Apricot Waffles image

A quick recipe that makes any breakfast special. Also nice as an evening snack or dessert (with a scoop of vanilla ice cream). Traditionally served with a sprinkling of powdered-sugar, brown sugar or whipped cream. Preparation time includes soaking time for the apricots.

Number Of Ingredients 7

40 g dried apricots
75 g butter, at room temperature
2 eggs
2 tablespoons sugar
100 g flour
1 teaspoon baking powder
100 ml heavy cream

Steps:

  • Soak the dried apricots in warm water for 15 minutes, then drain and pat dry.
  • Cut in small pieces.
  • Beat or whisk the butter, sugar and eggs together.
  • Sift the flour and the baking powder together.
  • Add the flour,the cream and the apricot pieces to the butter mixture.
  • Stir till everything is well incorporated.
  • Bake in an oiled waffle iron according to manufacturer's directions.
  • Serve warm!

This comes from the Red Lion B&B website. These can be made OAMC. Just make the waffles then flash freeze them (individually) before putting them in ziplock bags. Label and date. To reheat, put in the toaster or microwave.

2 cups flour
3 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
4 eggs
1/2 cup milk
1/2 cup pulp free orange juice
4 tablespoons melted butter
3 tablespoons grated orange zest

Steps:

  • In large bowl sift together flour, baking powder, sugar and salt.
  • In separate bowl combine eggs, milk, orange juice and butter; beat well. Add orange zest to egg mixture ; pour this into flour mixture beating well until mixture is smooth.
  • Ladle onto hot, well-oiled waffle iron and cook until waffles are golden. Serve hot with butter, jam and syrup.

Steps:

  • In 1-quart saucepan, heat all syrup ingredients just until hot. Keep warm while making waffles.
  • Heat waffle iron. (Waffle irons without a nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray.) In large bowl, stir all waffle ingredients with wire whisk or fork until blended.
  • For each waffle, pour batter onto center of hot waffle iron. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle iron. Bake 3 to 5 minutes or until steaming stops. Carefully remove waffle. Serve waffles with syrup.

My parents have an apricot tree, so I've eaten fresh apricots all my life. I'm used to eating them fresh only, but I recently purchased some apricots that ripened very quickly. I wanted to make a jam or syrup out of them and couldn't find what I wanted, so I made something up. The result is a very sweet, thick syrup. Leave out the amaretto if you don't use it in cooking.

¾ pound very ripe fresh apricots, pitted and halved
½ cup white sugar
½ teaspoon vanilla extract
½ cup orange juice
1 tablespoon amaretto liqueur
1 tablespoon water, if needed
½ teaspoon cornstarch
¼ cup water

Steps:

  • Mix together the apricots, sugar, vanilla extract, orange juice, and amaretto liqueur in a saucepan over medium heat, stirring until the sugar has dissolved. Bring to a boil, and cook, stirring constantly, until the apricots are soft and have started to release their juice, about 5 minutes. Reduce heat to low, and simmer until the apricots have broken down, about 1 1/2 hour. If mixture is too thick or begins to burn, stir in 1 tablespoon of water and mix well.
  • Stir cornstarch into 1/4 cup water, and pour into the apricot mixture. Bring to a boil, and simmer until the mixture forms a thick syrup, about 30 more minutes.

1/4 cup brown sugar packed
1 cup orange juice concentrate
4 teaspoons cornstarch
1/2 cup apricot preserves
2 cups flour
2 tablespoons sugar
4 teaspoons baking powder
1/4 teaspoon salt
2 eggs separated
1 2/3 cups milk
1/3 cup vegetable shortening solid, melted
1 tablespoon orange rind grated (optional)

Steps:

  • In a small saucepan over medium-high heat, melt butter or margarine with brown sugar. In a small bowl, mix orange juice and cornstarch until smooth. Add to brown sugar mixture. Stirring, bring to a boil and boil for 1 minute. Stir in preserves and heat through. Set sauce aside and keep warm.In a large bowl, mix flour, sugar, baking powder and salt set aside.In a small bowl, beat egg yolks and milk until well blended. Beat in shortening and rind.In a small mixer bowl at high speed, beat egg whites until soft peaks form. Stir milk mixture into flour mixture until flour is moistened. Fold in egg whites.Spoon onto a preheated greased waffle iron and bake for 5 to 7 minutes or until golden brown and crisp. Keep hot in a warm oven. Serve with sauce.
