1 cup long-grain white rice
2 tablespoons olive oil
1 medium onion, halved lengthwise and thinly sliced
4 garlic cloves, slivered
Coarse salt and ground pepper
1 can (14 1/2 ounces) diced tomatoes, in juice
1/2 cup pitted Kalamata olives, slivered
2 tablespoons capers, drained and rinsed
4 red snapper fillets (6 to 8 ounces each), halved crosswise

Steps:

  • Preheat oven to 400 degrees. Cook rice according to package instructions; set aside, covered.
  • While rice is cooking, heat 1 tablespoon oil in a large skillet over medium heat. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until onion begins to soften, 5 to 7 minutes. Add tomatoes and their juice, olives, and capers; cook, stirring occasionally, until slightly thickened, 3 to 5 minutes.
  • Meanwhile, place snapper fillets on a rimmed baking sheet. Drizzle with remaining tablespoon oil, and turn to coat. Arrange fillets in a single layer, skin side down. Season generously with salt and pepper.
  • Bake until fish flakes easily and is opaque throughout, 10 to 12 minutes. Serve with rice and tomato-olive compote.

1 whole head garlic
1 teaspoon olive oil, plus 2 tablespoons extra-virgin olive oil
1 large tomato, seeds removed and medium diced
1/4 cup chopped fresh basil leaves, packed
1/4 cup packed chopped fresh flat-leaf parsley
2 teaspoons cracked black peppercorns
1/2 cup pitted medium diced kalamata olives
1 tablespoon butter
1 cup basmati rice (Before use, place in a bowl, cover with water and skim off any impurities that rise to the surface. Then transfer to a strainer and rinse well)
1 tablespoon minced fresh thyme leaves or 1 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon ground pepper, black or white
1 pint (2 cups chicken stock)
1 tablespoon olive oil
1 shallot, minced
1 cup (about 3 ounces) white mushrooms, cleaned, trimmed and sliced
1/2 cup Merlot
2 teaspoons cornstarch
1 tablespoon water
2 teaspoons tomato paste
1 teaspoon Dijon mustard
1/4 cup demi-glace
2 teaspoons fresh finely minced flat-leaf parsley (from about 3 to 4 large sprigs)
Salt and freshly ground black pepper
Oil
3 ounces bacon strips
1 medium onion, diced
6 baby potatoes, sliced
Salt and freshly ground black pepper
1 tablespoon minced scallions, white and tender green parts only
1 quart chicken stock
1/3 cup packed fresh basil leaves
1/8 cup packed fresh tarragon leaves
1/4 cup packed fresh parsley leaves
6 (3 or 4-ounce) boneless chicken breasts
Oil
3 (6 to 8-ounce) New York strip steaks
Salt and freshly ground black pepper
1 pound steamed haricots verts, as garnish

Steps:

