ORANGE ICE TEA

1 cup orange juice
1/2 cup sugar
2 cups water
7 black tea bags (recommended: Red Rose)
3 cups sparkling water, chilled
1/2 small orange, thinly sliced
Ice
Fresh mint or basil sprigs, to garnish

Steps:

  • Special equipment: a 60-ounce (7 1/2 cups) pitcher
  • For the syrup: In a small saucepan, bring the orange juice and sugar to a boil over medium-high heat. Simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove from the heat and cool for 20 minutes.
  • For the tea: In a small saucepan, bring the water to a boil. Add the tea bags and remove the pan from the heat. Allow the tea to steep and cool to room temperature, about 20 minutes. Remove the tea bags and discard. Pour the tea and syrup into a pitcher and refrigerate until ready to serve.
  • To serve: Pour the sparkling water into the pitcher and add the orange slices. Pour the tea into 4 ice-filled glasses. Garnish with fresh mint, or basil, and serve.

4 teaspoons loose-orange-and-spice-flavored black tea or 4 tea bags
1 cinnamon stick
4 whole cloves
1 1/2 cups water
ice cube
3/4 cup apple juice
orange slice, for garnish

Steps:

  • Place the tea, cinnamon stick, and cloves in a teapot. Bring the water to a boil, pour the water into the teapot, and let the tea brew for 3 to 5 minutes, depending on your taste. Chill the tea and pour 5 ounces of the tea over ice in 2 tall glasses. Pour 6 tablespoons of the apple juice into each glass and garnish with slices of orange.

14-1/2 cups water, divided
10 tea bags
1-1/2 cups sugar
2/3 cup lemon juice
1/4 cup thawed orange juice concentrate
Ice cubes

Steps:

  • In a large saucepan, bring 4 cups of water just to a boil. Remove from the heat. Add tea bags; let stand for 10 minutes. Discard tea bags. , Pour tea into a large container. Stir in the sugar, lemon juice, orange juice concentrate and remaining water. Refrigerate until chilled. Serve over ice.

3 cups boiling water
4 cinnamon-flavor tea bags
3 tablespoons sugar (or to taste)
1 (6 ounce) can frozen apple juice concentrate, undiluted
2 cups cold water
cinnamon stick

Steps:

  • Pour a heat-proof bowl or use a saucepan pour 3 cups boiling water over the tea bags; cover and steep for about 5 minutes.
  • Remove tea bags and discard.
  • Stir in sugar, juice concentrate and 2 cups cold water; stir well.
  • Serve over ice.
  • Garnish with a cinnamon in each glass.

This is a recipe I found in my cookbook called Favorite Brand Name Classic Recipe Collection. It's really easy to make and the oranges offer a really refreshing citrus boost to the iced tea. I didn't include chilling time in the preparation time.

2 oranges
4 cups boiling water
5 tea bags
ice cube
honey or brown sugar, to sweeten

Steps:

  • With a vegetable peeler, peel each orange in a continuous spiral, removing only the outer colored layer of peel.
  • In a large pitcher, pour boiling water over the tea bags and orange peel. Cover and steep 5 minutes. Remove tea bags. Chill tea mixture with peel in a covered container.
  • To serve, remove the peel and pour iced tea over ice cubes in tall glasses.
  • Sweeten to taste with honey (or brown sugar). Garnish with orange slices and fresh mint leaves, if desired.
