2 1/4 cups oatmeal
1/4 cup nuts
1/4 cup raisins
2 teaspoons baking powder
1/2 teaspoon salt (optional)
3/4 cup milk
2/3 cup honey
2 eggs (lighty beaten)
2 tablespoons vegetable oil

Steps:

  • Pre-heat oven at 450°F.
  • Cover 12 muffin bowls with oven-safe paper.
  • On a big bowl, mix oatmeal, nuts, raisins, baking powder and salt (if used).
  • Add the rest of the ingredients and mix til you have an even mix.
  • Put the mix on the muffin bowls and fill 3/4 of each one.
  • Bake for 13-15 min or til golden.

Just made these this morning. My Daughter-in-law told me about a strawberry muffin and I just had to try it, but I didn't read it right and ended up with a different muffin that tasted great so just had to share it. This would be great with other fruits too. Going to make with apples next, then peaches. The possibilities are...

2 1/2 c oats, regular (not instant)
1 c greek yogurt, plain, fat free
2 eggs
1/2 c sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla
3/4 c blueberries
3/4 c strawberries, chopped/sliced

Steps:

  • 1. Preheat oven to 400 degrees. Line 12 muffin tins with silicone or foil liners, (or just use a silicone muffin pan). Or spray muffin tins with non-stick spray. *Note The paper liners don't work well when baking without flour.
  • 2. Mix all of the ingredients (except fruit) until moistened, don't over stir. *if using apples or peaches add 1 teaspoon ground cinnamon or allspice.
  • 3. Fold in fruits. I used blueberries and strawberries but you could use any that appeal to you. Just make sure you have a total of 1 1/2 cups fruit.
  • 4. Divide batter among cupcake liners, and bake for 20-25 minutes, or until toothpick comes out clean.
  • 5. Store cooled muffins in an airtight container in the refrigerator.
