2 tablespoons extra-virgin olive oil
5 cloves minced garlic
8 cups thinly sliced onions
Gray salt
1 tablespoon fresh thyme leaves, chopped
1/4 cup sherry vinegar
1 1/2 cups dark beer (recommended: Guinness)
6 cups beef stock
6 slices country bread cut 1/2-inch thick, toasted
1/2 pound Irish Cheddar, sliced thin

Steps:

  • Heat the olive oil in a large skillet over high heat. Add garlic and cook briefly to release aroma. Add onions, season with salt and cook for about 5 minutes stirring often. Reduce heat to low and cook for about 15 minutes, stirring occasionally until the onions are golden brown.
  • Add the thyme, vinegar, and beer. Reduce beer by half and add the beef stock. Bring to a simmer and cook for 10 more minutes.
  • Preheat the broiler. Transfer soup to an ovenproof serving dish or individual ovenproof soup bowls. Top with toasted bread slices and sliced Cheddar. Broil until cheese melts and starts to brown slightly. Serve piping hot.

This recipe is from the cookbook "Everyday Dining with Wine" by Andrea Immer. An all-American version of the traditional French onion soup, but with Granny Smith apples providing some tart flavor, and Cheddar cheese taking the place of traditional Gruyère. Enjoy!

2 tablespoons unsalted butter
3 medium onions, sliced thin
3 medium granny smith apples, peeled, cored, and cut into 1/4-inch slices
1/2 teaspoon salt
6 cups hearty chicken broth
1 3/4 cups hearty beef broth
1/4 cup dry red wine
1 bay leaf
fresh ground black pepper
6 ounces sharp cheddar cheese, grated
6 slices bacon, cooked crisp, crumbled
1 tablespoon finely chopped fresh sage
1 French baguette, cut on the bias into twelve 3/4-inch-thick slices

Steps:

  • Heat the butter in a large stockpot or Dutch oven over medium-high heat.
  • Add the onions, apples, and 1/2 teaspoon salt and stir thoroughly to coat the onions and apples in the butter.
  • Cook, stirring frequently, until the onions and apples are deeply caramelized, and the bottom of the pot is coated with a dark brown crust, about 30 minutes.
  • Stir in the chicken broth, beef broth, wine, and bay leaf.
  • Bring to a boil and scrape the bottom of the pot with a wooden spoon to loosen the brown crust.
  • Simmer for 20 minutes to blend flavors.
  • Discard the bay leaf and season with additional salt and freshly ground black pepper.
  • Adjust the oven rack to the upper-middle position and heat the broiler.
  • Combine the cheese and bacon in a bowl and stir to distribute evenly.
  • Place oven-proof soup crocks on a rimmed baking sheet.
  • Stir the chopped sage into the simmering broth.
  • Fill each crock almost to the top with soup.
  • Top each crock with 2 baguette slices and sprinkle with some of the cheese-bacon mixture.
  • Place the baking sheet in the oven and broil until the cheese is bubbling and well browned, 2 to 4 minutes.
  • Watch the soup carefully, because once the cheese is well browned it will quickly burn.
  • Serve immediately.

8 tablespoons (1/2 cup) unsalted butter
1/2 cup all-purpose flour
4 cups whole milk
4 cups 2% milk
4 large potatoes, baked and cubed small (peeled, if desired)
1 pounds bacon, cooked and crumbled (about 1.5 cups)
3 cups shredded cheddar cheese
1 1/2 cups frozen broccoli, cooked (microwave for 2 min is easiest)
1 cup light sour cream
1 bunch green onions, thinly sliced
kosher salt
ground black pepper
1 clove garlic, minced (optional)
1/4 cup grated Parmesan cheese (optional)

Steps:

  • Melt the butter in the bottom of a large pot over medium-high heat. Add flour and whisk to combine until thickened. Whisking continuously, slowly pour in the milk and whisk until mixture is smooth. Be sure to get the corners of the pan. Add all of the remaining ingredients and lower the heat to medium. Stir occasionally until the cheese is melted and the soup is warmed through. Be sure to scrape bottom of the pot as you stir so the soup doesn't burn. Serve when warm and enjoy! Additional notes: • This soup can be cut in 1/2 and there would still be plenty for 4 people. • When cutting potatoes, I'd recommend cutting even smaller than what you see in my photo, especially b/c they're already cooked. • Slice bacon in pieces before cooking so you don't have to crumble later and get messy. You can put in a tablespoon or so of bacon fat into the soup when heating. • On pre-baking your potatoes: Since this recipe uses potatoes that are already baked, you might want to toss a few in the oven the night before to bake them off ahead of time. Baked, they'll keep in the fridge for a week (easily), so dinner can be ready to go any night of the week! • Microwave frozen broccoli for 2 min. before putting into soup w/remaining ingredients.

4 skinless, boneless chicken breast halves
½ cup all-purpose flour for coating
1 tablespoon vegetable oil
1 (1 ounce) package dry onion soup mix
2 cups boiling water
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place flour in a shallow dish or bowl; heat oil in a medium skillet over medium high heat. Dredge chicken in flour, then brown in hot oil; place browned chicken in a 9x13 inch baking dish.
  • Combine soup mix and boiling water in a small bowl; top chicken with cheese, then water/soup mix.

3 Tablespoons butter
1 large onion, diced (approximately 1 cup)
3 Tablespoons flour
2 cups milk (any %)
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon thyme
1/4 teaspoon black pepper
1 (14.5 ounce) can chicken broth
1 package (10 ounces) Extra Sharp cheddar cheese, finely shredded
Paprika (optional)
Green onions (optional)

Steps:

  • In a large pot saute butter and onion together until onion is soft and translucent. Add flour and stir until all flour is absorbed by butter. Slowly add milk 1/2 cup at a time, mixing well between each addition. Mixture will first get VERY thick then thin out during this process. DO NOT ADD ALL THE MILK AT ONCE! Once all milk has been added, add mustard, salt, thyme, pepper and chicken broth. Bring mixture to a boil. Cook for 10 minutes or until thickened. Add cheese and stir until cheese is melted. Top with additional cheese, paprika or green onions.
