SUGAR FREE OATMEAL RAISIN SPICE COOKIES MIX IN A JAR
My personal version of a recipe I found on www.budget101.com. I wanted to do more than just have a good sugar free cookie since the starchy carbs in the flour will also jack blood sugar. This version comes out fantastic! They are more cake like than a standard crisp cookie and stay wonderfully moist in a cookie jar. Not that they will actually last long enough to worry.

- Carefully measure each ingredient into layers in a 1 quart jar. Re-used glass ice tea jars work great as well. Judicious us of a slim rolled paper cone does wonders to keep the layers clean. If mix is to be shipped ingredients may be measured into a clear plastic disposable pastry bag or decorative food safe cello bag to reduce shipping weight and then carefully tied closed.
- Be sure to attach instruction card or label with the following directions: Combine above listed ingredients (from the list of "additionally to make cookies from mix") with 1 package of "Sugar Free Oatmeal Cookie Mix". Drop by cookie scoopfuls 1" - 2" apart onto parchment lined baking sheets. Bake 10 - 15 minutes at 350oF. Cookies do not spread much so will still be rather round and cake like. Allow to cool 5 minutes on baking sheets before carefully removing to cooling racks to completely cool. Store in a cool dry place.

- In a bowl, combine the first seven ingredients; mix well. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 9 batches (about 1 cup total)., To prepare oatmeal: In a bowl, combine oats and 2 tablespoons oatmeal spice mix. Add enough boiling water until oatmeal is desired consistency. Sprinkle with brown sugar if desired.

HONEY SPICE OATMEAL COOKIE MIX IN A JAR
Honey spice is such a nice change from the everyday chocolate chips cookies. This recipes uses honey instead of cane sugar in this naturally wonderful cookie. Included is instructions forthumbprint and decorated cookies

- 1. Layer in order given in a decorative jar with lid or other airtight container. Store in cool dry place.
- 2. Instructions to be included with gift jar: Honey Spice Oatmeal Cookies: 1/2 pound (2 sticks) butter, softened, no substitutions 3/4 cup honey 1 large egg Contents of gift jar In large bowl, beat butter and honey with electric mixer until creamy. Add egg; beat well. Add half of cookie mix; beat well. Add remaining cookie mix; beat well. Divide dough into thirds; place each on a piece of plastic wrap and flatten to 1/2-inch thick ness. Wrap tightly; chill at least 4 hours. Heat oven to 350 degrees F. Remove one portion of dough from refrigerator. Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Flatten to 1/8-inch thickness with bottom of glass dipped in granulated sugar. Repeat with remaining dough. Bake 5 to 7 minutes, just until centers are set. (Cookies will feel soft. Do not overbake.) Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered. Yields about 6 dozen cookies. Variations: Decorated Cookies - Decorate cooled cookies with melted dark or white chocolate, ready-to-spread frosting, decorator frosting in tubes, assorted small candies or candy sprinkles. Thumbprint Cookies - Use thumb to make a deep indentation in center of each cookie dough ball. Bake 6 to 8 minutes or until very light golden brown. Remove cookies from oven; press small dark or white chocolate candy into indentation or fill with 1/2 teaspoon preserves. Cool and store as directed

- To make mix:.
- In large bowl, combine flour, ginger, cinnamon, baking soda, salt, cloves and nutmeg; mix well.
- Add oats; mix well. Transfer to resealable plastic bag, an unbreakable decorative jar with lid or other airtight container. Store in cool dry place. A quart canning jar is most commonly used. If using a jar, cut out a square or circle of pretty fabric with pinking shears and place over jar lid, tie with a pretty ribbon or raffia.
- Attach a gift tag with the following mixing and baking instructions:.

OATMEAL RAISIN SPICE COOKIE MIX IN A JAR
Steps:
- Mix flour, cinnamon, nutmeg, baking soda and salt together.
- Layer ingredients in order given in a 1 quart "wide mouth" canning jar. Press each layer firmly in place before adding next ingredient.
- On a card add the following directions:
- 1. Empty jar of cookie mix into a large mixing bowl. Use your hands to thoroughly blend mix.
- 2. Add: 1 1/2 sticks butter or margarine, not diet, very soft; 1 egg, slightly beaten; 1 teaspoon vanilla (opt).
- 3. Mix until completely blended. You will have to finish mixing with your hands.
- 4. Shape into balls the size of walnuts. Place 2" apart on sprayed baking sheets.
- 5. Bake at 350 degrees F for 11-13 minutes until edges are lightly browned. Cool 5 minutes on baking sheet. Remove cookies to rack to finish cooling.

- Mix all ingredients together in a large bowl. Transfer to an airtight container or zip lock storage bags. Label and store in a cool place. Mix will keep for six months if airtight. Pour mix in a microwave safe bowl. Add milk or water to bowl and stir gently to combine. Microwave on high until cooked, about 2 minutes. Remove and stir, adding more milk or water as necessary to reach your desired consistency.
