Provided by Molly O'Neill

Categories     dinner, main course

Time 3h45m

Yield Six to eight servings

Number Of Ingredients 15

2 carrots, peeled and cut into quarters lengthwise
1 teaspoon chili oil
1 tablespoon vinegar
1 tablespoon hot curry powder
1 onion
2 cloves garlic
1 1-inch piece fresh ginger, peeled
2 teaspoons butter
1 pound ground veal
1 pound ground sirloin
1 cup cooked white rice, cold
1 egg
1/2 cup shelled, unsalted pistachio nuts
2 teaspoons kosher salt
1 teaspoon coarsely ground black pepper

Steps:

  • Blanch the carrots for 3 minutes to soften; drain but do not cool. Combine the chili oil, vinegar and curry powder. Toss the warm carrots in this mixture and marinate for 2 hours. Drain and set aside.
  • To make the meatloaf, preheat the oven to 350 degrees. Place the onion, garlic and fresh ginger in a food processor and puree. Warm the butter over medium-high heat and saute the onion mixture until soft, about 5 minutes, stirring to avoid sticking. Remove from the heat and cool.
  • In a large mixing bowl, combine the sauteed vegetables with the veal, sirloin, rice, egg, pistachio nuts and salt and pepper by hand, taking care to mush the meat as little as possible.
  • Place half this mixture in a nonstick loaf pan. Top with an even layer of marinated carrots and then the rest of the meat. Press to make a solid loaf and bake for 1 hour. Allow to rest at room temperature for 20 minutes before slicing and serving with steamed rice or couscous.

JAMES BEARD'S OLD-FASHIONED MEAT LOAF

James Beard's Old-Fashioned Meat Loaf image

A meatloaf is capable of infinite variations with spices and ingredients. The combination of meats in this version makes this dish more delicious and firm. Bake it free form on a baking sheet or shallow pan, not in a loaf pan, or it will be mushy. It goes great with mashed potatoes or rice. This satisfying dish is adapted from The New James Beard (1981).

OLD-FASHIONED MEAT LOAF

Old-Fashioned Meat Loaf image

For the most tender, moist meat loaf, use meat with 20 percent fat. A meat loaf pan, a wonderful recent invention consisting of one pan with drainage holes set inside a second pan, allows excess fat to drain out during cooking. Serve with a generous helping of mashed potatoes.

Provided by @MakeItYours

Number Of Ingredients 14

2 tablespoons vegetable oil
1 large yellow onion, chopped
1 carrot, peeled, finely chopped
2 cloves garlic, minced
2 lb lean ground beef
1 1/2 cups fresh bread crumbs
2 large eggs, lightly beaten
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 teaspoon dried thyme leaves, crumbled
1/4 cup finely chopped fresh parsley
1 tablespoon worcestershire sauce
2/3 cup catsup
1/2 cup tomato sauce, plus tomato sauce for serving, optional

Steps:

  • Heat the oil in a nonstick frying pan over medium heat. Add the onion and carrot. Sauté until the carrot begins to soften and the onion is almost translucent, 4-5 minutes. Add the garlic. Sauté 1 minute. Remove from the heat and cool.
  • Preheat an oven to 350 degrees F. Lightly oil a 9x5x3-inch loaf pan. Whisk eggs, salt, pepper, thyme, parsley, Worcestershire sauce and catsup in medium bowl to blend. Combine the beef, bread crumbs and cooled vegetable mixture in a large bowl. Add the egg mixture. Using your hands, mix just until blended. Do not overmix or the loaf will be too compact and dry.
  • Gently pat the meat mixture into the prepared pan. Pour the tomato sauce evenly over the top. Bake until meat begins to shrink from the pan sides and instant meat thermometer inserted into center of loaf registers 150°F, about 1 1/4 hours. Transfer pan to a rack. Cool 10 minutes.
  • Cut the meat loaf into thick slices. Using a spatula, transfer slices to warmed plates. Serve warm or cold, accompanied with more tomato sauce, if desired.
