This simple, yeast-free Irish bread is delicious with soup or cheese. For a darker loaf, you can use an extra spoonful of treacle in place of the honey

Number Of Ingredients 8

oil or butter, for greasing
250g plain flour , plus extra for dusting
200g wholemeal flour
50g porridge oats , plus extra for sprinkling
1 tsp bicarbonate of soda
150ml pot live bio yogurt
1 tbsp black treacle
1 tbsp clear honey

Steps:

  • Heat oven to 200C/180C fan/gas 6 and grease a baking sheet. Put the flours, oats, bicarb and 1 tsp salt in a large bowl and stir to combine. Tip the yogurt into a jug, add enough water to make it up to 400ml and mix well. Stir the treacle and honey into the yogurt mixture until they dissolve. Pour onto the dry ingredients and stir with a round-bladed knife until you have a soft, sticky dough.
  • Tip onto a lightly floured surface and lightly form the dough into a round. Lift onto the baking sheet, cut a deep cross in the dough and sprinkle with oats. Bake for 30 mins or until the crust is golden and the loaf sounds hollow when tapped underneath. Soda bread should be eaten the same day, or toasted the next.

Yellow cornmeal
1 1/4 cups buttermilk
1/4 cup mild-flavored (light) molasses
2 tablespoons vegetable oil
1 1/2 cups old-fashioned oats
3 cups unbleached all purpose flour
1/2 cup whole wheat flour
1 tablespoon sugar
1 1/2 teaspoons salt
1 teaspoon baking soda
1 teaspoon baking powder
1 cup raisins

Steps:

  • Preheat oven to 400°F. Lightly oil large baking sheet; sprinkle with cornmeal. Whisk buttermilk, molasses and oil in medium bowl. Stir in oats; set aside. Mix next 6 ingredients in large bowl. Make well in center. Add buttermilk mixture and raisins. Stir until dough comes together (it will be moist). Let stand 5 minutes.
  • Lightly flour work surface. Scoop half of dough onto surface; knead gently just until no longer sticky, about 30 seconds. Shape into 4 1/2-inch-diameter ball. Repeat with remaining dough. Place loaves on baking sheet, spacing evenly. Using sharp serrated knife, make 2 parallel slashes atop each loaf, about 3/4 inch deep.
  • Bake loaves 20 minutes. Reduce heat to 375°F. Bake until dark and crusty and loaves sound hollow when tapped on bottom, about 25 minutes. Transfer loaves to rack; cool completely. (Can be made 8 hours ahead.)

400g self raising flour , plus extra for dusting
50g porridge oats , plus extra for sprinkling
1 tsp bicarbonate of soda
200ml buttermilk
3 tbsp black treacle
1 cucumber , peeled into ribbons with a potato peeler
2 tbsp white wine vinegar
1 tbsp sugar
small pack of dill , chopped
300ml double cream
120g smoked salmon and lemon wedges

Steps:

  • Heat oven to 200C/180C fan/gas 6 and put a baking sheet on the middle shelf. Mix the dry ingredients for the bread with 1 tsp salt. In a jug, mix together the buttermilk and treacle, and add enough water to make up the liquid to 300ml. Mix the wet and dry ingredients together to make a soft dough. If it's very sticky, flour your hands and shape into a round (it doesn't need to be neat). Remove the hot tray from the oven, dust with flour and put the bread on it, squashing it down a little. Use a knife to cut deep indentations in the dough, crossing in the middle to create six triangular pieces. Put in the oven and bake for 20 mins.
  • Meanwhile, combine all of the ingredients for the pickle with ½ tsp salt and set aside.
  • To make the butter, tip the cream into a bowl and beat with an electric hand whisk for 5 mins until it collapses and splits into butterfat and buttermilk. Keep going until the butterfat starts to clump together, then drain into a sieve over a bowl. Squeeze as much liquid from the butterfat as possible, wrap it in baking parchment and chill until you're ready to serve. Save the buttermilk for another recipe (or if you have more time, make the butter first, then use the buttermilk to make the bread). To serve, unwrap the butter and sprinkle it with sea salt. Serve with the bread, pickled cucumbers, salmon and lemon.