  • Preheat oven to 350 degrees F.
  • To make the olive salsa for the chicken topping, slice the root end off the entire head of garlic and turn it upside down, wrap it in aluminum foil and mold the foil so it supports the garlic to allow the cut end to stand upright in the oven. Pour about 1 teaspoon olive oil on the garlic so it slips between the skin and the cloves and wrap with the foil so it is enclosed. Roast for about 1 hour and set aside until it is cool enough to handle.
  • In a small bowl combine the tomato, basil, parsley, peppercorns, olives and 2 tablespoons olive oil. Gently squeeze the roasted garlic cloves from the skins into the mixture. Fold everything together and set aside to let flavors integrate.
  • For the rice accompaniment to the chicken, melt the butter in a medium saucepan over medium heat and stir in the basmati rice, thyme leaves, salt, and pepper, allowing rice to toast for a few minutes. Then add the chicken stock, bring to a boil, reduce heat to low, cover and let simmer covered and undisturbed for 20 minutes. Remove from heat and let stand 5 minutes.
  • While the rice is cooking begin the sauce for the steak. Heat the olive oil in a medium saucepan, over medium-high heat, and saute the shallot until it becomes translucent. Add the mushrooms and cook until they are tender and give up their juices. (While the mushrooms are cooling, begin sauteing the bacon in a separate skillet for the potatoes.) Add the merlot and cook for about 5 minutes. Meanwhile, in a separate small bowl, make a slurry with 1 tablespoon water and the cornstarch, then add the tomato paste and Dijon mustard and mix thoroughly until smooth. Add this mixture to the pan of mushrooms along with demi-glace and parsley. Season with salt and pepper to taste. Turn heat down to medium low, and allow to reduce and thicken.
  • While the mushrooms are cooking, heat the oil in the deep-fryer to 375 degrees F or according the manufacturer's instructions for potatoes. Saute the bacon strips in a skillet until crispy. Remove to paper towels to drain and cool to room temperature. Drain excess bacon fat from the skillet leaving a coating in which to saute the onion. Cook until the onion becomes translucent. Deep-fry the baby potato slices until golden and drain on paper towels. Transfer them to the pan of onions, and crumble in the bacon. Toss in the scallions and season with salt and pepper. Cover and keep warm.
  • Heat the oven to 375 degrees F for the steak, if you are finishing in the oven.
  • In a large saute pan, heat the chicken stock over medium-high heat. Add the basil, tarragon and parsley, bring to a boil to integrate flavors, then reduce heat. This is your poaching liquid. Season the chicken breasts generously on both sides with salt and pepper, rubbing the seasoning in, and place the chicken in simmering poaching liquid. (Remember, you are poaching, not boiling. The liquid should be kept at a simmer.) Poach chicken until cooked through, about 10 minutes, turning breasts midway through cooking period. Remove to paper towels to drain.
  • Heat olive oil over medium-high heat in a skillet with oven-safe handles. Season the steaks with walt and pepper. Sear for about 2 minutes per side undisturbed (to let seasonings integrate into the surface of the meat) and then to your preferred level of doneness. Transfer the entire skillet to the oven to finish (about 10 minutes for medium-rare) They can also be cooked on a grill. Let steaks rest, then slice into 1/4- inch thick slices.
  • On half of the serving plate, spoon some basmati rice, top with a piece of chicken, and spoon olive salsa over chicken. On the other half of the serving plate, spoon some potatoes, top with a "fan" of steak slices (about 3 ounces of steak or an amount equal to half of a strip steak, per person) and drizzle sauce over sliced steak. Garnish the plate with haricots verts.

2 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
2 tablespoons honey
1 tablespoon ancho chile powder
10 cloves garlic, coarsely chopped
1/4 cup fresh oregano leaves
2 cups pure olive oil
Salt and pepper
4 chickens, 2 1/2 pounds each, quartered
2 roasted red bell peppers, peeled, seeded and diced
2 roasted yellow bell peppers, peeled, seeded and diced
1 cup pitted and coarsely chopped Nicoise olive
2 cloves garlic, finely chopped
1 tablespoon fresh thyme leaves
1/4 cup coarsely chopped parsley
1/4 cup sherry vinegar
1 tablespoon honey
Salt and freshly ground pepper
4 cups water
2 cups home-made or low sodium canned chicken stock
Pinch saffron threads
2 tablespoons unsalted butter
1 tablespoon olive oil
1 medium Spanish onion
3 cups converted white rice
5 tomatoes, seeded and diced
Salt and pepper, to taste

Steps:

  • Combine the vinegar, lemon juice, lime juice, honey, ancho chile powder, garlic and oregano in a blender and blend for 30 seconds. With the motor running, slowly add the olive oil until emulsified. Season to taste with salt and pepper. Place the marinade in a large shallow baking dish, add the chicken pieces and turn to coat. Cover and let marinate for 2 hours in the refrigerator. Preheat the oven to 375 degrees F. Heat a large saute pan until almost smoking. Remove the chicken from the marinade and season with salt and pepper to taste. Saute the chicken until golden brown on both sides. Place the chicken on a large baking sheet and place in the oven, bake for 12 to 15 minutes or until just cooked through. Remove from the oven and let rest, 5 minutes.
  • For the Roasted Pepper and Black Olive Relish: Combine all ingredients in a medium bowl and season with salt and pepper to taste. Serve at room temperature.
  • For the Saffron-Tomato Rice: Combine water, stock, 2 tablespoons salt and saffron in a medium saucepan over high heat and simmer until the threads open, about 5 minutes. Melt butter and oil in a medium saucepan over medium high heat, add onion and saute until soft. Add the rice and stir to coat with the oil and butter. Add the saffron broth, bring to a boil, cover and reduce heat to medium. Cook until the rice is tender about 12 to 15 minutes. Fold in the tomatoes and season with salt and pepper to taste.

