I threw this together for my mom who is on atkins and is always looking for recipes that are easy, flavorful and allow her to stay on her diet. She loved these, hope you do to.

2 lbs chicken drummettes
1/4 cup butter, melted
6 ounces franks buffalo wing sauce
1/2 teaspoon fresh cracked pepper
1/2 teaspoon granulated garlic
1/8 teaspoon cayenne, ground
1/8 teaspoon cumin
1 teaspoon cider vinegar
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 350 degrees.
  • Spray a disposable aluminum cookie sheet that has 1/2 - 1 inch sides with non-stick spray; set aside.
  • Combine all above ingredients except chicken to make hot sauce marinade and blend well.
  • Dip chicken pieces in hot wing sauce and coat evenly. Place chicken pieces in an even layer on disposable cookie sheet. Pour remaining hot sauce evenly over chicken pieces.
  • Bake at 350 degrees for 1 hour until chicken is cooked through and chicken skin is crispy.
  • Serve with ranch or blue cheese dressing for dipping. Enjoy.

4 lbs chicken wings, Wingettes & Drumettes
1/4 cup oil
4 tbsp butter, melted
1/2 cup hot sauce (such as Frank's Red Hot Sauce)
1 tsp brown sugar
1/4 tsp salt

Steps:

  • Preheat oven to 400F. In a large bowl.
  • Toss the chicken wings and oil until all of the wings are coated.
  • Set a wire rack on a rimmed baking sheet and place the wings on the rack, making sure not to crowd the wings.
  • Bake for 50-60 minutes or until golden brown and crispy.
  • In a saucepan, whisk the sauce ingredients together and cook over medium heat.
  • Transfer the wings to a large mixing bowl. Pour the sauce over the wings and toss to coat evenly.
  • Serve wings immediately with ranch dressing or blue cheese dressing and celery and carrot sticks.

20 chicken wings (separated at the drumette)
1/2 cup butter (melted)
1/2 cup hot sauce (like Tabasco, or Frank's)
3/4 cup flour
1/2 teaspoon cayenne
1/2 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Mix flour, cayenne, garlic and salt in a large zip-lock bag (or a bowl).
  • Coat wings in flour mixture and place on ungreased cookie sheet.
  • Place in refrigerator to cool and firm up the coating for an hour or so.
  • Preheat oven to 400°F.
  • Mix melted butter and hot sauce in a bowl.
  • Gently coat wings in sauce mixture and place back on cookie sheet in single uncrowded layer.

This blazing hot wing recipe is an alternative to deep-fried wings. They are baked instead of fried and stay juicy rather than crisp. I started making these about 5 years ago and they were an instant hit. I am always asked to bring the wings for all the parties we are invited to now.

5 pounds frozen chicken wings
2 cups hot pepper sauce (such as Frank's RedHot®)
½ cup butter
2 tablespoons distilled white vinegar
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Arrange frozen chicken wings in a single layer in a shallow baking dish.
  • Bake in the preheated oven for 25 minutes, then flip wings. Continue baking until the skin is crispy and meat is no longer pink at the bone, about 20 minutes more.
  • Meanwhile, cook and stir hot sauce, butter, and vinegar in a saucepan over medium heat until butter is melted, about 5 minutes. Add flour; whisk until sauce is smooth. Continue cooking until sauce is thickened, about 5 minutes more.

I wanted to come up with a recipe for a medium hot wing. I added in some agave to the mix. They were a hit on Super Bowl Sunday. Enjoy!

3 lb chicken wings
1/4 c butter, chopped
3/4 c Frank's original red hot sauce
3 Tbsp agave syrup
1 tsp cayenne pepper
1/2 tsp salt and pepper
1/2 c blue cheese dressing for serving

Steps:

  • 1. If you didn't buy your wings already cut. Cut wing tips off at joint. Discard the tips. Cut second time at the other joint. You'll have two pieces.
  • 2. Heat oven to 500°.
  • 3. Place wings on a rack. Place rack on top of foil lined sheet pan.
  • 4. Place in oven and bake until crispy on top. Flip wings over and crisp till nice and brown and crispy
  • 5. While the wings are baking, place chopped butter in a saucepan. Heat and low to melt butter.
  • 6. Remove butter from heat. Add in the hot sauce, Agave, salt, pepper and cayenne pepper. Mix well. Keep sauce warm.
  • 7. Remove wings from oven. Move wings to a bowl. Pour hot sauce over the wings Toss well to coat all sides.
  • 8. Place wings on a platter. Serve with blue cheese dressing of choice.
