These oatmeal waffles are so light and fluffy, you won't believe that they are healthy! No eggs, no flour, and no sugar needed, they are made with just 3 ingredients!

Number Of Ingredients 3

3 cups rolled oats (gluten free, if needed)
3 large bananas (about 1 1/2 cups mashed)
2 1/4 cups unsweetened almond milk (any plant based milk can be used)

Steps:

  • In a high speed blender or food processor, add your oats and blend until a flour-like consistency remains. Gently shake the blender to loosen it up. Add the bananas and milk and blend again, until a smooth batter remains. Transfer into a bowl and let the batter sit for 10 minutes.
  • Grease a waffle iron and heat up. Once hot, pour portions of the batter onto it. Cook until the edges are crispy and the center is cooked. Repeat the process until all the batter has been used up.
  • Enjoy immediately or let the waffles cool completely.

1/2 cup butter
3/4 cup sugar
1 teaspoon cinnamon
1 cup quick-cooking oatmeal
2 tablespoons flour
1 teaspoon baking powder
1 egg

Steps:

  • Melt butter and stir in remaining ingredients.
  • Butter and flour 2 or 3 cookie sheets.
  • Drop batter from teaspoon onto cookie sheets, 3 inches apart. Bake at 375 degrees about 6 to 8 minutes, until golden brown.
  • Let stand 1 or 2 minutes before removing from cookie sheet. Then remove quickly from cookie sheet with sharp knife and curve over clean broom handle and cool.
  • Store in covered container to keep crisp. These are very fragile cookies.

2/3 cup butter
2 cups quick-cooking oats
1 cup sugar
2/3 cup all-purpose flour
1/4 cup milk
1/4 cup corn syrup
2 cups semisweet chocolate, milk chocolate, vanilla or white chips, melted

Steps:

  • Line a baking sheet with parchment or foil; set aside. In a saucepan, melt butter over low heat. Remove from the heat. Stir in the oats, sugar, flour, milk and corn syrup; mix well. , Drop by teaspoonfuls 2 in. apart onto prepared baking sheets. Bake at 375° for 8-10 minutes or until golden brown. Cool completely; peel cookies off paper. Spread melted chocolate on the bottom of half of the cookies; top with remaining cookies.

Number Of Ingredients 10

1-1/2 cups all-purpose flour
1 cup quick-cooking oats
3 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 large eggs, lightly beaten, room temperature
1-1/2 cups whole milk
6 tablespoons butter, melted
2 tablespoons brown sugar
Assorted fresh fruit and yogurt of your choice

Steps:

  • In a large bowl, combine flour, oats, baking powder, cinnamon and salt; set aside. In a small bowl, whisk eggs, milk, butter and brown sugar. Add to flour mixture; stir until blended. , Pour batter into a lightly greased waffle iron (amount will vary with size of waffle iron). Close lid quickly. Bake according to manufacturer's directions; do not open during baking. Use fork to remove baked waffle. Top with fresh fruit and yogurt.
