OATMEAL CHOCOLATE CHIP PIZZA COOKIE
From the moment in 1930 that restaurateur Ruth Wakefield invented the chocolate chip cookie - that's her iconic recipe on the back of the Nestle Toll House package - bakers have played with the proportions and fiddled with the formula. Including us - our 1957 riff on Wakefield's recipe calls for cornflakes, and the cookie here replaces a cup of the flour with oats to make the edge crisp yet keep the center chewy. Supersizing the cookie to pizza proportions is faster - and more fun - than dropping the dough by the spoonful. From Good Housekeeping.

- Preheat oven to 375°F Line large cookie sheet with parchment paper. On sheet of waxed paper, mix flour, baking soda, and salt until well blended.
- In 3-quart saucepan, melt butter on low. Remove pan from heat; with wire whisk, stir in brown sugar and granulated sugar until blended. Whisk in egg and vanilla extract. With wooden spoon, stir in flour mixture, then oats, chocolate chips, and walnuts until combined.
- Spoon batter into center of prepared cookie sheet. With spatula, spread batter to an even 8-in. round. Bake 18 minutes, or until cookie is golden brown. Let cool on cookie sheet on wire rack 15 minutes. Transfer to cutting board lined with waxed paper; cut cookie into 12 wedges and serve warm.

- In a small bowl, cream butter and brown sugar. Beat in egg and vanilla. Combine the flour, oats, baking powder, baking soda and salt; add to creamed mixture and mix well. Stir in 1 cup M&M's. , Press onto a greased 12-in. pizza pan. Sprinkle with nuts, coconut and remaining M&M's; press lightly into dough. Bake at 350° for 18-22 minutes or until golden brown. Cool on a wire rack. Cut into wedges.

JANETTE'S OATMEAL COOKIE-FRUIT PIZZA
Steps:
- Preheat oven to 350 degrees F.
- To make the cookie crust: Cream the butter, honey, and brown sugar together in a mixing bowl.
- Add the egg white and combine. Mix in the applesauce and vanilla.
- Sift the flour, baking soda, salt, and cinnamon together. Add to the sugar mixture, stirring just to combine. Gently stir in the oats and apricots, just to combine.
- Spread the batter on a 12-inch nonstick pizza pan or line a baking sheet with parchment paper into a 12-inch circle. Bake until lightly browned, 30 to 35 minutes. Let cool in the pan for 5 minutes, then carefully transfer to a wire rack and let cool completely.
- To make the topping: In a mixing bowl, whip the cream cheese with the apple juice concentrate and lemon zest until light and creamy.
- Spread the cream cheese mixture over the cookie, leaving a 1/2-inch border around the rim. Arrange the fruit over the top. Slice into wedges with a pizza cutter and serve.

- Preheat oven to 325.
- Spray 2 pizza pans, pie pans, or cookie sheets with cooking spray.
- Beat butter, sugars, milk, egg, and vanilla until smooth.
- In another bowl, stir together flour, cinnamon, baking soda, and salt.
- Gradually add to butter mixture and mix well.
- Stir in oatmeal and raisins.
- Divide dough in half and spread into desired dishes.

- Combine dry ingredients. Mix remaining ingredients until well blended, then gradually add dry mixture. Stir until well blended. Press out on a lightly greased and floured pizza pan. (if you want to add chocolate chips, raisins, or nuts, press them into the dough once it is spread on the pan.)
- Bake at 375 degrees F (190 degrees C) for 12-15 minutes until lightly browned. Cool 10-15 minutes in the pan on a rack, then loosen carefully with a spatula. You may leave the cookie in the pan, but if you plan to serve it whole (like a birthday cake), slide it out of the pan at this point and continue to cool on a rack.
