1 cooking spray
1 onion
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
2 ½ pounds ground beef
1 (15 ounce) can tomato sauce
12 crushed saltine crackers
¼ cup brown sugar
1 egg, beaten
2 tablespoons Worcestershire sauce
2 tablespoons chicken stock
2 tablespoons olive oil
1 tablespoon Montreal steak seasoning
1 clove garlic, minced
ground black pepper to taste
¼ cup ketchup, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x11-inch baking dish with cooking spray.
  • Cut 3/4 each of onion, green bell pepper, red bell pepper, and yellow bell pepper into thin slices. Dice remaining 1/4 of onion and peppers.
  • Mix ground beef, diced onion and peppers, tomato sauce, crushed crackers, brown sugar, egg, Worcestershire sauce, chicken stock, olive oil, steak seasoning, garlic, and pepper together in a bowl until well-combined.
  • Spread 1/2 of the beef mixture into the bottom of the prepared baking dish. Top meat with sliced onion and peppers, leaving a 1-inch border. Spread remaining beef mixture over vegetables, tucking in sides to seal vegetables in the center of the meatloaf. Pour ketchup over the top of the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

For the onions:
1 Tablespoon olive oil
3 onions, halved and thinly sliced
½ Tablespoon fresh thyme or ½ teaspoon dried thyme
1 teaspoon kosher salt
½ teaspoon pepper
¼ cup beef broth
¼ cup red wine (I used Gallo Family Cabernet Sauvignon, but Pinot Noir or Merlot would also work nicely)
For the meatloaf:
2 lbs lean ground beef
½ cup bread crumbs or instant or slightly ground oats (gluten free, if needed)
2 Tablespoons minced fresh parsley
1 teaspoon pepper
1 teaspoon kosher salt
2 eggs, lightly beaten
8 oz mozzarella cheese, shredded, divided
Fresh chopped parsley for garnish, optional
For the sauce:
2½ cups beef broth
½ cup red wine (I used Gallo Family Cabernet Sauvignon, but Pinot Noir or Merlot would also be good)
3 Tablespoons cornstarch
salt & pepper, to taste

Steps:

  • For the onions: 1.Heat oil in a skillet over medium, add onions, salt & pepper, cook 15-20 minutes, stirring frequently or until caramelized. 2.Add thyme, sauté for minute or two, then add the wine and beef broth. 3.Reduce until very little liquid remains. 4.Set aside. For the meatloaf: 1.Preheat oven to 350°F. 2.In a bowl, combine ground beef, bread crumbs or oats, parsley, pepper, salt, and eggs. Gently combine with your hands until blended, but try not to overwork the meat. 3.On a piece of plastic wrap or wax paper, press the meat mixture into a 10x12-inch rectangle. 4.Set aside ½ cup shredded mozzarella cheese and ½ cup og the caramelized onions. Sprinkle the remaining 1½ cups cheese and the caramelized onions evenly over ground beef. Roll up like a jelly roll, starting from the short end, lifting the wax paper or plastic wrap as you roll. Seal the end completely, and place seam-side down into a 9x13-inch baking pan. 5.Sauce - whisk together, bring to boil, simmer till thickened. 6.Place pan in the oven and bake for 45 minutes. While the meatloaf is baking, prepare the sauce (see below). 7.Remove pan from oven, pour the sauce over the meatloaf, and sprinkle with the reserved onions nd cheese. 8.Return meatloaf to oven 15-20 minutes, or until no pink remains. Place under the broiler for 2-3 minutes, or until the cheese is browned and bubbly. 9.Garnish with fresh parsley, if desired. Remove from oven and allow to stand 10 minutes. Slice and serve. For the sauce: 1.Whisk ingredients together in a small saucepan, and bring to a boil over medium heat. 2.Reduce to a simmer until reduced and thickened

1 1/2 lbs ground beef
1/2 lb ground pork
4 slices bread, soaked in warm water and drained
1 chopped onion
1 teaspoon salt
1/4 teaspoon pepper
2 eggs
3 chopped onions
1/4 cup butter
1 1/2 cups soft breadcrumbs
1 teaspoon sage
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons chopped parsley
1 egg, beaten
2 tablespoons water

Steps:

  • Make stuffing: Cook 3 chopped onions in butter until yellow; add soft bread crumbs, sage, salt, pepper, and parsley. Saute until slightly browned Remove from heat and add 1 egg beaten with 2 Tblsp. water.
  • Make meatloaf: Combine ground beef, ground pork, 4 slices bread which have been soaked in warm water and drained well. Add 1 chopped onion, salt, pepper and 2 eggs; mix thoroughly. Line bottom and sides of a greased loaf pan with meat mixture. Fill center of pan with onion stuffing. Cover top with remaining meat mixture. Spread with 2 Tblsp. of butter and cover with 1/2 cup chili sauce. Bake in 400* oven for 1 1/2 hours.
