EAT A PITA PIZZA
Steps:
- Make sure the oven rack is in the lower 1/3 of the oven and preheat the oven to 400 degrees F.
- Lay the pita rounds on 2 large baking sheets. Pour 1/4 cup of the Best Basic Red Sauce or pizza sauce on each round and spread it evenly with the back of the spoon. Top each with 1/4 cup of the grated cheese.
- Bake until the cheese is bubbly and golden brown, about 6 to 8 minutes. Using oven mitts or pot holders, remove the sheets from the oven. Cut each pita pizza into 6 slices with a sharp knife or pizza cutter, transfer them to a plate using a turner, and serve immediately.
- In a medium, heavy pot, heat the oil over medium heat. Add the onions, garlic, salt, basil, oregano and black pepper, and cook, stirring, until soft, 5 minutes.
- Place the tomatoes in a large bowl and squeeze to break into small pieces. Add the tomato sauce, tomato paste, water, and sugar to the pot and stir well. Bring to a simmer over medium-high heat.
- Lower the heat to medium-low, and simmer uncovered for 45 minutes, stirring occasionally with a heavy wooden spoon.
- Eat-a-Pita Pizza for 1: For each pita round, you'll need just 1/4 cup of the Best Basic Red Sauce or store-bought pizza sauce and 1/4 cup of your favorite grated cheese. Preheat a toaster oven to 400 degrees F and assemble your pita pizza according to the directions above. Carefully place your pita pizza in the toaster oven and bake it for 6 to 8 minutes, until the cheese is bubbly and golden brown. Using a turner, carefully transfer your pita pizza to a cutting board and cut it into 6 slices with a sharp knife or pizza cutter. Transfer the pita pizza to a plate and serve immediately.
JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA
This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

Steps:
- To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
- Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
- Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
- To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
- To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

NUTELLA PITA PIZZA
I love love love Nutella! Did I say I love Nutella???? Well just in case, I LOVE NUTELLA. Along with my dad's pita pizzas, for a great dessert I would make Nutella Pizza. I used different toppings, like strawberries, bananas, pecans, hazelnuts and marshmallows. When using the marshmallows it was like making a smore pizza. Yumm, need I say more. You can do any type or topping. Sometimes even using white chocolate on top was a decadent chocolate treat! This is an easier alternative when I would crave for my Aunt Consiglia's Nutella Banana crepes. She would make them for me for breakfast when I was in Italy! Again, another ode to my dad's and I enjoyment of food together! The warm nutella with carmalized bananas or the gooey puffed marshmallows. Or the fancy treat of chocolate and strawberries. Yum!

- PREHEAT OVEN TO 350'F
- Take a pita pocket and slather some nutella on top but leaving edges untouched. Place sliced bananas and place in over for 10-15 minutes until bananas have begun to carmalize. When making with marshmallows, substitute bananas for marshmallows and bake in oven until marshmallows begin to puff and brown. Slice in wedges and serve.
- When making with strawberries, warm pita with just nutella in oven until edges begin to lightly brown. Remove and place sliced strawberries and serve in wedges. Or just dive in Nutella heaven!
