon EVOO in a skillet over medium-high heat. Add the bacon and cook until browned. Add the chopped onions and the remaining 2 garlic cloves and cook until soft, 3 to 4 minutes. Stir in the beans and cook until heated through. Stir in the steak sauce and pepper. Combine the juice of the remaining 2 limes and the remaining 1/4 cup vinegar in a large bowl. Grate the remaining onion half into the bowl and whisk in the remaining 1/3 cup EVOO. Add the cabbage and toss to combine. Season with salt and pepper. Drain the slaw before using. Char the tortillas for 30 seconds on each side. Place some of the chicken mixture on the edge of each tortilla, top with Cheddar, beans and slaw, then tuck in the sides of the tortilla and roll up tightly. Cook's Note: The chicken can be refrigerated in the BBQ sauce for a make-ahead meal. Reheat over medium heat, stirring. The beans and the slaw can be refrigerated separately until ready to use.
- Put the chicken in a very large stockpot or divide between 2 pots if necessary. Add the peppercorns, garlic, bay leaves, carrots, celery, lemons, onions and herb bundle and sprinkle with salt. Add enough water to cover the chicken. Bring to a boil, then reduce the heat to low and cook at a rolling simmer for 1 1/2 hours. Remove the chicken from the liquid and let cool. Strain the stock. (You should have 5 to 6 quarts stock.) Remove the skin and bones from the chicken, and shred the meat using your hands or 2 forks.
BAKED CHICKEN L'ORANGE
This a delicious and UNFRIED "healthified" verison of traditional Chicken L'Orange Recipe. I came up with this in my hopes to loose weight this year but not give up any of my favorite foods. It is absolutely DELICIOUS! Serve this with a side whole grain rice with a tbsp. of LITE butter, and a teaspoon of cilantro, It's a simple and easy side dish, Also, steamed carrots would be good as well! - Place Your chicken breasts in a large gallon bag.
- Put your juice, thinly sliced oranges, salt, and pepper in with the chicken, seal the bag, give it a shake so everything is coated.
- Let it sit in your Fridge overnight.
- The next day, about 45 minuites before dinner time, preheat your oven to 350 degrees.
- Take the chicken out of the fridge and lay them in a shallow baking dish (don't shake off any of the liquid).
- Sprinkle your slivered almonds over the dish, and throw it in your oven, Covered with tin foil, for 25 min's, remove the foil and bake it uncovered for 20 more minuites, or until it reaches 165 degrees or higher on an instant read thermometer. (it might be ready after the 25 min's depending on the thickness of the breast, and your oven's temperment, temp it after the first 25 to make sure).

- 1.Whisk the Orange Marinade/Glaze ingredients together in a medium bowl. Add 1/3 cup to a large freezer bag with 1 tablespoon olive oil. Add the chicken and marinate 60 minutes up to overnight in the refrigerator. Refrigerate reserved Glaze separately. 2.Melt 1/2 tablespoon butter in a large skillet over medium-high heat. Stir in panko and continue to cook and stir until browned. Remove from heat.** 3.Preheat oven to 425 degrees F. Line a baking sheet with foil then top with a wire baking rack. Spray rack with nonstick cooking spray. Set aside. 4.Line up your breading station: Add flour to a large freezer bag. Whisk milk and eggs together in a bowl or shallow dish. Mix panko, ground cornflakes, 1/2 teaspoon salt, 1/8 teaspoon pepper and 1/2 teaspoon garlic powder in a large bowl. 5.Remove chicken from marinade and pat dry with paper towels. - Mix the O.J., water, egg, and soy sauce in a bowl large enough to hold the cut up chicken and marinate. Marinate the cut up pieces (Covered In Refrigerator)over night or longer if time allows. Rotate the pieces daily 2-3 times. Be sure each piece is fully covered while marinating. Add more water if needed.
- When ready to bake: In a gallon size zip-lock bag, add the corn flakes. With out zipping up as fully closed, use a rolling pin to crush the flakes evenly.
- Individually, coat each piece with the crushed corn flakes and place on a greased cookie sheet or cake pan.
- Preheat oven at 375 degrees and bake covered with foil/lid for 15-20 minutes. Remove cover, turn each piece and bake for an additional 20-30 minutes.

Orange Chicken - quick, easy and baked, not fried; this Chinese style take out dish uses frozen orange juice concentrate as the base of the tangy sauce.

- Heat a cookie sheet in the oven at 425 degrees F. This speeds up the cooking time later.
- Cut the chicken into about 2-bite pieces and season them lightly with salt and pepper
- Sift together the flour, salt, pepper, powdered ginger and five spice powder.
- Whisk together the egg and water to make an egg wash.
- Dredge the chicken pieces into the flour dredge to coat them, then dip the pieces into the egg wash and back into the flour and spice dredge again.
- Working quickly, retrieve the cookie sheet from the oven and lightly brush the entire bottom with the oil. Add the coated chicken pieces to the pan but don't crowd them together. They should not be touching. Lightly drizzle a little more oil over the chicken pieces. A spray bottle works well for this too.
- Pop the chicken into the oven for 8 minutes. Take the pan out and turn the chicken pieces over before putting them back into the oven for another 7-8 minutes. Cut one open to see that they are fully cooked. This should be plenty of time at that temperature.
- Toss the cooked chicken pieces wight he sauce and serve over steamed rice or Chinese noodles.
- Garnish with toasted sesame seeds and chopped green onions if you like.
- In a small saucepan over medium heat, quickly sauté the garlic in the peanut oil for only a minute or so.
- Add all of the remaining ingredients to the pot, except the cornstarch and water.
- Bring the sauce to a slow simmer for 5 minutes.
- Stir the cornstarch into the water and immediately add it to the sauce stirring constantly. Simmer for only another minute, stirring constantly before serving.
BAKED SOUR-ORANGE YUCATAN CHICKEN

- In a food processor, mince the garlic with the vegetable oil. Add the orange and lemon juices, chili powder, paprika, salt and cumin and blend well. Cover the chicken with the marinade and let sit in fridge for a few hours. Preheat the oven to 350°. Cook chicken for 30 minutes. Turn over the chicken, remove about 1/4 cup of the sauce, stir the honey into this sauce, then pour back over chicken. Cook for another 10-15 minutes.

- Thinly pare the rind from 1 orange, and cut the rind into thin strips.
- Grate the rind from the other orange, and squeeze the juice from both.
- Heat the oil in a frying pan, add the chicken pieces and brown on both sides.
- Remove from the pan and keep warm.
- Add the onion to the fat remaining in the pan and gently fry for 5 minutes.
- Drain off any fat, then add the Worcestershire sauce, water, tomato paste, orange rind (strips and grated) and juice. Bring to the boil and season lightly with salt and pepper.
- Line a shallow ovenproof dish or roasting pan with foil, leaving enough on either side to over lap in the middle. Place the chicken on the foil, spoon over the orange sauce, then cover wit h the foil, securing the edges by folding together.
- Bake at 180 C for 1 hour.
- To serve, spoon the juices over the chicken.
BAKED CHICKEN WITH ORANGE JUICE

- Position a rack in the center of the oven. Preheat the oven to 375 F. Rinse and pat dry chicken. Smear the skin with Dijon mustard. Arrange the chicken skin side down in a shallow roasting pan or baking dish just large enough to hold it in a single layer. Sprinkle the pieces with onions, butter, salt and pepper. Pour orange juice around the chicken. Bake, basting once, for 30 minutes. Turn the chicken skin side up and sprinkle with brown sugar.