4 tablespoons olive oil
1 small onion, finely chopped
2 plump garlic cloves, crushed
1 1/8 cups basmati rice
2 cups vegetable stock
1 tomatoes, peeled, seeded and diced (or one cup of canned organic diced tomatoes)
2 large green onions, chopped (include the tender parts of the green stem)
2 tablespoons chopped parsley
salt and pepper
1/3 cup black olives, pitted
1 small avocado, pitted, peeled and diced

Steps:

  • Heat 2 tablespoons of the oil in a saucepan. Add the onion and garlic and cook for 1 minute.
  • Add the rice and stir for 2 minutes, then add the stock and bring to a boil.
  • Stir the rice, then cover the pan and simmer very gently, without lifting the lid, for about 12 minutes, or until the rice is just tender.
  • Meanwhile, heat the remaining oil in a frying pan.
  • Add the tomato, green onions, parsley and salt and pepper and simmer for 5 minutes. Remove the pan from the heat and stir in the olives and avocado.
  • Fluff up the rice with a fork and carefully stir in the tomato mixture.

2 cups uncooked long grain rice
4 beef bouillon cubes
1 pound ground beef
3 medium green peppers, chopped
3 medium onions, chopped
2 garlic cloves, minced
1 cup water
3/4 cup raisins
3/4 cup sliced ripe olives
3 bay leaves
Salt and pepper to taste

Steps:

  • In a large saucepan, combine the water, rice and bouillon. bring to a boil. Reduce heat; cover and simmer for 15 minutes. Meanwhile, in a large skillet, cook beef, green peppers, onions and garlic over medium heat until the meat is no longer pink; drain. Add water, raisins, olives and bay leaves. Cover and simmer for 30 minutes or until heated through. Discard bay leaves. Stir in rice, salt and pepper.

1 tablespoon balsamic vinegar
1/4 cup extra virgin olive oil
2 tablespoons chopped thyme
2 cloves garlic, crushed

1/4 cup pine nuts
1/2 tablespoon olive oil
1 large onion, finely chopped
3 tablespoons oil
2 cups rice
3 cups water
1/4 teaspoon cinnamon
salt
pepper
3 tablespoons finely chopped dill
3 tablespoons finely chopped mint
3 tablespoons finely chopped Italian parsley

Steps:

  • Mix the currants, vinegar, oil, thyme and garlic.
  • Season with a generous amount of pepper.
  • Let stand at least 4 hours before serving.
  • Toast the pine nuts in 1/2 tablespoon olive oil in a small skillet over low heat until lightly browned, 2 minutes.
  • Watch them carefully; they burn easily.
  • Cook the onions in oil until golden, stirring often.
  • Add the rice and cook, stirring, an additional minute.
  • Add the water and season with salt, pepper and cinnamon.
  • Bring to a boil, lower heat and cook covered over low heat until the water is absorbed, 20 minutes.
  • Remove from heat and let sit undisturbed for 10 minutes.
  • Stir in the rest of the ingredients with a fork.
  • Transfer to a serving bowl or platter and garnish with Seasoned Currants.

