OLD BAY SALMON CAKES
This is my favorite recipe for Salmon cakes. It's so easy to prepare and taste great! Old Bay recipes are always good, when I make these there is never any left. I usually make a double batch :)

Steps:
- Drain can of salmon or use cooked salmon. Remove skin and bones. Flake salmon.
- Mix Old Bay Classic Salmon Mix and mayonnaise in large bowl. Add salmon; toss gently until well mixed. Shape into 5 patties.
- Broil or fry 5 minutes per side or until golden brown, turning once. Serve with tartar sauce, mustard or crackers if desired.

OLD BAY SALMON CAKES
Steps:
- In a large bowl, gently combine all ingredients until mixed well. Form into 6-8 small patties. Heat a non stick pan over medium heat. Drizzle 2 tablespoons of oil in pan and spread around. Gently place each patty into hot pan and cook on first side for about 2-3 minutes or until golden brown. Carefully flip, and cook for an additional 3-4 minutes until second side is browned. Once cooked, set aside and sprinkle coarse salt over salmon cakes. Serve with a squeeze of lemon.
SALMON CAKES WITH OLD BAY AIOLI RECIPE

- • Salmon Cakes • 1. In a large nonstick skillet, heat 1 tablespoon of the oil over medium heat. Add onion, carrot and celery; cook 5 minutes until slightly softened. Remove to a large bowl. • 2. Drain salmon; remove bones, if desired. Add to bowl with cooked vegetables along with bread crumbs, Old Bay, mustard, cayenne, mayonnaise, parsley and lemon juice. Combine well and form into 12 cakes, about 1/3 cup each. • 3. In same skillet, add another 1 tablespoon of the oil over medium heat. When oil is hot, add half the cakes to the pan and cook 2 to 3 minutes per side or until browned. Repeat with remaining 1 tablespoon oil and remaining cakes. • Old Bay Aioli • 4. In a small bowl, combine mayonnaise, mustard, garlic and Old Bay. Mix and serve alongside cakes and escarole. Drizzle escarole with dressing, if desired.
