2½ cups vegetable stock
½ cup heavy cream
1 large onion, diced
4 roma tomatoes, diced
8 ounce mushrooms, diced
1 medium zucchini, diced
1 medium squash, diced
1 pound box fettuccine noodles
4 garlic cloves, minced
¼ cup parsley, chopped
½ teaspoon salt
½ teaspoon pepper
¼ teaspoon dried thyme
1 teaspoon dried basil
2 bay leaves

Steps:

  • Place the vegetable stock, heavy cream, onion, tomatoes, mushrooms, zucchini, squash, fettuccine noodles, garlic, parsley, salt, pepper, thyme, basil, and bay leaves into a dutch oven. One Pot Summer Vegetable Pasta image

This One Pot Summer Vegetable Pasta is a quick and easy summer dinner recipe that uses fresh summer vegetables like tomatoes, summer squash and zucchini.

Number Of Ingredients 10

1 box Barilla Pronto Pasta
3 c Water, cold
1 c Onion, diced
1 Tbso Olive oil
2 Zucchini, sliced
2 Yellow Squash, sliced
1 pint Grape tomatoes
1 c Basil, fresh
1/2 tsp Salt
1 c Barilla Marinara Sauce (you may add more sauce if you like)

Steps:

  • Add olive oil and onions to a 12 inch skillet and cook over medium high heat until softened.
  • Add the box of pasta, zucchini, yellow squash, tomatoes, and basil to the skillet.
  • Pour 3 cups of cold water and salt into the pan ensuring that the water covers the pasta (it does not have to cover the vegetables).
  • Turn the heat up to high and cook for 10 minutes, stirring regularly, until the water is absorbed.
  • With about 1 minute left add the sauce then remove the skillet from heat and top with cheese. Serve immediately.
