An ideal winter recipe. The bread can be replaced by mashed potato or polenta. Serve with a salad or steamed vegetables.

2 tablespoons olive oil
1 large onion, sliced
1 medium carrot, sliced
2 cloves garlic, finely chopped
1 teaspoon white sugar
1 red bell pepper, seeded and chopped
6 fresh mushrooms, sliced
1 tablespoon all-purpose flour
½ cup water
1 tablespoon tomato paste
½ teaspoon dried basil
¼ teaspoon dried thyme
1 (14.5 ounce) can red kidney beans, drained
½ teaspoon salt
ground black pepper to taste
½ (1 pound) loaf French bread, cut into 1/2 inch thick slices
1 tablespoon olive oil
¼ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion, garlic and carrot; cook and stir until onion is tender and transparent. Stir in the sugar, red pepper and mushrooms and continue to cook until onion is browned.
  • Sprinkle the flour over the vegetables and stir to blend. Cook for 1 minute then mix in the water and tomato paste. Season with basil and thyme. Mix in the beans and season with salt and pepper. Transfer to a greased casserole dish.
  • Pour the remaining oil into a shallow dish. Dip one side of each slice of bread in the oil, then arrange on top of the casserole with the oiled side up. Sprinkle Parmesan cheese over the top.
  • Bake for 10 to 15 minutes in the preheated oven, until the bread and cheese are toasted.

Give classic green bean casserole a new spin by booting the canned mushroom soup. Expect fresh green beans cooked to tender-crisp perfection in a delicious, homemade sauce, topped with crunchy onions and served as mini casseroles.

1 pound fresh green beans, trimmed and cut into 1 1/2-inch pieces
cooking spray
2 tablespoons unsalted butter
1 cup sliced fresh mushrooms
1 medium shallot, thinly sliced
1 clove garlic, minced
1 tablespoon all-purpose flour
½ cup chicken stock
1 teaspoon low-sodium soy sauce
1 teaspoon Dijon mustard
½ teaspoon dried thyme
½ cup half-and-half
salt and ground black pepper to taste
1 strip crispy cooked bacon, crumbled
½ cup French-fried onions (such as French's®)

Steps:

  • Bring a large pot of lightly-salted water to a rolling boil. Add beans and cook until just tender, about 5 minutes. (The beans will not soften too much more during baking, so if you want them softer, cook to your preference.)
  • Drain beans, run under cold water, and place in a bowl of ice water to stop the cooking. When beans are chilled, drain and set aside.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray the inside of 4 ramekins with cooking spray.
  • Melt butter in a medium skillet over medium heat. Add mushrooms and shallot and cook until they start to brown, 2 to 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
  • Sprinkle flour over the mushrooms, stirring well to combine. Gradually pour in chicken stock, soy sauce, Dijon, and thyme, stirring constantly; the mixture will be thick at this point. Stir in half-and-half, salt, and pepper until well combined. Reduce heat to low and simmer until flavors have melded and sauce has thickened, 3 to 5 minutes.
  • Stir in green beans and bacon until well combined. Spoon into the prepared ramekins and top with French-fried onions.
  • Bake in the preheated oven for 13 to 15 minutes. Serve immediately.

This is a recipe my mom always made. Now I make it myself. It is one of my favorite! As an alternative to the burger and bacon I use turkey burger and turkey bacon.

1 lb hamburger
3/4 cup bacon, cut up
1 cup onion
2 lbs baked beans
1 (15 ounce) can kidney beans
1 (15 ounce) can butter beans
1 cup ketchup
1/4 cup brown sugar
1 teaspoon liquid smoke
1 teaspoon white vinegar
salt and pepper

Steps:

  • Drain all of the beans.
  • Cook the burger and the bacon.
  • Combine all of the ingredients in the crock pot.
  • Cook on low 6-8 hours or on high for 4 hours.

1 tbsp vegetable oil
1 onion , thickly sliced
8 Cumberland sausages
1 fat garlic clove , crushed
2 x 400g cans kidney beans in chilli sauce
2-3 sprigs curly parsley , chopped

Steps:

  • Heat the oil in a large frying pan. Cook the onion and sausages over a fairly high heat for 8-10 mins, turning the sausages often so they brown all over.
  • Add the garlic to the pan with the kidney beans and their sauce. Half-fill one of the cans with water, swirl and then add this to the pan. Stir everything together and bring to the boil. Turn down to simmer and cook for 10 mins, or until the sausages are cooked through. Season and sprinkle with the parsley.

1 tbsp olive oil
1 large onion , finely chopped
2 celery sticks , finely chopped
3 carrots , finely chopped
3 red peppers , sliced
2 garlic cloves , crushed
2 tbsp tomato purée
400g can cannellini beans , rinsed and drained
400g pinto beans , rinsed and drained
400g borlotti beans , rinsed and drained
2 x 400g cans chopped tomatoes
1 vegetable stock cube (check the label if you're vegan)
2 bay leaves
1 tbsp brown sugar
½ tbsp red wine vinegar

Steps:

  • Heat the oil in a large pan or casserole on a medium heat. Fry the onion, celery and carrots for 10 mins until soft and golden, then add the peppers and fry for another 5 mins.
  • Stir in the garlic for a minute, then add the tomato purée, all the beans and chopped tomatoes, then swirl out the tomato cans with a splash of water and add to the pan with the stock cube, bay leaves, sugar and vinegar. Season and simmer, uncovered, for 25 mins until the sauce reduces to coat the beans and the peppers are soft. Leave to cool before storing in transportable containers. Will keep in the fridge for 3 - 4 days or freeze in portions and defrost in the fridge overnight. Choose your toppingsSweet & spicyAdd diced dried apricots and 1 tbsp harissa. Top with yogurt swirled with more harissa, and toasted flaked almonds.
