1 cup all-purpose flour
⅓ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup milk
1 egg
¼ cup vegetable oil
1 cup blueberries, rinsed and drained

Steps:

  • Combine oats, flour, sugar, baking powder, and salt. Mix in milk, egg, and oil; mix just until dry ingredients are moistened. Fold in blueberries. Fill greased muffin cups 2/3 full with batter.
  • Bake at 425 degrees F (220 degrees C) for 20 to 25 minutes.

1 cup quick-cooking oats
1/2 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt

1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
1 large egg, lightly beaten
1 cup plain yogurt
1/4 cup butter, melted
1 cup fresh blueberries

Steps:

  • Preheat oven to 400°. In a large bowl, combine the first eight ingredients. Combine the egg, yogurt and butter; stir into dry ingredients just until moistened. Fold in blueberries. , Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter. Bake until a toothpick inserted in the muffin comes out clean, 18-22 minutes. Cool for 5 minutes before removing from pan to a wire rack. Serve warm., Freeze option:: Wrap muffins in foil; transfer to a resealable plastic freezer bag. May be frozen for up to 3 months. 1 cup quick-cooking oats
2 1/4 teaspoons baking powder
1 teaspoon coarse salt

2 large eggs
1 stick unsalted butter, melted and cooled
1/2 cup whole milk
1 1/4 cups blueberries
Fine sanding sugar, for sprinkling (optional)

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, oats, baking powder, salt, and cinnamon. In a separate bowl, whisk together sugar, eggs, butter, and milk. Stir wet ingredients into dry ingredients, then stir in blueberries.
  • Divide batter evenly between muffin cups, adding a scant 1/4 cup to each. Sprinkle with sanding sugar, if desired. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

2 cups quick oats
4 teaspoons baking powder

1/4 cup Splenda Sugar Blend for Baking (or 1/2 cup white sugar)
2 pints fresh blueberries (or the equivalent un-thawed frozen berries, or even more, if you dare!)

Steps:

  • Preheat oven to 400 degrees.
  • Prepare muffin pans with foils, papers or grease and flour, whichever you prefer. Rinse fresh berries and set to drain.
  • In a large mixing bowl, combine flour, oats, powder, soda and salt using a wire whisk or your (clean) fingers.
  • In a smaller mixing bowl, beat the eggs, oil, sweetener and buttermilk together well.
  • Pour the wet mixture onto the dry mixture, and add the berries. Gently fold the mixture together, being careful not to break the berries and to just wet all the dry ingredients.
  • The batter should be fluffy. Fill the wells in the muffin pans very full. If you only do the typical 2/3rds full, you'll need another half muffin pan to accommodate all the batter.
  • Bake about 20 minutes at 400 degrees. If using foils or papers, remove the muffins from the pan as soon as you can. We find if we don't, any berry juice that has seeped out and touches the pan becomes like glue when cool.

1/4 cup unsweetened applesauce
1/4 cup butter or 1/4 cup margarine, softened
1/2 cup plain low-fat yogurt
2 large egg whites
1 large egg
1 teaspoon pure vanilla extract
2 tablespoons pure maple syrup
1/2 cup whole wheat flour
1/2 cup unbleached all-purpose flour
1 cup old fashioned oats
2 tablespoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 cup dried fruit (such as blueberries or cherries)
1/2 cup chopped walnuts
1 1/2 cups blueberries (fresh or frozen)

Steps:

  • Preheat oven to 400ºF.
  • Place muffin liners/papers in muffin pan; set aside. This recipe will make 6 jumbo muffins or 12 regular-sized muffins.
  • Mix applesauce, butter, yogurt, egg, vanilla and maple syrup together in large bowl until smooth; set aside.
  • In separate bowl, mix whole wheat flour, all purpose flour, oats, baking powder, baking soda, dried fruit, walnuts and cinnamon together.
  • Mix in the blueberries so that they are coated with dry ingredients (this will keep the blueberries evenly distributed through the batter).
  • Gently fold dry mixture into wet ingredients until just moistened.
  • Divide batter among muffin cups. Bake for 25 minutes, or until tops are dry and golden.
  • Turn onto wire rack. Cool and enjoy!

I just found this recipe on the side of the egg-white container I bought. I adjusted by using whole wheat and splenda brown sugar sub and adjusted spices. They are REALLY tasty for a low cal muffin!! AND EASY!

1 cup whole wheat flour
1/3 cup splenda brown sugar substitute
3 teaspoons baking powder
1/4 teaspoon cinnamon
1 cup oats
1/2 cup egg white
1/3 cup canola oil
1/3 cup 2% low-fat milk
1 teaspoon vanilla
1 cup blueberries (fresh or frozen)

Steps:

  • Preheat oven 400.
  • Combine fist five ingredients in bowl and whisk until mixed well.
  • Stir in all remaining ingredients except blueberries and mix.
  • Gently fold in bluebberries and fill lined muffin cups to 3/4 full.
  • Bake for 18 - 20 minutes.

1 c plus 2 tablespoons all-purpose flour
6 oz uncooked regular oats
1 Tbsp baking powder
sugar substitute for 2 tablespoons sugar
1/2 tsp salt
1 c skim milk
1 egg
1/4 c vegtable oil
1 c fresh blueberries
cooking spray
1 tsp ground cinnamon

Steps:

  • 1. Combine flour, oats, baking powder, sugar substitute, and salt in a medium bowl, make a well in center of mixture.
  • 2. Combibe milk,egg, and oil; add to dry ingrediants, stirring just until moistened. gently fold in blueberries.
  • 3. spoon batter in muffin pans coated with cookin spray, filling 2/3 full. sprinkle cinnamon over muffins, and bake at 450f for 20 to 25 minutes or until lightly browned ummmmmm

1 cup old-fashioned oatmeal
1 cup skim milk
1 cup whole wheat flour
1/2 cup Splenda granular
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon (here is where you can add any spice that sounds good to you. I will add a PINCH of cloves and a shak)
1/2 cup unsweetened applesauce
2 egg whites
1 cup blueberries (I use unthawed frozen)

Steps:

  • Preheat oven to 400
  • Soak oats in milk for 10 to 15 minute
  • Spray muffin pan with Pam.
  • Combine all ingredients except blueberries. Add them last.
  • Spoon into muffin pan, making 12 muffins.
  • Bake for 20 to 25 minute
  • For the same point value you can leave out the berries and add:
  • 1 cup chopped apples -- OR --
  • 12 cup raisin -- .
