BACON CHEESE & TOMATO - BROILED OPEN FACE SANDWICH
One of my favorites. I have two rules for this sandwich. Always use Pepperidge Farm Original White Bread and make two per person as one is never enough.

Steps:
- Pre-heat broiler.
- Place bread on a broiler safe pan. Top each slice of bread with a slice of cheese then a slice of tomato. Depending on how big your tomato slice is you may want to put on two but keep it a single layer of tomato. Cut each slice of bacon into 2 pieces. Then lay 3 of the pieces on each sandwich. Broil until bacon is crisp and cheese melted. Bread and cheese may get a little burnt. That makes it better!
- Note: Originally I put raw bacon on the sandwich and cooked it all the way under the broiler. Now I cut the strips in half and partiality cook in micro-wave and then put on sandwich and broil to finish cooking.

In the early 40's. During the War years my mom and dad worked in war plants, long hours. I being the oldest daughter,(not yet in my teens then,) had to make dinner, for my younger siblings. This was one of our favorite foods...besides, hot dogs with catsup, and always cold cereal! I have heard that now a days people add a slice...

- 1. Put toast on a broiler rack. Add cheese. cut bacon in half,or 3rds and arrange on top of cheese, side by side. Broil till bacon is almost done, and the cheese starts to melt.
- 2. This is for one person... Depending on the size of your broiler...you could make up to six at a time. Watch closely so's not to burn.
- 3. Those are not real ants, on my tablecloth! I had made these cloths for a picnic I had at home..Cute? eh? The kids loved them.

- 1. Pre heat Broiler. Place bread on broiler pan or heavy cookie sheet and place under broiler to toast lightly. Place 2 slices of tomato on each halve of bread. Salt & pepper; place back under broiler so that the tomato just begin to warm, about 1 to 2 minutes.
- 2. Lay slices of bacon & pepperoni on top of the tomato.
- 3. Now, cover the top with slices of cheese. Sprinkle with Italian seasoning.
- 4. Return to broiler and cook until the cheese melts and just starts to bubble, watch closely so that it doesn't burn, another 1 to 2 minutes. Serve immediately.

- Preheat oven to broil.
- In a shallow bowl, whisk together the olive oil and vinegar. Marinate the tomatoes in the mixture, stirring occasionally.
- Meanwhile, in a small bowl, combine mayonnaise, parsley, oregano, black pepper and 4 teaspoons Parmesan cheese. Spread mixture on each slice of toasted bread. Place marinated tomatoes on 2 slices and sprinkle with remaining Parmesan cheese.
- Place on a baking sheet and broil for 5 minutes, or until cheese turns golden brown. Serve immediately, open faced or closed.