3 cups chicken stock
1 1/2 cups white long-grain rice
5 tablespoons extra-virgin olive oil, divided
4 (6-ounce) boneless, skinless chicken breasts
Salt
Freshly ground black pepper
1 cup all-purpose flour
2 teaspoons smoked paprika
2 eggs
1 1/2 cups peeled almonds
1/2 cup bread crumbs
Generous handful flat-leaf parsley
1 (9 ounce) package frozen artichoke hearts
4 piquillo peppers or 2 roasted red peppers, chopped
1/2 cup pitted Spanish green olives, chopped
1 large fresh thyme sprig, leaves only
1/3 cup dry sherry, eyeball it
2 tablespoons cold butter, cut into pieces

Steps:

  • Bring stock to a boil, stir in rice and 1 tablespoon extra-virgin olive oil. Cover and reduce heat to low. Cook 18 minutes. Heads up: after 12 to 13 minutes you will add in other ingredients.
  • Preheat oven to 375 degrees F.
  • Heat about 4 tablespoons extra-virgin olive oil over low heat in a large skillet.
  • From the rounder, thicker side of the breast, cut into and across but not through the breast meat and butterfly the breast open. Season the chicken with salt and pepper on both sides. Pour flour, smoked paprika and salt and pepper onto a dish; beat eggs in a second dish with a splash of water. Grind nuts, bread crumbs and parsley in food processor to combine. The nuts should have the same consistency as the bread crumbs. Start the processor in pulses then turn on to combine. Pour nut mixture onto plate. Coat the chicken in flour, egg then nuts. Wash your hands.
  • Raise heat under the skillet to medium-medium high. When oil ripples, add the chicken and brown on both sides, and finish in the oven until deeply golden and cooked through.
  • 5 minutes before the rice is done, add the artichokes, peppers, and olives and stir to combine. Cook 5 minutes more, turn off heat, fluff with a fork and stir in thyme leaves.
  • Remove chicken to a platter and add sherry to the pan then stir in butter. Spoon pan sauce over chicken and serve with rice alongside.

Steps:

1 package (8 ounces) cream cheese, softened
1/4 cup grated Parmesan cheese
2 tablespoons prepared Italian salad dressing
1 teaspoon dried basil
1/4 teaspoon pepper
1 cup cooked wild rice
2 tablespoons diced carrot
2 tablespoons minced chives
1 tablespoon sliced ripe olives
1 tablespoon sliced pimiento-stuffed olives
1/4 to 1/2 cup slivered almonds, toasted

Steps:

  • In a small bowl, beat the cream cheese, Parmesan cheese, salad dressing, basil and pepper until smooth. Stir in the rice, carrot, chives and olives. , Transfer to a serving bowl. Cover and refrigerate for at least 1 hour. Just before serving, top with almonds.

BRAISED LEEKS WITH OLIVE OIL AND RICE



Braised Leeks with Olive Oil and Rice image

4 large or 8 medium leeks, about 2 pounds
1/3 cup extra virgin olive oil
2 small carrots, roughly chopped
Salt and black pepper to taste
1/4 cup white long-grain rice
Juice of 1/2 lemon

Steps:

  • Trim the hard green parts from the leeks; split in half from about an inch below the root end (leave this intact for now) to the leafy end. Carefully wash between all the layers, removing all traces of sand. Cut off the root end and cut the leeks into 4-inch sections.
  • Put all but a tablespoon of the oil in a skillet with a lid or a saucepan large enough to hold the leeks in one layer. Turn the heat to medium. When the oil is hot, add the leeks and carrots, along with a sprinkling of salt and pepper, and cook for about 25 minutes, turning occasionally, until the leeks are tender. Your goal is not to brown the leeks but to soften them; if they brown a little, however, that's fine.
  • Add the rice and 1 1/2 cups of water, cover, and adjust the heat so the mixture simmers. Cook for about 30 minutes, or until the water is absorbed; the mixture should be moist but not soupy. Serve hot, at room temperature, or cold (this will keep well, covered and refrigerated, for a day, and can be reheated). Just before serving, drizzle with the remaining olive oil and the lemon juice.
  • Braised Leeks with Olives
  • In step 2, omit the carrots. In step 3, omit the rice and add 1/2 cup pitted black olives, like Kalamatas. Use only 1/2 cup liquid and cook for only 5 to 10 minutes, until hot. Add the lemon juice at the end.
  • Braised Leeks with Egg-Lemon Sauce
  • You can use this formula with almost any braised vegetable: When the leeks are done, beat 2 eggs in a bowl with the minced or grated zest and juice of a lemon; still beating, add about 1/2 cup of the leek-cooking liquid. Gradually add the remaining cooking liquid, beating all the while. Dress the leeks with this sauce and serve.

