It's impossible to go wrong with pecan pie. Especially one that is really loaded with nuts, has a little verve from orange zest, and isn't overly sweet-exactly like the one here. Taking the time to track down new-crop pecans will push things right over the top.

Yield Makes 8 servings

Pastry dough
3/4 stick unsalted butter
1 1/4 cups packed light brown sugar
3/4 cup light corn syrup
2 teaspoon pure vanilla extract
1/2 teaspoon grated orange zest
1/4 teaspoon salt
3 large eggs
2 cups pecan halves (1/2 pound)
Whipped cream or vanilla ice cream (for serving; optional)

Steps:

  • Preheat oven to 350°F with a baking sheet on middle rack.
  • Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 12-inch round and fit into a 9-inch pie plate. Trim edge, leaving a 1/2-inch overhang. Fold overhang under and lightly press against rim of pie plate, then crimp decoratively. Lightly prick bottom all over with a fork. Chill until firm, at least 30 minutes (or freeze 10 minutes).
  • Meanwhile, melt butter in a small heavy saucepan over medium heat. Add brown sugar, whisking until smooth. Remove from heat and whisk in corn syrup, vanilla, zest, and salt. Lightly beat eggs in a medium bowl, then whisk in corn syrup mixture.
  • Put pecans in pie shell and pour corn syrup mixture evenly over them. Bake on hot baking sheet until filling is set, 50 minutes to 1 hour. Cool completely.

3 eggs, beaten
3 tablespoons butter
1 teaspoon vanilla extract
1 cup chopped pecans
1 pinch ground nutmeg
1 recipe pastry for a 9 inch single crust pie

Steps:

  • In a saucepan bring the honey to a boil. Quickly beat the eggs into the honey. Add butter, vanilla, nuts, and nutmeg. Pour into the pie shell.
  • Bake at 325 degrees F (165 degrees C) for 25 minutes or until set.

1 cup real maple syrup
1 cup light brown sugar, packed
1/2 cup heavy cream
1 tablespoon molasses
4 tablespoons unsalted butter
1/2 teaspoon salt
6 large egg yolks
2 cups pecans, toasted and chopped
9 inches unbaked pie shells, chilled

Steps:

  • Preheat oven to 450 degrees.
  • Place oven rack to the lowest position.
  • Over medium heat stir together the maple syrup, sugar, cream and molasses stirring occasionally until sugar dissolves, 3 to 5 minutes.
  • Remove from heat and set aside for 5 minutes.
  • Whisk in butter and salt.
  • Whisk in egg yolks until well combined.
  • Remove pie shell from fridge.
  • Scatter pecans evenly and slowly pour in syrup mixture.
  • Place pie in center of rack, reduce heat to 325 degrees.
  • Bake until center jiggles slightly when gently shaken, between 45 and 60 minutes. You may need to make a foil tent if your oven runs hot-you dont want the nuts or crust to burn.
  • Remove from oven and cool on a wire rack for 1 to 2 hours.
  • Chill for at least 3 hours.

1 1/3 cups all purpose flour
1 teaspoon sugar
1/4 teaspoon salt
1/3 cup chilled solid vegetable shortening, cut into small pieces
1/4 cup (1/2 stick) chilled unsalted butter, cut into small pieces
2 tablespoons (about) ice water
For filling
1 cup sugar
3 large eggs
1/2 cup light corn syrup
3 tablespoons unsalted butter, melted
2 teaspoons vanilla extract
1 3/4 cups chopped pecans

Steps:

  • Make crust:
  • Mix first 3 ingredients in processor. Add shortening and butter; cut in using on/off turns until mixture resembles coarse meal. Blend in enough water to form moist clumps. Gather into ball; flatten into disk. Wrap in plastic; chill 1 hour.
  • Roll dough on floured work surface to 13-inch round. Transfer to 9-inch round cake pan with 1 1/2-inch-high sides. Trim to align with pan edges. Freeze 15 minutes.
  • Make filling:
  • Preheat oven to 350°F. Whisk first 5 ingredients in medium bowl to blend. Mix in 3/4 cup pecans. Pour into crust. Sprinkle with 1 cup pecans. Bake pie until set, about 1 hour 15 minutes. Transfer to rack; cool.

1/2 stick(s) parkay margarine (melted)
1/4 teaspoon(s) salt

  • Beat your eggs , then add your sugar till mixed , slowly add the karo syrup , vanilla , salt and 1/2 stick cooled melted margarine...stir till mixed , add your pecans.
