CHICKEN PARMESAN BURGERS
Perfectly seasoned & juicy chicken parmesan burgers are topped with a zesty sauce, lots of cheese and fresh herbs.

Steps:
- Cook onion and garlic in 1 tablespoon of olive oil over medium heat until softened. Cool completely.
- Mix all patty ingredients in a medium bowl. Form into four ½" thick patties.
- Heat remaining olive oil in an oven-proof skillet over medium heat and add patties. Cook 4-6 minutes per side or until they reach 165°F. (see notes for other cooking methods)
- Meanwhile, heat marinara sauce on the stovetop or in the microwave.
- Turn the broiler on to high.
- Spoon about 1 tablespoon marinara sauce over each patty. Top each with mozzarella cheese and parmesan cheese. Broil 1-2 minutes or until cheese melts.
- Spread garlic butter on the buns and broil 1-2 minutes or until lightly toasted.
- Place a chicken patty on each bun with tomato slices if using. Top with basil if desired and serve with remaining marinara sauce.

- In bowl combine ground chicken, half of the pesto, the Parmesan, garlic, and salt. Shape into four 1/2-inch-thick oval patties (to fit bread). Halve ciabatta horizontally. Brush cut side of ciabatta or both sides of Italian bread with olive oil; set aside (reserving any extra oil). For a charcoal grill, place patties on greased rack directly over medium coals. Grill, uncovered, 10 to 13 minutes or until chicken is no longer pink (165 degrees), turning once halfway through grilling. Top each patty with a mozzarella slice. Cover grill; grill 1 to 2 minutes more or until cheese is melted. Add bread and grill for 1 to 2 minutes per side or until toasted. (For gas grill, preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover; grill as above.) Arrange greens on toasted bread. Top with chicken patties and tomato slices. Stir any remaining olive oil into remaining pesto and drizzle over all. Sprinkle with coarsely ground black pepper. Makes 4 servings.

- Brush grill with oil; prepare barbecue (medium heat). Mix mayonnaise, 1 cup chopped basil, cornichons, brine, and onions in small bowl. Season basil mayonnaise with salt and pepper.
- Mix chicken and 1/2 cup basil mayonnaise in large bowl. Using wet hands, shape chicken mixture into four 1/2-inch-thick patties. Sprinkle with salt and pepper. Brush bread with oil.
- Grill bread until crisp and golden, about 1 minute per side. Transfer bread to plates. Grill burgers until firm to touch and cooked through, about 5 minutes per side.
- Spread bread slices thickly with basil mayonnaise. Top each bread slice with tomato, 2 basil leaves, burger, and dollop of basil mayonnaise. Garnish with remaining chopped basil.

- Stir bread crumbs, salt, and parmesan together in a bowl.
- In a large bowl, mix together chicken, salt, pepper, oregano, basil, parsley, minced garlic, and parmesan cheese.
- Grab a handful of the chicken mixture and pat it out flat in your palm.
- Place a slice of mozzarella cheese in the middle and fold the chicken over the edges. Make sure the cheese is fully covered on both sides by the chicken mixture.
- Cover the patty with the bread crumb mixture on both sides.
- Cook patty in a pan over medium-high heat for 4 minutes on each side.
- Place on a bun and garnish with marinara sauce and fresh basil.

Top with sliced mozzarella cheese; cook, covered, until cheese is melted, 1-2 minutes., Serve in buns; top with remaining 1/2 cup marinara sauce, Parmesan cheese and, if desired, basil leaves.
