3 cups quick-cooking oats
1 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
2 large eggs, lightly beaten
1 cup fat-free milk
1/2 cup butter, melted
3/4 cup chopped peeled tart apple
1/3 cup chopped fresh or frozen peaches
1/3 cup fresh or frozen blueberries
Additional fat-free milk, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine oats, brown sugar, baking powder, salt and cinnamon. Combine eggs, milk and butter; add to the dry ingredients. Stir in apple, peaches and blueberries. , Pour into an 8-in. square baking dish coated with cooking spray. Bake, uncovered, until a knife inserted in center comes out clean, 35-40 minutes. Cut into squares. Serve with milk if desired.

1/2 teaspoon kosher salt
2 cups water
1 1/2 cups heavy cream
1/4 cup packed light brown sugar
1/4 cup assorted dried fruits (raisins, currants, apricots, etc.)
1/4 cup toasted walnuts

Steps:

  • In a saucepan over medium-high heat, add the oats, salt, and water; stir to combine.
  • Bring to a boil.
  • Lower heat and simmer until the oats are tender.
  • Stir in the cream and simmer until the mixture is creamy and thick.
  • Add in the brown sugar and dried fruits.
  • Stir until heated through.
  • Ladle into individual bowls and top with toasted walnuts.

1 stick (1/2 cup) unsalted butter, softened
3/4 cup firmly packed dark brown sugar
1 large egg, beaten lightly
1/2 teaspoon baking soda dissolved in 1 tablespoon warm water
2/3 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups of old-fashioned rolled oats
1/2 cup chopped dried apricots
1/2 cup chopped pitted prunes
1/2 cup dried sour cherries or dried cranberries (available at specialty foods shops)

Steps:

  • In a large bowl cream the butter with the brown sugar and beat in the egg, the baking soda mixture, the flour, the salt, and the vanilla. Stir in the oats, the apricots, the prunes, and the cherries and combine the dough well. Drop rounded tablespoons of the dough about 4 inches apart onto greased baking sheets and with a fork dipped in cold water flatten and spread each mound into a thin round, about 2 1/2 inches in diameter. Bake the cookies in batches in the middle of a preheated 375°F. oven 8 to 10 minutes, or until they are golden, transfer them with a spatula to racks, and let them cool. The cookies keep in an airtight container at room temperature for 5 days.

6 tablespoons brown Sugar Twin
1 teaspoon salt
2/3 cup powdered milk

4 cups water
1/2 cup firmly packed brown sugar
1 8-ounce package mixed dried fruit
4 orange slices
1 cinnamon stick
1 1 1/2-inch piece vanilla bean, split lengthwise
Plain yogurt or sour cream
Ground cinnamon

Steps:

  • Combine all ingredients except yogurt and ground cinnamon in heavy medium saucepan. Bring to boil, stirring until sugar dissolves. Reduce heat and simmer until fruit softens, stirring occasionally, about 20 minutes. Transfer fruit only to glass bowl, using slotted spoon. Boil liquid until reduced to 1 cup, returning liquid exuded from fruit to saucepan, about 10 minutes. Pour liquid over fruit, discarding orange slices. Serve warm, room temperature or chilled, topping with dollop of yogurt and dusting of cinnamon.
