BRIE CHEESE APPETIZER

A light, fluffy puff pastry is filled with melted Brie cheese and hot fruit preserves. If you do not want a sweet wheel, you may substitute herbed cheese spread for the preserves. Baking times are the same for the substitution.

1 (8 ounce) wheel Brie cheese
3 tablespoons apricot preserves
½ (17.5 ounce) package frozen puff pastry, thawed
1 egg white

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a cookie sheet.
  • Slice one wheel of Brie cheese in half so you have 2 circles of cheese. Spread apricot or peach preserves on (the cut side) half of one circle of brie. Make sandwich out of the two halves of Brie, so that the preserves are in the center of both halves. Wrap the entire wheel of Brie with one sheet of puffed pastry and flip the entire concoction onto the prepared cooking sheet so the seam is on bottom. Brush the puffed pastry with the egg white.
  • Bake for 30 minutes, or until the pastry in golden brown. Serve immediately.

3 cups sliced onions
2 tablespoons canola oil
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1 round loaf sourdough bread (1 pound)
1 round (8 ounces) Brie cheese

Steps:

  • In a large skillet, saute onions in oil until softened. Reduce heat to medium-low; add the brown sugar, vinegar and salt. Cook, stirring occasionally, for 30-35 minutes or until onions are deep golden brown., Cut top third off loaf of bread; hollow out enough bread from the bottom to make room for cheese. Cube removed bread; set aside. Using a knife, make 2-in. cuts into loaf around edge of bread at 1-in. intervals. Remove rind from cheese; cut cheese in half horizontally. Layer half of the cheese and onions in bread. Repeat layers., Transfer to an ungreased baking sheet. Bake at 350° for 25-30 minutes or until cheese is melted. Let stand for 10 minutes. Serve with bread cubes. Freeze option: Cool onion mixture. Assemble bread, cheese and onion mixture as directed, wrap and freeze. Freeze bread cubes in a separate freezer container. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Bake bread bowl as directed, increasing time as necessary until heated through. Serve with bread cubes.

Guests will think you spent hours preparing these appetizers. They are very pleasing to the eye and the taste of Brie, caramelized onions and caraway is delicious. Prep time is approximate and includes the 15 minute chill time.

2 medium onions, thinly sliced
3 tablespoons butter or 3 tablespoons margarine
2 tablespoons brown sugar
1/2 teaspoon white wine vinegar or 1/2 teaspoon cider vinegar
1 sheet frozen puff pastry, thawed
4 ounces brie cheese or 4 ounces camembert cheese, rind removed, softened
1 -2 teaspoon caraway seed
1 egg
2 teaspoons water

Steps:

  • In a large skillet, cook the onions, butter, brown sugar and vinegar over medium-low heat until onions are golden brown, stirring frequently.
  • Remove with a slotted spoon and cool to room temperature.
  • On a lightly floured surface, roll puff pastry into an 11x8 inch rectangle.
  • Spread Brie over pastry.
  • Cover with the onions; sprinkle with caraway seeds.
  • Roll up one long side to the middle of the dough; roll up the other side so the two rolls meet in the center.
  • Using a serrated knife, cut into 1/2 inch slices.
  • Place on parchment paper-lined baking sheets; flatten to 1/4 inch thickness.
  • Refrigerate for 15 minutes.
  • In a small bowl, beat egg and water; brush over slices.
  • Bake at 375°F for 12-14 minutes, or until puffed and golden brown.

BRIE AND ONION PUFF

2 tablespoons unsalted butter
4 large Vidalia or Spanish onions, thinly sliced
Kosher salt and freshly ground black pepper
1/2 cup water
2 sheets frozen puff pastry, thawed
2 (5-inch) rounds brie cheese
1 large egg, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a large skillet over medium-high heat. Add the onions, season with salt and pepper, to taste, and saute until just brown, about 10 minutes. Add 1/2 cup of water and cook stirring often, until dark golden brown, about 15 minutes. Let the mixture cool to room temperature.
  • Roll each sheet of pastry to a 12-inch square on a marble surface or parchment paper to prevent sticking. Divide the caramelized onions in the center of each pastry. Put a brie round on top of the onions and brush edges of both pastry squares with beaten egg. Fold pastry up and over cheese to completely enclose the cheese in the pastry. Press the seams together to completely seal. Arrange each pastry round, seam side down, on a silicone mat or parchment lined baking sheet. Brush the top of each pastry round with beaten egg. Bake until golden brown. 20 to 25 minutes. Let stand 15 to 20 minutes before indulging. Enjoy!
