Is there anyone out there who actually admits that they like tuna noodle casserole? My own mother teased me when I was first married about making the standard Tuna Noodle Casserole. I then went about inventing my own. It is a much beloved casserole and comfort food at our house.

1 pound(s) wide egg noodles, cooked and drained
2 can(s) cream of celery soup
1 cup(s) sour ceam
1 cup(s) milk
3 can(s) white albacore tuna, drained
1 clove(s) garlic, finely minced
1 large onion, finely chopped
1/2 large green bell pepper finely chopped
2 - celery ribs, finely diced
1 small jar diced pimentos
- kosher salt and freshly ground black pepper to taste if needed
12 ounce(s) colby-jack cheese, shredded
1-2 tablespoon(s) olive oil, extra virgin
1/2 teaspoon(s) paprika, sweet mild
2 cup(s) crushed potato chips

Steps:

  • Preheat oven to 350°. Spray a 9"x13" casserole dish with non-stick spray. Cook the egg noodles in boiling, salted water until al dente; drain well.
  • Saute` onions, bell pepper and celery in oil until tender but not brown.
  • Then, mix the soup, sour cream, milk, tuna, garlic, onion, bell pepper, pimentos, salt and pepper to taste, and 3/4 cup of the cheese. Carefully fold in egg noodles. Place in prepared casserole dish.
  • Top with the remaining cheese, sprinkle with paprika and potato chips. Bake the casserole about 30 minutes or until bubbly.

This fabulous Tuna-Noodle Casserole certainly isn't the one Mom used to make, but is just as comforting. This is based on a recipe found in the Weight Watchers New Complete Cookbook, but altered to fit what was in my pantry at the time. While not as low in points and calories, this one is still a healthy alternative to classic Tuna Noodle Casserole.

1 1/2 cups penne pasta, uncooked
3 cups water (for cooking the pasta)
1 cup onion, finely chopped
1/2 cup celery, finely chopped
1/2 cup red bell pepper, finely chopped
1 cup cabbage, finely chopped
1/2 cup carrot, finely chopped
1/4 cup green onion, finely chopped
1 (10 3/4 ounce) can cream of celery soup
1 (6 ounce) can chunk tuna in water, drained and flaked
1/2 cup whole milk
2 tablespoons dried parsley
1/2 teaspoon fresh ground black pepper
4 tablespoons Italian style breadcrumbs
4 teaspoons grated parmesan cheese
1 tomatoes, sliced
nonstick cooking spray

Steps:

  • Preheat oven to 350°F; spray a shallow casserole dish with nonstick spray. Cook the noodles according to package directions; drain.
  • While noodles cook, spray a large Wok-style pan with nonstick cooking spray; heat. Saute onions and celery for 2 minutes. Add bell pepper, cabbage, and green onions; cook, stirring, until tender. Stir in soup, tuna, milk, parsley, and pepper. Remove from heat; stir in noodles. Transfer to casserole dish.
  • Sprinkle top with bread crumbs and Parmesan cheese. Bake or 15 minutes. Top with tomato slices.

Nonstick vegetable oil spray
1/4 cup dry white wine
4 teaspoons cornstarch
1/3 cup all purpose flour
1 1/2 cups low-fat (1%) milk
1 cup canned low-salt chicken broth
2 teaspoons minced fresh thyme or 1 teaspoon dried
2 tablespoons Neufchâtel cheese (reduced-fat cream cheese)
1 6-ounce can solid white tuna packed in water, undrained
1 6-ounce can chunk light tuna packed in water, undrained
1 cup frozen petite peas, unthawed
8 ounces farfalle (bow-tie) pasta
1/2 cup crushed baked potato chips (about 1 ounce)

Steps:

  • Preheat oven to 400°F. Spray 8 x 8 x 2-inch glass baking dish with vegetable oil spray. Whisk wine and cornstarch in small bowl to blend. Whisk flour in heavy medium saucepan to remove any lumps. Gradually add milk to flour, whisking until smooth. Add broth and thyme and whisk over medium heat until liquid thickens and boils, about 4 minutes. Add cornstarch mixture and whisk until liquid boils and is smooth, about 1 minute. Remove from heat. Add Neufch‰tel cheese and whisk until melted. Stir in both cans of tuna with their liquid and frozen peas. Season to taste with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain pasta. Return to pot.
  • Add tuna mixture to pasta; stir to blend well. Transfer to prepared baking dish. Sprinkle with potato chips. Bake until top is golden and sauce bubbles around edges of dish, about 25 minutes.

This is a simple yet delicious casserole my Mom always made for us. It was my favorite and now it is one of my daughters.

8 ounces egg noodles, cooked
2 (6 ounce) cans tuna, drained
1 (14 ounce) can peas, drained
1 (10 1/2 ounce) can cream of celery soup
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup milk
1/2 cup butter, melted

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Combine noodles, tuna, peas, soups, milk and butter in a 1 quart casserole dish.
  • Bake for 30 to 35 minutes.
