ALMOND AMARETTO POUND CAKE

2 and 1/4 cups (330 grams) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
12 ounces (340 grams) unsalted butter (at room temperature )
8 ounces (226 grams) full-fat cream cheese (at room temperature )
2 cups (397 grams) granulated sugar
1/4 cup (57 grams) amaretto liqueur
1 teaspoon almond extract
5 large eggs (at room temperature )
4 ounces full-fat cream cheese, room temperature
2 ounces unsalted butter, room temperature
2 and 1/2 cups confectioners' sugar, sifted, more if needed
1/8 teaspoon salt (tiny pinch!)
1 Tablespoon amaretto liqueur
1/2 teaspoon almond extract
1 Tablespoon heavy cream
1/2 cup sliced almonds

Steps:

  • Preheat oven to 325°F (163°C). Generously grease a 10-inch (12-cup) bundt pan, being sure to coat all of the nooks and crannies. I suggest using a non-stick baking spray that has flour in it, or greasing the pan with shortening or butter, then dusting it with flour. Set pan aside until needed.
  • In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt; whisk well to combine then set aside until needed.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, beat the butter and cream cheese on medium speed until smooth and creamy, about 1 minute. Gradually add in the sugar, then increase the speed to medium-high and continue beating until light and fluffy, about 3 minutes. Beat in the amaretto and almond extract.
  • Reduce the speed to medium-low, then add in the eggs, one at a time, beating well after each addition and scraping down the sides of the bowl as needed. Reduce the speed to low and add in the flour mixture, mixing just until combined. Turn mixer off.
  • Scrape the batter into the prepared pan.
  • Bake for 25 minutes, then reduce the oven temperature to 300 degrees (F) and continue baking for 40 to 45 minutes, or until the cake is golden brown AND a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan, set on a wire rack, for 20 minutes. Then invert the cake onto the rack and cool completely.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, beat the cream cheese and butter on medium-speed until completely smooth. Reduce the speed to low and gradually add in the confectioners' sugar, beating until all of the sugar is completely combined. Add in the salt, amaretto, and almond extract and beat smooth. Beat in the heavy cream. Once all of the ingredients have been incorporated, increase the speed to medium-high and beat for two minutes.
  • Spread frosting on the top and sides of the cooled cake. Top with sliced almonds. Slice and serve, or store in an airtight container in the fridge, for up to 3 days.

½ cup amaretto-cream-flavored hot cocoa mix
½ teaspoon salt
1 ⅛ teaspoons baking soda
2 cups white sugar
1 cup butter, softened
4 eggs
1 cup sour cream
½ cup milk
2 teaspoons vanilla extract
1 (8 ounce) package cream cheese, softened
¼ cup butter, softened
2 tablespoons sour cream
2 teaspoons vanilla extract
1 (16 ounce) package confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix flour, hot cocoa mix, salt, and baking soda together in a bowl.
  • Beat white sugar and 1 cup butter together in a separate bowl using an electric mixer until light and fluffy, 3 to 5 minutes. Beat in eggs, 1 at a time. Mix in 1 cup sour cream, milk, and 2 teaspoons vanilla extract.
  • Beat flour mixture into sour cream mixture gradually, on low speed, until just blended. Spoon batter into 16 mini fluted tube pan molds (such as Bundt®), filling each 2/3 full.
  • Bake in the preheated oven until a toothpick inserted in the center of a cake comes out clean, 20 to 25 minutes.
  • Cool cakes in pans on a wire rack for 5 minutes. Remove from pans; cool completely before frosting, 10 to 15 minutes.
  • Beat cream cheese, 1/4 cup butter, 2 tablespoons sour cream, and 2 teaspoons vanilla extract in a bowl using an electric mixer until light and fluffy, 3 to 5 minutes. Add confectioners' sugar gradually; beat frosting until smooth. Frost the cooled cakes.

1/2 cup shortening
2 cups sugar
5 large eggs, separated
1 tablespoon vanilla extract

1 cup buttermilk
1 cup flaked coconut
1 cup chopped pecans
1 (8 ounce) package cream cheese, softened
1/2 cup butter or 1/2 cup margarine, softened

1 (16 ounce) package powdered sugar, sifted
chopped pecans or coconut

Steps:

  • CAKE:.
  • Set oven at 350°F.
  • Beat butter and shortening at medium speed with an electric mixer until fluffy; gradually add sugar, beating well.
  • Add egg yolks, one at a time, beating until blended after each addition.
  • Add vanilla, beat until blended.
  • Combine flour and soda; add to butter mixture alternately with buttermilk, beginning and ending with flour mixture.
  • Beat at low speed until blended after each addition.
  • Stir in coconut.
  • Beat egg whites until stiff peaks form, fold into batter.
  • Pour batter into three greased and floured 9-inch round cake pans.
  • Bake for 25 minutes or until a wooden pick inserted in center comes out clean.
  • Cool in pans on wire racks 10 minutes; remove from pans and cool on wire racks.
  • FROSTING:.
  • Place pecans in a shallow pan; bake at 350 degrees for 5-10 minutes or until roasted, stirring occasionally. Cool.
  • Beat cream cheese, butter and vanilla at medium speed with an electric mixer until creamy.
  • Add sugar, beating at low speed until blended.
  • Beat at high speed until smooth; stir in pecans.
  • Yield: about 4 cups.
  • ASSMBLE:.
  • Spread Nutty Cream Cheese Frosting between layers and on top and sides of cake. Garnish with pecans if desired.

1/2 cup plus 2 tablespoons sugar
1 teaspoon pure vanilla extract

1/2 cup dried apricots, coarsely chopped

Steps:

  • For the Cookies: In a large bowl, beat the butter, sugar, vanilla, cinnamon, and salt with an electric mixer until light and fluffy, about 2 minutes. Beat in the egg. Stir in the flour until just blended. Mix in the apricots, almonds, and pine nuts.
  • Transfer the dough to a sheet of plastic wrap and shape into a log, about 12-inches long and 1 1/2-inches in diameter. Wrap the dough in the plastic and refrigerate for 2 hours.

1 lb cream cheese, softened to room temperature
2 stick butter softened to room temperature
2 lb powdered sugar
1 Tbsp amaretto liqueur
2 tsp almond extract
2 c chopped nuts ( i used half pecans & half walnuts)

Steps:

  • 1. Prepare the frosting by adding the softened butter and cream cheese to a medium size bowl, and beat till creamy, then add about half of the powdered sugar and beat again till well mixed.
  • 2. Then add remaining powdered sugar, almond extract, and amaretto, beat till incorporated into frosting.
  • 3. Then with a spatula fold in the chopped nuts and stir till nuts are blended into frosting. Then frost cake or cup Cakes as desired.
