A good, moist, oatmeal cake with a broiled coconut topping.

Number Of Ingredients 17

1 ½ cups boiling water
1 cup rolled oats
½ cup butter
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon salt
¼ cup packed brown sugar
½ cup white sugar
1 cup flaked coconut
6 tablespoons butter, melted
¼ teaspoon vanilla extract
¼ cup cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 pan.
  • In a small bowl, pour boiling water over oats. Mix well, and cool.
  • In a large bowl, combine butter or margarine, 1 cup brown sugar, 1 cup white sugar, eggs, flour, baking soda, spices, and salt. Add cooled oatmeal mixture, and stir to combine. Pour batter into pan.
  • Bake for 35 minutes.
  • While cake is baking, combine 1/2 cup white sugar, 1/4 cup brown sugar, coconut, melted butter or margarine, vanilla, and cream in a mixing bowl. Remove cake from oven, and turn on broiler. Drop mixture by small spoonfuls on top of cake. Spread evenly and carefully. Broil for 2 to 5 minutes, until topping is bubbling and lightly browned.

1 cup quick-cooking oats
1-1/2 cups boiling water
1 cup sugar
1 cup packed brown sugar
1/2 cup unsweetened applesauce
2 large eggs, lightly beaten
1-1/2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
FROSTING:
1 cup sweetened shredded coconut
1/2 cup packed brown sugar
1/2 cup chopped walnuts
1/4 cup fat-free half-and-half
2 tablespoons butter, melted
1/2 teaspoon vanilla extract

Steps:

  • In a small bowl, combine oats and water; let stand for 20 minutes. In a large bowl, combine the sugars, applesauce and eggs. Add oat mixture; mix well. Combine the flour, baking powder, cinnamon, salt, baking soda and nutmeg; gradually add to batter and mix well., Pour into a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. , In a large bowl, combine frosting ingredients; spread over hot cake. Broil 6 in. from the heat for 1-2 minutes or until lightly browned and bubbly.

1 cup rolled oats
1 ¼ cups boiling water
½ cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 ⅓ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon vanilla extract
6 tablespoons melted butter
1 ½ cups packed brown sugar
¾ cup evaporated milk
1 ½ cups flaked coconut
1 ½ cups chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Pour water over oats, let stand.
  • Cream 1/2 cup butter or margarine and sugars. Add eggs and blend in a large mixing bowl. Sift the flour, baking soda, salt, cinnamon and nutmeg together. Add to sugars and egg mixture. Add vanilla and oats mixture, blend well.
  • Pour batter into a 9 x 13 inch pan.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 30-40 minutes.
  • To Make Icing: Mix together 6 tablespoons melted butter, 1 1/2 cups brown sugar, 3/4 cup evaporated milk, coconuts, nuts, and 1 teaspoon vanilla.
  • Pour this coconut concoction over the hot cake.
  • Put cake under broiler, and watch close so nuts don't burn, about 5-10 minutes. Serve hot or let cool. Enjoy.

1 cup quick-cooking oats
1/4 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 large eggs, room temperature

1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon ground cinnamon

ICING:
1/2 cup packed brown sugar

1/4 cup fat-free milk

Steps:

  • In a small bowl, pour boiling water over oats; let stand 10 minutes. , Meanwhile, preheat oven to 350°. In a large bowl, beat butter and sugars until crumbly, about 2 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in applesauce and vanilla. Combine flour, baking powder, cinnamon, baking soda, salt and nutmeg. Gradually add to creamed mixture. Gradually whisk in milk. Return to a boil. Cook and stir 1 minute. Transfer to a small bowl. Stir in vanilla and salt. Gradually beat in confectioners' sugar until smooth. Immediately spread icing over cake. Let stand until set.

Growing up, this was my favorite cake. It is my grandmother, Zelda's recipe. I LOVE the frosting. It's basically the same type of frosting you'd use on a German chocolate cake. The cake is moist and dense--almost on the verge of being a sweet bread. The frosting, well, I can eat it with a spoon and be happy.

CAKE
1 cup rolled oats (dry oatmeal)
1 1/2 cups boiling water
1 cup white sugar
1 cup dark brown sugar (or light brown sugar with 2 tbs molasses mixed in)
1/2 cup (1 stick) butter
2 large eggs
1 1/3 cups flour
1 Tbsp cinnamon, ground
1 tsp baking soda
1/2 tsp salt
GERMAN-STYLE FROSTING
1 1/2 cups (3 sticks) butter
1/2 cup evaporated milk (pet milk)-- not sweetened condensed milk
1 cup dark brown sugar (or light brown sugar with 2 tbs molasses mixed in)
1 1/2 to 2 cups shredded coconut
1 1/2 to 2 cups chopped pecans (or walnuts if you prefer)

Steps:

  • 1. Preheat oven to 350 dF.
  • 2. In bowl, pour boiling water over oats, butter, brown and white sugar. Stir well. Let cool.
  • 3. In separate bowl, whisk together remaining dry ingredients (flour, baking soda, salt, cinnamon). NOTE** For high altitude (above 3500 ft) add 2 additional tsp. flour.
  • 4. When oatmeal mixture is cool, add eggs and dry ingredients. Stir well.
  • 5. Pour batter into prepared 9 x 13 pan or round cake pans. Bake at 350 dF for about 30-50 minutes (depending on pan) or until toothpick inserted in center comes out clean.
  • 6. Let cake cool and frost with German-Style Frosting.
  • 7. For Frosting: 1. Combine milk, brown sugar and butter in heavy pan. 2. Bring to good, rolling boil then remove from heat. 3. Stir in coconut and chopped nuts. Spread on cake while frosting is still warm, otherwise it will set up to the point you can't spread it.

  • Batter will be heavy.
  • Pour into a 9 x 13 pan and bake at 350 degrees for 35 to 40 minutes.
  • While baking, prepare the icing (recipe to follow).
  • Directions for the icing In a medium saucepan, melt the butter.
  • Add the brown sugar and stir to melt and combine.
  • Add the remaining ingredients and stir until combined.
  • When cake is done, pour the icing onto the hot cake.
  • Broil for five minutes, watching cake closely, until icing is bubbly.

  • 1. Put stick of butter and oatmeal in bowl and pour boiling water over mixture and let stand for 20 minutes. 2. Add remaining cake ingredients in a mixer, then add oatmeal mix, blend well. 3. Bake in a greased 13x9 cake pan at 350 degrees for 40-45 minutes.
  • Blend Icing in mixer until smooth. Spread Icing over warm cake ( NOT hot out of the oven), then place under the broiler for 2-3 minutes or until golden brown.