This rice is subtly lemony with hints of cilantro and garlic. The addition of olive oil at the end makes the dish. Use only a good, fresh oil. Goes well with fish, chicken and Hispanic dishes.

1 cup rice (Basmati is good)
2 cups water
2 garlic cloves, peeled and sliced into four
2 tablespoons cilantro, chopped
2 tablespoons parsley, chopped
1 teaspoon salt
1/2 lemon
1 lemon, rind of, grated (zest)
olive oil, to drizzle must be fresh

Steps:

  • Combine all ingredients except lemon, rind and oil in a pan.
  • With your hand, squeeze the 1/2 lemon's juice into the pot, then toss it into the pot.
  • Simmer, stirring occasionally 'til rice is not crunchy anymore.
  • Remove rice from heat and remove lemon. Squeeze the remaining juice from it, being careful not to burn your fingers. Stir in one half of the grated lemon rind.
  • Cover pan with a folded towel and let set for 5-7 minutes.
  • Fluff with a fork.
  • Taste to adjust seasonings such as salt.
  • Pile into a serving dish.
  • Sprinkle with the reserved lemon rind.
  • Drizzle on a little fresh olive oil if desired.

Chicken-Rice-And-Black-Olive-Stuffed Lettuce Bundles image

1 boneless, skinless chicken breast (about 8 ounces), split
1 1/2 cups cooked white rice
2 teaspoons dried thyme
2 tablespoons, plus 2 teaspoons pitted and chopped imported black olives
1 red bell pepper, cored and diced very small
2 ribs celery, diced very small
1/4 cup chopped Italian parsley
6 large cloves garlic, peeled and minced
2 teaspoons grated lemon zest
4 teaspoons kosher salt
Freshly ground pepper to taste
12 large romaine lettuce leaves
4 scallions, green part only, leaves separated and halved or quartered if large
Roasted-lemon-and-garlic steaming liquid (see recipe)

Steps:

  • Place the chicken in a food processor and process until chicken forms a smooth paste. Scrape it into a medium-size mixing bowl and stir in the rice, thyme, olives, red pepper, celery, parsley, garlic, lemon zest, salt and pepper.
  • Steam the lettuce leaves and the scallions over the lemon garlic liquid just until wilted; this will only take a few seconds. Remove the steaming liquid from the heat. Cut the tapered ends off of the lettuce leaves, leaving a large circle of leaf. Cut out the heavy center stems and overlap the lettuce where the stems were.
  • Place a scant 3 tablespoons of the filling in the center of each leaf. Lift the lettuce up around the filling and tie each one with a scallion leaf; they should look like little drawstring bags.
  • Place the bundles in a steamer, cover and steam over the liquid for 15 minutes. Divide among 4 plates and serve immediately.

Enjoy this rice salad as part of a summer feast. With mixed grains, olives, sundried tomatoes, almonds and spring onions, it's filling and full of flavour

100g pitted Spanish green olives , drained
bunch spring onions (150g)
1 tsp olive oil
750g cooked mixed grains and rice (or 3 x 250g pouches)
3 tbsp sherry or red wine vinegar
100g sundried tomatoes , sliced
50g flaked almonds , toasted
2 celery sticks, chopped
50g manchego shavings or vegetarian alternative (optional)

Steps:

  • Thread the olives onto metal or bamboo skewers. Heat a griddle pan or light the barbecue, then when the flames have died down and the coals are white, toss the spring onions with the oil and grill for 8-10 mins to cook until tender. Grill the olives for a few mins, turning regularly, until they look a little charred. Remove the spring onions from the grill and cut into bite-sized pieces. Remove the olive skewers from the grill.
  • Heat the grains and rice pouches, if using, in the microwave for 2 mins until warm. Toss with the vinegar, some seasoning and the sundried tomatoes with a little drizzle of the oil from the jar. Leave for a few mins for the dressing to be absorbed.
  • Toss the olives, spring onions, toasted almonds and celery into the rice. To serve, stir through the manchego, if using, and season to taste.