1 (370 ml) can carnation evaporated skim milk, fat-free
1/3 cup lemon juice
1 1/2 cups large flake oats
1/3 cup vegetable oil
3 cups Robin Hood Nutri Flour Blend
3 tablespoons brown sugar, light
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup dried apricot, chopped
2 tablespoons large flake oats
1 teaspoon Robin Hood Nutri Flour Blend

Steps:

  • Preheat oven to 375°F Line a baking sheet with parchment paper.
  • BREAD: In a medium bowl, mix evaporated milk and lemon juice. Mix in oats and oil; let stand for 5 minutes. In a separate large bowl, blend flour sugar, baking powder, baking soda and salt until well combined. Make a well in dry ingredients.
  • Add wet ingredients and apricots to dry ingredients and stir. Knead gently using floured hands until no dry patches remain (dough will be sticky).
  • Transfer dough to baking sheet and pat into a 1-inch thick oval. Score with a large "x" about 1/4-inch deep using a sharp knife.
  • TOPPING: Gently press additional oats into crust; dust with flour. Bake for 35-40 minutes or until golden and a toothpick inserted in center comes our clean.
  • Transfer to rack and cool before slicing.

1 1/2 cups cranberries
2/3 cup orange juice
1 cup whole wheat flour
1 cup oat flour
1 cup steel cut oats
1/2 cup flax seed meal
1 teaspoon sea salt
1 tablespoon baking soda
1/2 cup turbinado sugar
1/4 cup canola oil
1 3/4 cups low-fat buttermilk
2 eggs, beaten

Steps:

  • Preheat oven to 350°F.
  • Grease a 9 x 13-inch pan and set aside.
  • Soak steel cut oats and buttermilk in a small bowl for at least 5 minutes.
  • In a medium bowl, combine the dry ingredients; flours, flaxseed meal, salt, baking soda and sugar.
  • In a large bowl, combine the oil, eggs, orange juice, buttermilk with steel cut oats and cranberries. Stir until combined.
  • Pour the dry ingredients into the wet ingredients and mix well. Pour into the pan and bake 45-50 minutes.

2 cups / 7 oz rolled oats
10 ounces / 285 g / ~2 1/4 cups unbleached all-purpose flour, plus more for dusting and kneading
1 3/4 teaspoons baking soda
1 1/4 teaspoons fine-grain sea salt
1 3/4 cups / 415 ml buttermilk, plus more if needed, and 2T. for brushing
mixed seeds - sesame, caraway, poppy, etc.

Steps:

  • Preheat the oven to 400°F / 205°C with a rack in the middle of the oven. Butter and line a 9x5x3 inch loaf pan (or one with ~8 cup capacity) with parchment paper and set aside. Alternately, you can bake this bread without a pan, shaped like this, on a lightly floured baking sheet. To make the oat flour, use a food processor to pulse the rolled oats a few times. Then process into a fine powder - another minute or two. If you are buying oat flour, not making your own, measure out 7 oz / scant 2 cups. Sift the flours, baking soda, and salt into a large bowl. Make a well in the flour and pour in the buttermilk. Stir just until everything comes together into a dough. Turn out onto a lightly floured countertop and knead for 30 seconds or so, just long enough for the dough to come together into a cohesive, slightly flattened ball without many cracks or fissures. If your dough is on the dry side, add more buttermilk a small splash at a time. Now ease the dough evenly into the prepared baking pan - see photo if you need a bit of guidance. Brush all over the top and sides with buttermilk and sprinkle generously with mixed seeds or flour, 2 tablespoons or so. Slice a few deep slashes across the top of the dough. Bake for about 30 minutes, then quickly (without letting all the hot air out of the oven), move the rack and the bread up a level, so the top of the bread gets nice and toasted. Bake for another 20 minutes, or until a hard crust forms and the bread is baked through. It will feel very solid and sound hollow when you knock on it. Carefully lift it out of the pan, in a timely fashion, and allow to cool on a wire rack. Enjoy with a good slathering of salted butter.
