Number Of Ingredients 10

1/3 cup butter, cubed
1 small onion, chopped
1/3 cup all-purpose flour
2 teaspoons minced fresh parsley
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1/8 teaspoon dried thyme
3 cups reduced-sodium chicken broth
1-1/4 pounds sliced deli turkey
12 slices white bread

Steps:

  • In a large cast-iron or other heavy skillet, heat butter over medium heat. Add onion; cook and stir until tender, 4-5 minutes. Stir in flour, parsley and seasonings until blended; gradually whisk in broth. Bring to a boil, stirring constantly; cook and stir until slightly thickened, 1-2 minutes., Add turkey, 1 slice at a time; heat through. Serve over bread.

Number Of Ingredients 13

2 tablespoons butter
1/2 cup finely chopped onion
1/4 cup finely chopped celery
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup evaporated milk
4 ounces cream cheese, cubed
1 cup frozen peas
2 cups chopped cooked turkey (about 10 ounces)
1/2 teaspoon salt
1/4 teaspoon pepper
4 slices Texas toast or other thick-sliced bread, toasted
Chopped tomato and minced fresh parsley, optional

Steps:

  • In a large saucepan, heat butter over medium-high heat; saute onion and celery until tender, 4-6 minutes. Stir in flour until blended; cook and stir until golden brown. Gradually stir in stock and milk. Bring to a boil, stirring constantly; cook and stir until thickened, 4-6 minutes., Add cream cheese, peas, turkey, salt and pepper; cook and stir until blended and heated through. Serve over toast. If desired, top with tomato and parsley.

This satisfying sandwich can be made with remnants of our Roast Turkey Breast and Gravy or with any turkey and gravy leftovers.

Yield Makes 4 sandwiches

Number Of Ingredients 10

1 tablespoon unsalted butter
1 shallot, finely chopped
1 teaspoon fresh thyme, leaves
1 pound mixed domestic and wild mushrooms, such as shiitake, oyster, or cremini, trimmed and quartered
Salt and freshly ground pepper
1/2 cup Madeira wine
1 1/2 cups gravy
4 thick-cut slices white sandwich bread, such as pain de mie (Pullman)
3 pounds Roast Turkey Breast and Gravy, (1/2 recipe)
1 small bunch watercress

Steps:

  • Preheat oven to 400 degrees. Melt butter in a large skillet over medium heat. Add shallot and thyme; cook until translucent, about 2 minutes. Add mushrooms; saute until they release liquid and are soft, 3 to 5 minutes. Season with a pinch of salt and pepper. Add Madeira, raise heat to high, and saute until liquid is cooked away, 3 to 5 minutes. Add gravy; cook until thick enough to coat the back of a spoon.
  • Meanwhile, slice turkey into about 1/4-inch-thick slices, and add to the gravy. Heat until turkey is hot, about 1 minute. Toast bread under the broiler on both sides until golden but still soft.
  • Place toast on serving plates, spoon 1 or 2 tablespoons gravy over toast, and scatter watercress on top. Arrange turkey over toast, and spoon mushrooms and gravy over meat. Serve warm.

Stuffing Waffle Open-Faced Leftover Turkey Sandwich (aka the greatest leftover Thanksgiving sandwich in the world of all time) image

Number Of Ingredients 10

1 to 3 cups chicken stock
4 cups leftover stuffing
Vegetable oil or nonstick cooking spray
Leftover gravy
Leftover turkey slices
Leftover cranberry sauce
6 slices bacon lardons, crisped up in a pan
Fresh sage, chiffonade and fried in oil until crispy
1 egg, cooked sunny-side up
Sea salt and cracked black pepper

Steps:

  • Preheat a waffle iron. I use a mini, round waffle maker, that works best for stacking.
  • In a large mixing bowl, add 1/2 cup of the stock to the stuffing at a time until the mixture is wet but not liquid; it should have the consistency of meatball mix and should be able to be rolled into a ball.
  • Lightly oil or spray a waffle iron and, depending on shape/size of mold, place a nice-size disc of wet stuffing onto the hot waffle iron. Cook until golden brown and crispy, 5 to 6 minutes. Remove and repeat if leftover stuffing mix remains.
  • Heat the gravy in a small saucepot. Take off the heat and place slices of the cold turkey in the hot gravy to reheat and rehydrate.
  • Make a tower with a layer of the stuffing waffle schmeared with cranberry sauce. Top with a couple slices of warm gravy-kissed turkey, then a nice sprinkling of crispy bacon. Top with a single sunny-side up egg and garnish with the crispy sage, sea salt and cracked black pepper.

Open-Faced Turkey/Gravy With Mushrooms Sandwich image

This is a wonderfully filling and healhier sandwich whether made with leftover Thanksgiving turkey and gravy or sliced deli turkey.

sliced turkey breast
whole wheat deli rolls
2 10.5 ounce cans turkey gravy or leftover homemade gravy
1 small can sliced mushrooms (or fresh)
provolone cheese slices
1 Tbsp finely chopped celery
1/4 c finely chopped onion
1 Tbsp worcestershire sauce
1 tsp italian seasoning
a couple of splashes of lemon juice
1 Tbsp extra virgin olive oil
black pepper, to your taste
2 cloves minced garlic

Steps:

  • 1. Heat EVOO in sautè pan and add onion and celery. Sautè until tender, add garlic and sautè another minute or so until garlic is tender, being careful not to burn garlic or it will become bitter. While cooking onion mixture, heat gravy in a saucepan. Add onion mixture when done, add mushrooms, Worcestershire, Italian seasoning, a couple of splashes of lemon juice, black pepper, heat slowly. In the same sautè pan, slowly warm turkey breast. Slice open deli rolls on serving plate, add turkey, place Provolone cheese atop sliced turkey and pour gravy mixture over all. (We like to then warm ours in the microwave about 45 seconds to melt the cheese and soften the rolls.) It's also great with some leftover cranberry sauce on top. NOTE: We also like this sandwich made with roast beef and brown gravy. Either kind of sandwich is great with toasted ravioli, fries, chips or whatever you choose.

  • Place a slice of bread on a plate. Top with turkey, mashed potatoes, and gravy. Serve immediately.
