1 butternut squash (2 pounds), peeled and cut into 1/2-inch slices
3 medium tart apples, peeled and thinly sliced
1/3 cup packed brown sugar
1-1/2 teaspoons all-purpose flour
1/4 teaspoon ground cinnamon
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. Layer squash and apples in a 13x9-in. baking dish coated with cooking spray. Mix brown sugar, flour and cinnamon; sprinkle over top. Drizzle with butter. , Bake, covered, until squash and apples are tender, 45-55 minutes.

This bread is so delicious! The warm spices combined with the apples and butternut squash are so pleasing to the palate! Like many of my recipes this is sugar free and low fat; but you wouldn't know it by the taste! It's so flavorful and just melts in your mouth! This is also kid tested AND approved! I think this is my 4 year old...

Number Of Ingredients 14

3 large egg whites
1 large egg
2 3/4 c self rising flour
1/2 c plain greek yogurt (i used fage total 0%)
1 c hyvee delecta or any other granular sugar substitute like truvia or swerve
1/4 c truvia brown sugar blend
1 tsp pure vanilla extract
2 medium apples (diced)
3/4 tsp baking soda
1 1/2 c butternut squash, mashed
1/4 tsp ground cloves
1 tsp ground cinnamon
1/8 tsp ground ginger
1/4 tsp ground nutmeg

Steps:

  • 1. Preheat oven to 350
  • 2. In a medium bowl whisk together flour, soda, and spices. Set aside.
  • 3. Peel and finely dice apples. Set aside.
  • 4. In a large bowl beat egg whites and whole egg on high speed until bubbly/fluffy.
  • 5. Add in sugar substitute, brown sugar blend, yogurt, and vanilla. Beat on medium speed until completely smooth.
  • 6. Add in butternut squash and beat on low until incorporated (literally less than 30 seconds!).
  • 7. Pour in flour mixture and stir to combine.
  • 8. Fold in the apples.
  • 9. Pour batter into bread pan lined with parchment paper. Smooth/even out the top as much as possible.
  • 10. Place in oven and bake for about 40 minutes. A toothpick inserted in the center will come out clean.
  • 11. Remove from oven and let sit in pan for about 10 minutes. Then remove bread from pan by gently pulling up on the parchment paper and transfer to cooling rack.
  • 12. Enjoy!

1 1/2 cups all-purpose flour
1 cup light brown sugar
1 teaspoon cinnamon
1 teaspoon allspice
1/4 teaspoon salt
2 teaspoons baking powder
1/3 cup walnuts, chopped
1/3 cup dried cranberries
16 ounces butternut squash, thawed (1 package frozen)
2 eggs, lightly beaten
1/2 cup applesauce
1/3 cup apple juice (may use skim milk)

Steps:

  • Heat oven to 350 degrees. Lightly grease a 9x5x3 loaf pan.
  • Combine the flour, sugar, spices, baking powder, nuts and cranberries in a large mixing bowl.
  • Combine the thawed squash, eggs, applesauce and apple juice (or milk) in another large bowl.
  • Make a well in the center of the dry ingredients and pour in the wet ingredients. Fold in until just combined.
  • Pour into the prepared pan and bake in the center of the oven for 1-1/4 hours until baked through (a toothpick inserted into the center comes out clean). If baked as muffins, cooking time will be approximately 30 minutes.

¼ cup butter, melted
1 tablespoon all-purpose flour
1 teaspoon salt
½ teaspoon ground mace
2 pounds butternut squash - peeled, seeded, and cut into 1/2 inch slices
2 large apples - cored, and cut into 1/2 inch slices

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together brown sugar, butter, flour, salt, and mace. Arrange squash in an ungreased 9x13 inch baking dish. Top with slices of apple, then sprinkle with the sugar mixture. Cover with a lid or aluminum foil.

⅔ cup shortening
2 cups pureed cooked butternut squash
4 eggs
⅔ cup water
3 ⅓ cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 ½ teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
⅔ cup chopped walnuts
⅔ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.
  • Beat sugar and shortening together in a bowl until fluffy. Stir butternut squash, eggs, and water into sugar mixture.

I had a recipe handed down from an Aunt. It was originally just Butternut Squash bread. I removed most of the oil in it. I added spice, apples and applesauce, and it is delicious. I basically made this in to a whole new recipe. It is better than the original. I think you will be pleasantly surprised how good it is. Yummy cinnamon...

3 c flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 c mashed butternut squash
1/3 c vegetable oil
2/3 c apple sauce
3 eggs
1/2 c granulated sugar
3/4 c light brown sugar
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ginger
1 1/2 c chopped apple
3/4 c walnuts
1/2 c raisins optional
STREUSEL
1/2 c flour
1/3 c brown sugar packed
4 Tbsp butter
3/4 tsp cinnamon
1/4 c walnuts

Steps:

  • 1. grease 2 loaf pans heat oven to 350 degree's. In a large bowl. On low speed mix eggs,oil,applesauce,squash, vanilla,and sugars together. Set aside.
  • 2. in another bowl sift the flour,spices, baking soda and baking powder together.
  • 3. slowly add the flour to the wet ingredients. Mix as you add ingredients on low speed. Mix in by hand the apples,Walnuts,and( raisins optional) until combined.
  • 4. divide batter in to 2 loaves pans. Mix with pastry blender all of the Streusel ingredients together except nuts until crumbly. Mix in the nuts. Sprinkle over the 2 loaves. Bake approximately one hour,or until pick comes out with just a few crumbs. Cool and serve.
